8 cups popped popcorn ((about 1 microwaveable bag, or 1/4 cup kernels))
6 Tablespoons butter
1 1/2 cups light brown sugar
6 Tablespoons light karo syrup
1/4 teaspoon salt
1/4 teaspoon baking soda ((heaping))
3/4 teaspoon vanilla extract

Steps:

  • Preheat the oven to 200 degrees F.
  • Line a jelly roll pan with parchment paper. Add popcorn to a large pan, spread out in an even layer.
  • Melt butter in a large non-stick skillet over medium heat. Once melted, stir in brown sugar, corn syrup, and salt until smooth.
  • Bring to a boil over medium heat, stirring occasionally. As soon as the caramel starts to gently boil, boil for 2 minutes, stirring constantly.
  • Remove from the heat and stir in baking soda and vanilla.
  • Immediately drizzle caramel over popcorn. Toss gently with a spatula until the popcorn is evenly coated.
  • Bake at 200 degrees F for 45 minutes, stirring the popcorn every 15 minutes.

10 Cups of Popped Popcorn
Salt
1 Cup Butter (Sweet Cream Salted)
1 Cup Light Brown Sugar
2 tsp. Vanilla
1/2 tsp. Baking Soda

Steps:

  • Make popcorn.
  • Salt popcorn and set aside.
  • Melt 1 cup of butter in a medium saucepan over medium heat.
  • Add 1 cup of brown sugar and stir until thoroughly mixed.
  • Stirring continuously, bring the butter and sugar mixture up to a boil on medium heat.
  • When it reaches a boil allow it to cook for 5 minutes without stirring on medium heat.
  • Add the 2 tsp. of vanilla at the 4 minute mark and stir to mix.
  • Continue to boil for one addition minute and then add the 1/2 teaspoon of baking soda.
  • Drizzle the caramel mixture over the popcorn. Use a spoon to gently fold the popcorn with the mixture until the kernels are all covered.
  • Pour the popcorn out onto a cookie sheet covered with aluminum foil or a silpat liner.
  • Let the popcorn cool.
  • Serve.

4 quarts popped popcorn
1 cup brown sugar
½ cup Karo® Light OR Dark Corn Syrup
½ cup butter OR margarine
½ teaspoon salt
½ teaspoon baking soda
1 teaspoon Spice Islands® Pure Vanilla Extract

Steps:

  • Spray large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250 degrees F oven while preparing caramel.
  • Mix brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to a boil over medium heat.
  • Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.
  • Pour syrup over warm popcorn, stirring to coat evenly.
  • Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.
  • Cool; break apart. Store in tightly covered container.

This recipe is sure to be a hit with friends and family. It's super easy and there's not much of a mess to clean up afterwards. My kids love watching the mixture foam after adding the baking soda. We all start eating it right away but I do prefer it after it has had time to cool. It's a real treasure to create! P.S. You might want to break it up with your hands as it starts to cool.

2 (3 1/2 ounce) bags microwave popcorn or 2 (3 1/2 ounce) bags approx 1 cup corn
1/2 cup margarine
1/4 cup light corn syrup
1 cup brown sugar
1 teaspoon baking soda
1 brown paper bag

Steps:

  • Place popped corn in brown bag.
  • Melt margarine, brown sugar and syrup in microwave on high for 5 min stirring once every 1/2 minute
  • Stir in baking soda, mixture will foam!
  • Pour over popcorn in bag and shake well.
  • Place in microwave on high for 1 inches Shake again, heat for one more minute.
  • Shake, pour into bowl to cool and then enjoy!

3 bags of popped popcorn
1 cup butter
1 cup brown sugar
½ cup corn syrup
½ tsp salt
1 tsp vanilla
1 tsp baking soda

Steps:

  • Line 2 baking sheets with foil or parchment paper and preheat oven to 250°F.
  • Pop bags of popcorn in the microwave. (3 bags of buttered popcorn)
  • Remove unpopped kernels by placing a cooling rack over a baking sheet and pouring the popcorn onto it. The kernels will fall through but not the popped popcorn. Divide popcorn between prepared baking sheets.
  • Melt butter, brown sugar, corn syrup, and salt in sauce pan, bring to a boil stirring constantly. (1 cup butter, 1 cup brown sugar, ½ cup corn syrup, ½ tsp salt)
  • Once at a boil let boil 5 minutes* without stirring*. For high altitude instructions see notes below.
  • Remove from heat and stir in baking soda and vanilla. The caramel will foam up a bit- this is normal. (1 tsp baking soda, 1 tsp vanilla)
  • Pour over popcorn (half goes on each tray) and stir to coat the popcorn.
  • Bake for an hour stirring every 15 minutes.
  • Once done baking, allow to cool and then enjoy! *

  • Pop the popcorn kernels using your preferred method. I like to use a popcorn machine because it makes perfectly popped kernels without burning any of them or letting the popcorn get tough (something that used to happen to me when I made popcorn on the stove).

  • Immediately pour the caramel over the popcorn in the metal bowl and gently, but quickly, fold the caramel into the popcorn. Avoid pouring the caramel onto the sides of the metal bowl because this will cool the caramel prematurely and it won’t sufficiently cover the popcorn. Continue folding until the popcorn is completely covered.
