4-6 kg / 8-12 lb bone in ham, rind and fat on ((Note 1))
2 cups water ((Note 2))
3/4 cup brown sugar
1/4 cup honey ((or maple))
1/4 cup Dijon mustard
1/4 cup apple cider vinegar ((Note 3))
1/2 tsp black pepper
3/4 tsp cinnamon*
1/2 tsp All Spice*
3/4 tsp mustard powder * ((ordinary, not hot))
Ribbon
Few sprigs of rosemary (or other herb / leaves)

Steps:

  • Take ham out of the fridge 1 hour prior.
  • Preheat oven to 160C / 320F (standard) or 140C / 285F (fan). Arrange shelf in lower third so the ham will be sitting in the centre of the oven (not right at the top of the oven, this causes more uneven cooking on surface).

This ham glaze recipe is perfect for any ham, any time! Gently spiced with cinnamon and cloves and sweetened with brown sugar and honey. Definitely my favorite ham glaze! It will be a big hit for Easter, Thanksgiving, and Christmas!

Ham (at room temperature)
water (enough to cover bottom of pan but no more than 1/4-inch deep)
1/2 cup unsalted butter
1 cup brown sugar
1/2 cup honey
2 tablespoons Dijon mustard
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
4 cloves garlic (minced)

Steps:

  • Preheat oven to 325 degrees F. Line baking dish or roasting pan with foil.
  • Use a knife to score a 1-inch diamond pattern over the whole ham, allowing more surface area for the glaze. Place ham in baking dish with some water to cover bottom of pan, no more than 1/4-inch of water.
  • Cover ham with foil and plan to bake until ham reaches 140 degrees F with thermometer inserted into thickest part, about 15-20 minutes per pound, depending on the type and size of ham. (See Timetable for Cooking Ham for detailed cooking time estimates.) Glazing will happen during the last 30 minutes or so of baking time.
  • As the last 30 minutes of baking time approaches, brown the butter in a small saucepan over medium heat, until it begins to turn golden brown and aromatic. Swirl it around in the pan occasionally to help it brown evenly. Stir in the brown sugar, honey, mustard, cinnamon, and cloves. Stir until sugar is dissolved, about 2 minutes. Reduce heat to low and add the garlic. Cook for a minute or two until it becomes fragrant and just begins to simmer. Right as it begins to simmer, remove from heat and set aside. As it cools, it will become the consistency of a thick honey.
  • Remove ham from oven about 30 minutes before done and increase oven temperature to 425 degrees F. Brush or spoon 1/3 of the glaze over the ham. Bake uncovered for 10 minutes. Brush or spoon another 1/3 of the glaze and some pan juices, then bake another 10 minutes. Repeat with pan juices, remaining glaze, and bake.
  • Ham is done when internal temperature reaches 140 degrees F. Broil for 2-5 minutes if you want more of a glaze crust, but don't let it burn. Let ham rest for 10-15 minutes before slicing and serving.
  • Follow all directions from above, but cook covered ham at 350˚ for 20 minutes in air fryer. Then remove foil and add glaze and cook for 10 more minutes. Slice and add more glaze, cook for 2-5 more minutes, if desired, and enjoy!

I was in a rush and had none of the usual glaze goodies, so I made one up. There may actually be one like this somewhere, but here's mine...

1 1/2 cups Karo syrup
3/4 cup honey
3 tablespoons cornstarch
2 tablespoons butter
1 (10 lb) ham (I used Spiral Cut Ham)

Steps:

  • Cook ham as directed. When fully cooked, drain juices from pan.
  • Combine Karo syrup and honey in microwave-safe bowl. Microwave on high for 1 minute.
  • Add butter and corn starch.
  • Use whisk to mix until smooth.
  • Coat entire ham until all glaze is gone.
  • Leave uncoverd and return to oven for 10-15 minutes, spoon glaze from pan back onto ham about every 5 minutes (until glaze in pan looks "gooey").
  • Cut and serve.
  • YUM!

SUPER EASY BAKED HAM



Super Easy Baked Ham image

So one day, I was just too weary to try to do anything special with the ham I picked out for dinner. So I stabbed it with a meat thermometer, and let it bake until done. It was so surprisingly delicious that it's the only way I bake hams now. :) This recipe is written for beginners or for people who have never even thought of baking a ham but found a great sale and now need to know what to do with their hunk of ham. :) Servings are a guess based on the 11 pound ham I served last night.

1 (10 -15 lb) cooked ham, bone-in shank half
salt and pepper, to taste (optional)

Steps:

  • Preheat oven to 350F and make sure the racks are all the way on the bottom so there is plenty of room for the ham.
  • Bring ham in packaging to sink and have a pan big enough to hold it nearby. I find a 9"x13" baking pan works great. Make sure your pan is at least an inch deep.
  • Take ham out of wrapper and rinse it with cool water if you think it feels icky. Then find the plastic doohickey on the large cut end and remove it. At this point you can trim off some of the fat if you would like. I usually don't, as most of it renders out into the pan or is very easy to cut around.
  • Place ham in pan with large cut side down.
  • Stab with the business end of a probe style thermometer. This is the kind which has a long metal skewer on one end (the business end), a long cable, and a box which has all the controls and readouts. Make sure the probe goes through a large area of meat, not fat, and doesn't hit one of the bones down the center of the ham. Set your thermometer to alert you when the ham reaches 140°F.
  • When your oven has reached 350F, put the ham in (be careful, it's heavy).
  • Wait until the thermometer alerts you. Then remove the ham from the oven (remember, it's heavy and now it's really hot, too). Remove the probe, and either start slicing or put on a pretty platter and let your family/guests ooh and ahh. :).
  • NOTE: The skin gets very black and crispy. Do not panic, the meat is juicy, I promise. Simply cut the skin off where it is really crispy and get to the meat underneath.
  • ALSO: If you do not have a probe style meat thermometer, or need an idea of timing for preparing the rest of your meal, an already cooked (city) ham will reheat to 140F in approximately 15 minutes per pound. So a 12 pound ham will take 3 hours. Ish.
  • And FINALLY: I like to carve off the leftovers and separate into 1 pound amounts. I then put these into labeled quart sized freezer bags and freeze for casseroles, pasta, or beans another night. The bone can be put into a labeled gallon sized freezer bag, and then thawed for yummy beans another night.

  • Line a large pan with a lip around it with aluminum foil. Place ham in center of foil. In small bowl, stir together brown sugar, coke, and mustard to make your glaze. Brush half of glaze over ham. Wrap entire ham well in foil. Place in 350 degree oven for 2 -1/2 hours.
  • Remove ham from oven and peel back the foil but don't move the ham. Brush remaining glaze over ham and return to oven, uncovered, for another thirty minutes or until lightly browned. Allow to sit at room temperature for about ten minutes or so before cutting. If you need to serve it later you can cover it with foil to keep it warm and let it sit on your stovetop.
