Swap your usual beef mince with turkey to reduce the fat content of this classic Italian sauce and serve with wholemeal pasta

400g lean turkey mince (choose breast instead of thigh mince if you can, as it has less fat)
2 tsp vegetable oil
1 large onion, chopped
1 large carrot, chopped
3 celery sticks, chopped
250g pack brown mushroom, finely chopped
pinch of sugar
1 tbsp tomato purée
2 x 400g cans chopped tomato with garlic & herbs
400ml chicken stock, made from 1 low-sodium stock cube
cooked wholemeal pasta and fresh basil leaves (optional), to serve

Steps:

  • Heat a large non-stick frying pan and dry-fry the turkey mince until browned. Tip onto a plate and set aside.
  • Add the oil and gently cook the onion, carrot and celery until softened, about 10 mins (add a splash of water if it starts to stick). Add the mushrooms and cook for a few mins, then add the sugar and tomato purée, and cook for 1 min more, stirring to stop it from sticking.
  • Add the tomatoes, turkey and stock with some seasoning. Simmer for at least 20 mins (or longer) until thickened. Serve with the pasta and fresh basil, if you have it.

The secret ingredient in this ultrafast Bolognese is Worcestershire sauce. The vinegar, molasses and anchovies in the condiment season the ground beef mixture with salt, acid, sweetness and funk in one shot. Once the Bolognese has simmered, use tongs to transfer the pasta directly from the pot to the skillet, then toss in some of the starchy pasta cooking liquid for a glossy, saucy finish.

2 tablespoons olive oil
1 medium yellow onion, finely chopped

1/2 pound ground beef (preferably 20 percent fat), pork or dark meat turkey
12 ounces spaghetti, pappardelle or other long pasta
1/4 cup tomato paste
2 teaspoons Worcestershire sauce
Grated Parmesan, for serving

Steps:

  • Bring a large pot of salted water to a boil. Heat oil in a large skillet over medium-high. Add onion, garlic and 1/2 teaspoon salt and cook, stirring often, until beginning to soften, 3 minutes. Add beef and cook, breaking up with a wooden spoon, until no longer pink, about 3 minutes.
  • Add pasta to the pot and cook according to package instructions until al dente.
  • Meanwhile, add tomato paste to skillet and cook, stirring, until darkened, about 1 minute. Add 1 cup water, Worcestershire, 1/2 teaspoon pepper and 1/2 teaspoon salt and simmer until slightly reduced, about 5 minutes.
  • Using tongs, transfer pasta directly from the pot to the skillet along with 1 cup pasta water. Increase heat to high and simmer vigorously, tossing, until sauce reduces and coats the pasta, about 2 minutes. Season to taste with salt and pepper. Serve with Parmesan.

  • Add 1 tablespoon oil and turkey to skillet and cook, breaking up meat with a wooden spoon, until almost cooked through, 5 minutes. Add bacon, vegetables, tomatoes, and pinch of red-pepper flakes, if using, to skillet and bring to a simmer; cook until turkey is cooked through and sauce is thickened, 5 minutes. I love spaghetti Bolognese from my years living in England where it is a very popular dish, but wanted to be healthier. I think ground turkey Bolognese is better than the beef version! Feel free to add vegetables; this is an easy way to get my husband to eat more of them, and I use red lentils to increase the fiber content. This is a fast Bolognese, no 4 hours of simmering on a low stove. Who has the time? Top with cheese, if you like.

½ cup red lentils
1 cup water, or as needed
cooking spray
3 carrots, minced
1 medium onion, minced

1 (16 ounce) package ground turkey
½ red bell pepper, chopped

1 (6 ounce) can tomato paste

Steps:

  • Place lentils in a saucepan with water to cover and bring to a simmer. Cover and cook until lentils are tender, adding more water if necessary, about 30 minutes
  • Spray a large nonstick skillet with cooking spray and place over medium heat. Add carrots, onion, and a pinch of salt. Cook, stirring often, until softened, 3 to 5 minutes. Push vegetables to the sides of the pan. Cook turkey in the center of the pan, breaking it up with a spoon until browned and dry, about 5 minutes. Mix turkey in with the vegetables.
  • Stir red bell pepper and garlic into the skillet; cook until softened, about 3 minutes. Add diced tomatoes, tomato paste, and tomato sauce; mix to combine. Stir in the cooked lentils. 8 cups zucchini noodles (from 3 medium zucchini)

Steps:

  • Prepare Quick Turkey Meat Sauce as directed.
  • As the sauce cooks, divide zucchini noodles among 4 single-serving containers with lids (about 2 cups per container).
  • Add 3/4 cup of the sauce and 2 tablespoons Parmesan to each container. Seal and refrigerate for up to 4 days.
  • To reheat, vent the lid and microwave on High until the sauce is steaming and the noodles are tender, 2 1/2 to 3 minutes.

1/4 cup extra-virgin olive oil
1 onion, chopped
4 garlic cloves, minced
1 carrot, peeled and finely chopped
1 celery stalk, finely chopped
1 pound shredded cooked turkey (preferably dark meat)
3 cups marinara sauce
1/4 cup chopped fresh basil leaves
Salt and freshly ground black pepper
1 pound spaghetti
Freshly grated Parmesan

Steps:

  • Heat the oil in a heavy large frying pan over medium heat. Add the onion and garlic and saute until translucent, about 5 minutes. Add the carrot and celery and saute until the vegetables are tender, about 5 minutes. Add the turkey and saute 1 minute. Add the marinara sauce. Decrease the heat to medium-low and simmer gently for 15 minutes to allow the flavors to blend, stirring often. Stir in the basil. Season the sauce, to taste, with salt and pepper. (The sauce can be made 1 week ahead. Cool the sauce completely, then transfer it to a container and freeze for future use. Bring the sauce to a simmer before using.)
  • Meanwhile, cook the spaghetti in a large pot of boiling salted water until just tender but still firm to bite, stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid. Add the pasta to the sauce and toss to coat, adding enough reserved cooking liquid to moisten as needed. Serve with the Parmesan.

I stole this recipe from my wife and now I'm sharing it with you! This is by no means a traditional pasta Bolognese, which usually contains beef, but even that is a secret to some members of my family. Now it can be your secret too!

2 tablespoons olive oil
2 tablespoons unsalted butter
1 large onion, finely chopped
3 carrots, finely chopped
3 stalks celery, finely chopped
4 cloves garlic, minced
1 teaspoon dried oregano
2 pounds ground turkey
1/2 cup tomato paste
1 cup dry white wine
2 cups chicken broth
Kosher salt and ground black pepper
1 cup whole milk (do not use skim milk)
1 pound pasta of choice
1/4 cup fresh basil leaves or parsley leaves, chopped
Grated Parmesan, for serving

Steps:

  • Heat the oil and butter in a large heavy-bottom saucepan over medium heat until the butter melts. Add the onions, carrots and celery. Cook, stirring occasionally, until the vegetables soften and the onion is translucent, 8 to 10 minutes. Add the garlic and oregano and cook, stirring frequently, for 1 minute.
  • Add the turkey and cook, breaking up clumps of the meat, until it is no longer pink, about 10 minutes. Add the tomato paste and cook 5 minutes longer, stirring frequently.
  • Pour in the wine and scrape the bottom of the pan to remove any browned bits. Simmer until the wine is reduced by half. Add the broth and salt and pepper to taste and cook, covered, for 1 hour over low heat. Add the milk and simmer for 20 minutes more, stirring occasionally to keep the sauce from burning. Season again with salt and pepper to taste.
  • Meanwhile, cook the pasta according to package directions or your favorite method. Drain the pasta and fold it into the sauce. Serve topped with basil and Parmesan.
