This sauce is lower in fat than traditional Alfredo Sauce but full of flavour. Great as a side with grilled chicken or double it for a meal with meat filled pasta.

Steps:
- The key here is patience, add all ingredients gradually!
- Melt butter in sauce pan on stove top with medium heat.
- Gradually whisk in flour.
- This will create a yellow paste.
- Gradually add milk, whisking until incorporated and no lumps are present.
- Continue to whisk until hot.
- Usually 3-5 minutes.
- The longer you cook the base (without the cheese) the thicker the sauce will be.
- Add parmesan slowly, again whisking until incorporated.
- Add crushed garlic and pepper.
- Cook for 2 minutes or until cheese is melted.
- Remove from heat.

- Bring large pot of salted water to a boil. Cook desired pasta to al dente and drain. Set aside. While pasta is cooking, grate your parmesan cheese.
- In a large skillet with high sides, melt your butter and then stir in the flour to create a paste. Cook 30 seconds.
- Slowly add the milk into the roux, whisking as you go, until its completely incorporated. Add the minced garlic. After 2-3 minutes of whisking, sauce should simmer slightly and thicken. Pour in the fat free half and half and salt. Whisk again for another minute to warm it through.
- Once your white sauce has thickened nicely, slowly incorporate the grated parmigiano reggiano cheese in, about 1/4 cup at a time, until its melted smoothly into the sauce. After the cheese has been completely melted in, taste and adjust your seasonings. This sauce has a tendency to seem sweet because of all that dairy and garlic, so don't be afraid to add extra salt because it most likely will need it.
- Toss with cooked pasta and serve immediately.

- Combine chicken broth and milk in sauce pan and cook over medium heat, stirring frequently. Meanwhile, combine yogurt cheese and cornstarch, mixing into a smooth paste. Add a little skim milk, if necessary, to make mixing easier. Remove about 1/2 cup of the milk and broth mixture and combine with the yogurt cheese, tempering the yogurt cheese so it does not separate when adding to the hot milk and broth. Add the tempered yogurt cheese to the remainder of the broth and milk in the saucepan and whisk in well. Cook, whisking constantly, just until thick and bubbly. Do not boil, or the sauce will separate. Stir in the 1 cup of freshly grated Parmesan cheese and stir until melted and smooth. Add salt and black pepper to taste. - Peel garlic and mix with a splash of veggie broth and some salt. Wrap in tin foil, and/or parchment and roast at 400°F (200°C) for 20-25 minutes until garlic is browning and looks caramelized.
