1 cup 1% low-fat milk (skim may be used, but creates a thinner sauce)
1 1/2 tablespoons butter
1 1/2 tablespoons flour
3 tablespoons parmesan cheese
1/2 teaspoon minced garlic
1 dash pepper

Steps:

  • The key here is patience, add all ingredients gradually!
  • Melt butter in sauce pan on stove top with medium heat.
  • Gradually whisk in flour.
  • This will create a yellow paste.
  • Gradually add milk, whisking until incorporated and no lumps are present.
  • Continue to whisk until hot.
  • Usually 3-5 minutes.
  • The longer you cook the base (without the cheese) the thicker the sauce will be.
  • Add parmesan slowly, again whisking until incorporated.
  • Add crushed garlic and pepper.
  • Cook for 2 minutes or until cheese is melted.
  • Remove from heat.

1 Tbsp pre-minced garlic
1 cup cream half and half
2 ounces Mascarpone cream cheese (4 Tablespoons)
1 cup Swiss + Gruyere shredded cheese
1/2 tsp Italian seasoning salt free
1/4 tsp pepper

Steps:

  • In a medium to small saucepan over medium heat add olive oil till hot. Add garlic and saute for 2 minutes. Reduce heat to just below medium.
  • Add cream, when warmed slowly add cream cheese and Swiss + Gruyere shredded cheese. Cook over medium low heat and whisk until melted.
  • Add Italian seasoning and pepper. Continue to whisk until smooth.
  • Simmer and continue to cook for about 3-5 minutes or until it starts to thicken.
  • Serve immediately and toss it with your pasta!

3/4 pound fettuccine
2 tablespoons butter
2 cloves garlic
2 tablespoons all purpose flour
1 cup fat free milk
1 cup fat free half and half
1 cup parmigianno reggiano cheese (freshly grated + more for garnish (optional))
salt & pepper (to taste)

Steps:

  • Bring large pot of salted water to a boil. Cook desired pasta to al dente and drain. Set aside. While pasta is cooking, grate your parmesan cheese.
  • In a large skillet with high sides, melt your butter and then stir in the flour to create a paste. Cook 30 seconds.
  • Slowly add the milk into the roux, whisking as you go, until its completely incorporated. Add the minced garlic. After 2-3 minutes of whisking, sauce should simmer slightly and thicken. Pour in the fat free half and half and salt. Whisk again for another minute to warm it through.
  • Once your white sauce has thickened nicely, slowly incorporate the grated parmigiano reggiano cheese in, about 1/4 cup at a time, until its melted smoothly into the sauce. After the cheese has been completely melted in, taste and adjust your seasonings. This sauce has a tendency to seem sweet because of all that dairy and garlic, so don't be afraid to add extra salt because it most likely will need it.
  • Toss with cooked pasta and serve immediately.

3 3 3 Cups non-fat chicken broth
1 1 1 Cup skimmed evaporated milk
1 1 1 Cup. yogurt cheese (see recipe)
5 5 5 Tbsp. cornstarch
1 1 1 Cup freshly grated Parmesan cheese (Note)

to chicken broth and milk in sauce pan and cook over medium heat, stirring frequently. Meanwhile, combine yogurt cheese and cornstarch, mixing into a smooth paste. Add a little skim milk, if necessary, to make mixing easier.
1 to the 1 cup of freshly grated Parmesan cheese and stir until melted and smooth. Add salt and black pepper to taste.
For a complete main meal dish, add your favorite cooked vegetables, chicken or seafood (or a combination of all three) and serve over linguine or any pasta of your choice.

Steps:
