2 teaspoons oil

Steps:

  • Wash and cube potato.
  • Place in microwave and microwave for 4 minutes.
  • Heat oil and butter over medium high heat.
  • Add potatoes and fry until crispy.
  • Add optional seasonings.
  • Stir to combine.
  • Enjoy!

Easy to make and great with Recipe #272121 or any other beans! Leave out the butter and it is vegan!

4 potatoes, bakers (Linda's Fantabulous Baked Potatoes)
1 onion, sliced
1 tablespoon cooking oil
1 tablespoon unsalted butter
1/4 teaspoon paprika
salt and pepper

Steps:

  • Microwave the potatoes or use leftover baked potatoes (Recipe #280220) and set aside until cool enough to handle. Peel the potatoes and slice about 1/3 inch thick in rounds.
  • Heat oil and butter in pan and when butter stops sizzling start cooking the onion but don't let them brown much.
  • I use a 9" preheated cast iron pan for this recipe.
  • Add potatoes to the pan and put a lid on it over medium low heat until the potatoes are starting to brown on the bottom, and then remove the lid and continue browning. Add salt and pepper on top of the potatoes.
  • When the bottom of the potatoes are brown enough for you (should be mahogany colored) put a plate over the pan and flip the potatoes out. Slide the potatoes back into the pan (first add a little butter if it needs it) and brown the potatoes. Do not replace the pan lid.
  • Slide potatoes onto a platter and sprinkle with paprika. Cut into wedges and serve with eggs, beans, what you like.

EASY PAN FRIED POTATOES, SHALLOTS WITH PARSLEY BUTTER



Easy Pan Fried Potatoes, Shallots With Parsley Butter image

Quick easy side dish. It takes just minutes into the microwave and then transfer to the pan for a quick pan fry. Some fresh parsley, garlic and shallots make this perfect. I loved pan fried potatoes but sometimes they just take too long and I always feel like I'm using too much butter or oil so this is my quick compromise. Now you can use the pre-bagged either frozen or dairy aisle packaged potatoes, but to me there is no comparison. I just love the sweetness and rustic flavor of the red skinned potatoes. Besides this is so easy to make and such a great inexpensive side dish. Serve with steak, fried fish, or any seafood, and of course one of my favorites an omelette. I don't know about you, but I can eat breakfast any time of the day.

12 medium red potatoes, cut in quarters (3 per person)
2 shallots, thin sliced
3 teaspoons minced garlic
2 scallions, fine chopped (whites and greens)
3 tablespoons fresh parsley
2 tablespoons butter
salt
pepper

Steps:

  • Potatoes -- Add the potatoes to a bowl or I prefer using a pie plate and add just a tablespoon or so of water and cover with plastic wrap. Now microwave. I like to start at 5 minutes and then check. You want them slightly tender but still firm and not falling apart - remember you are going to finish then in the pan. Once they are done, just remove from the microwave and drain well, you don't want water to hit a hot pan.
  • Pan Fry -- Add the shallot and garlic to a medium saute pan with 1 tablespoon of the butter on medium heat and cook 2 minutes. Increase the heat to medium high to high and add the other tablespoon of butter, potatoes and parsley. I like to let them set for a couple of minutes to brown on the bottom before flipping and stirring breaking them up slightly and then again a couple of minutes on the other side before I stir or flip and again breaking them up a bit. They will start to break apart which is fine. Then add the scallions, salt and pepper and serve.

  • Scrub and rinse potato clean.

4-5 medium potatoes

oil for frying (i use canola oil)

Steps:

  • 1. Wash, peel and cut up potatoes. Place in microwave-safe bowl and cover with water. Add about 1/2 to 1 teaspoon salt. Microwave on high for about 8 minutes. Drain well.
  • 2. Heat oil in frying pan (I love my cast iron). Add drained potatoes to hot oil and fry for about 5 min or until golden brown. Turn and fry on other side until golden. Add salt and pepper to taste, serve hot.
  • 3. These potatoes make an excellent side dish at dinner time or at breakfast time with eggs and your favorite breakfast meat or you can smother them in gravy. So much faster and easier and no matter how you serve them, these potatoes are scrumptious! You could also add onion, seasoned salt, green peppers or anything else that you like.

mrs.dash salt substitute
you can also use veg. oil sprinkled instead of spray
(some times i use garlic powder, dried dill weed and 2 tbs of cider vinegar instead of mrs. dash)

  • 1. In a microwave safe baking dish, thinly slice unpeeled potatoes and onions.(you can peel also, i love the flavor with peel)
  • 2. Liberally spray potatoes and onions with pam cooking spray.( You can also use veg. oil)
  • 3. Sprinkle generous amount of Mrs.dash (or you can use salt and pepper) work all with your hands untill well mixed.
  • 4. Cover with clear plastic wrap tightly, cook in microwave for 22 minutes, times may vary in microwaves
