- Preheat the oven to 200 degrees F.
- Line a jelly roll pan with parchment paper. Add popcorn to a large pan, spread out in an even layer.
- Melt butter in a large non-stick skillet over medium heat. Once melted, stir in brown sugar, corn syrup, and salt until smooth.
- Bring to a boil over medium heat, stirring occasionally. As soon as the caramel starts to gently boil, boil for 2 minutes, stirring constantly.
- Remove from the heat and stir in baking soda and vanilla.
- Immediately drizzle caramel over popcorn. Toss gently with a spatula until the popcorn is evenly coated.
- Bake at 200 degrees F for 45 minutes, stirring the popcorn every 15 minutes.

Our Easy Homemade Caramel Corn is a family favorite. It is super yummy and super easy. And you don't need Corn Syrup for this recipe.

Steps:
- Make popcorn.
- Salt popcorn and set aside.
- Melt 1 cup of butter in a medium saucepan over medium heat.
- Add 1 cup of brown sugar and stir until thoroughly mixed.
- Stirring continuously, bring the butter and sugar mixture up to a boil on medium heat.
- When it reaches a boil allow it to cook for 5 minutes without stirring on medium heat.
- Add the 2 tsp. of vanilla at the 4 minute mark and stir to mix.
- Continue to boil for one addition minute and then add the 1/2 teaspoon of baking soda.
- Drizzle the caramel mixture over the popcorn. Use a spoon to gently fold the popcorn with the mixture until the kernels are all covered.
- Pour the popcorn out onto a cookie sheet covered with aluminum foil or a silpat liner.
- Let the popcorn cool.
- Serve.

- Spray large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250 degrees F oven while preparing caramel.

FAST AND EASY CARAMEL POPCORN

- Melt margarine, brown sugar and syrup in microwave on high for 5 min stirring once every 1/2 minute
- Stir in baking soda, mixture will foam!

- Line 2 baking sheets with foil or parchment paper and preheat oven to 250°F.
- Pop bags of popcorn in the microwave. (3 bags of buttered popcorn)
- Remove unpopped kernels by placing a cooling rack over a baking sheet and pouring the popcorn onto it. The kernels will fall through but not the popped popcorn. Divide popcorn between prepared baking sheets.
- Melt butter, brown sugar, corn syrup, and salt in sauce pan, bring to a boil stirring constantly. (1 cup butter, 1 cup brown sugar, ½ cup corn syrup, ½ tsp salt)
- Once at a boil let boil 5 minutes* without stirring*. For high altitude instructions see notes below.
- Remove from heat and stir in baking soda and vanilla. The caramel will foam up a bit- this is normal. (1 tsp baking soda, 1 tsp vanilla)
- Pour over popcorn (half goes on each tray) and stir to coat the popcorn.
- Bake for an hour stirring every 15 minutes.
- Once done baking, allow to cool and then enjoy! *

- Pop the popcorn kernels using your preferred method. I like to use a popcorn machine because it makes perfectly popped kernels without burning any of them or letting the popcorn get tough (something that used to happen to me when I made popcorn on the stove).
- Spray a metal bowl with non-stick spray (you could also use butter or a flavorless oil to grease the bowl). Do NOT use a plastic or glass bowl when making caramel corn. The hot caramel can melt plastic and cause glass to shatter.

Stir the mixture with a silicone spatula until the sugar dissolves and then add the candy thermometer. Stop stirring and let the mixture continue to cook. If you notice the caramel cooking unevenly, swirl the sugar mixture rather than stirring it to evenly distribute the cooked caramel. Stirring caramel can sometimes cause crystallization to occur and the caramel will be grainy (not what we want).
- Immediately pour the caramel over the popcorn in the metal bowl and gently, but quickly, fold the caramel into the popcorn. Avoid pouring the caramel onto the sides of the metal bowl because this will cool the caramel prematurely and it won’t sufficiently cover the popcorn. Continue folding until the popcorn is completely covered.
