BEEF STIR FRY WITH NOODLES
This Beef Stir Fry with Noodles can be made in just 20 minutes! Tender beef, fresh veggies, and noodles tossed together in a delicious savory sauce.

- Combine soy sauce, broth, brown sugar, garlic, and ginger in a small mixing bowl. Place half of the mixture in a gallon-sized Ziploc bag, add sliced beef, seal (pressing as much air out as you can), and refrigerate for at least 2 hours.
- Add cornstarch to remaining mixture in bowl and stir until smooth, cover and refrigerate until ready to use.
- Prepare linguini noodles according to package directions. While noodles are cooking, heat 2 teaspoons oil in a large skillet over medium-high heat and add steak slices, discarding excess marinade. Stir-fry until just browned, remove steak from skillet and set aside.
- Add remaining oil to the same skillet and stir-fry peppers, onion, carrots, and broccoli until onions become clear and soft. Add cabbage and beef to the skillet and cook until cabbage becomes soft.
- When noodles are done cooking, drain and toss with beef/vegetable mixture, adding the reserved sauce mixture. Toss until noodles are coated in sauce. Top with sesame seeds and/or red pepper flakes (optional) and serve immediately.

- heat oil on a skillet or wok to about med.
- take beef out of marinade and toss in cornstarch and stir fry until almost cooked all the way thru.

I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

- In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
- Add beef and toss.
- In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
- Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
- Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
- Cook and stir for 2 minutes.
- Serve over rice and garnish with toasted sesame seeds (optional).

- Season steak with salt & pepper. Toss with cornstarch and set aside while you prepare the vegetables.
- Place 1 tablespoon of oil in a pan or wok. Cook the beef in 2 small batches over medium high until browned, about 2-3 minutes (beef does not need to be cooked through). Remove from pan and set aside.
- Add vegetables to the pan and cook about until tender crisp, 4-5 minutes. Remove from pan and set aside with the beef.
- Combine sauce ingredients except corn starch in a bowl and stir well.
- Turn the heat up to medium-high and add the sauce. Bring to a simmer. Combine cornstarch with 3 tablespoons water (or broth) and add it the sauce a little bit at a time while whisking to reach desired consistency. Let simmer 2 minutes. Add vegetables, beef (and any juices) to the pan and cook until heated through.
- Serve with noodles or over rice.

- Slice the chuck roast into thin strips. In a bowl large enough to hold the beef, mix together the ingredients for the marinade: minced garlic, coconut aminos, ground black pepper, ½ Tablespoon Dasida beef powder, 1 teaspoon salt, 1 Tablespoon potato starch, and sesame oil. Add the thinly sliced beef to the marinade and mix together well. Cover and let marinate in the fridge overnight.
- In a small bowl, mix 1 tablespoon potato starch and ¼ cup of cold water until combined well. Set aside for later.
- Place a pan on medium-high heat, add 2 Tablespoons of oil. Add the marinated beef to the hot pan. Stir-fry until the beef is well done and no longer pink.
- Add the vegetables to the frying pan with the beef, the remaining 2 Tablespoons of oil, along with the rest of the seasonings, ½ Tablespoon Dasida beef soup stock powder, 1 teaspoon salt, 1 Tablespoon fish sauce, and 1 Tablespoon seasoning sauce. Continue to stir-fry for about another 12 minutes (or just until the vegetables are cooked to your liking).
- Quickly mix the potato starch mixture that was set aside earlier since it probably has settled. Drizzle this potato starch mixture into the frying pan with the vegetables and beef. Continue to stir-fry and mix everything together well for about 2-3 minutes.
