BRAISED CARROTS AND FENNEL

6 large carrots, peeled
2 large bulbs fennel
1 large onion
1 teaspoon sugar
Salt
2 tablespoons extra-virgin olive oil
3 tablespoons chopped dill
3 tablespoons chopped chives

Steps:

  • Slice the carrots 1/2-inch thick on an angle.
  • Quarter the fennel bulbs lengthwise, cut into bulb to remove core and thinly slice, or roughly chop. Reserve 1/4 cup chopped fennel fronds.
  • Halve and slice the onion. Fill a skillet with 1/4-inch water. Add vegetables then sprinkle with sugar and salt and drizzle with 2 tablespoons extra-virgin olive oil. Simmer covered 20 minutes, and uncovered for 5 minutes and adjust salt. Toss vegetables with fennel fronds, dill and chives.

2-1/2 pounds medium carrots, peeled and cut in half lengthwise
1 large fennel bulb, cut into 1/2-inch wedges
1 large red onion, cut into 1/2-inch wedges
1 medium lemon, thinly sliced
1/4 cup olive oil
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
Thinly sliced fresh basil leaves

Steps:

  • Preheat oven to 375°. In a large bowl, combine carrots, fennel, onion and lemon. Mix oil, coriander, cumin, salt and pepper; drizzle over carrot mixture and toss to coat. Transfer to 2 foil-lined 15x10x1-in. baking pans., Roast 40-50 minutes or until vegetables are tender, stirring occasionally. Sprinkle with basil.

Balsamic Roasted Fennel and Carrots is a super easy autumn side dish with roasted fennel, carrots, Cipollini onions and a delicious white balsamic herb dressing.

1 fennel bulb and reserved wispy leaves (frangs)
3 large carrots
8 Cipollini onions (or one large onion sliced into half-moons)
2 tablespoons white balsamic vinegar
Juice of ½ lemon
2 tablespoons extra virgin olive oil
1 teaspoon Sicilian Spice Mix or Italian Seasoning
½ teaspoon garlic powder
Salt and pepper to taste

Steps:

  • Preheat oven to 425 degrees F or 218 degrees C
  • Remove the top stems of the fennel bulb and reserve the wispy leaves (frang) for garnish. (The top stems of the fennel bulb are delicious in soup stocks)
  • If your outer fennel bulb is tough remove just the outer edge. Cut your fennel in half and cut each half into 4 thin half moon slices.
  • Next, peel and chop carrots into long matchsticks.
  • Remove the outer skin of the Cipollini onions.
  • In a small bowl, combine white balsamic vinegar, lemon juice, olive oil, Sicilian Spice Mix or Italian seasoning, garlic powder and salt and pepper to taste.
  • Place your sliced fennel, matchstick carrots and peeled Cipollini onion in a bowl. Pour over your prepared balsamic vinaigrette and toss.
  • Pour your prepared fennel, carrot and onion mixture on a lined baking sheet. We always spray a little oil on the bottom of the sheet pan to prevent sticking.
  • Bake for 20 minutes and gently turn the carrots, fennel and onions over so they brown on both sides. Roast for another 20 - 25 minutes or until fork tender. Garnish with fennel frangs or otherwise known as the wispy leaves.

3 cups chicken stock or reduced-sodium chicken broth (24 fl oz)
2 cups water
1 garlic clove
1 1/2 teaspoons salt
1 large fennel bulb (1 lb; sometimes labeled "anise"), stalks discarded and bulb cut into 1/4-inch dice
1/2 cup pitted Kalamata or other brine-cured black olives (3 oz), quartered
1/4 cup extra-virgin olive oil
3 tablespoons red-wine vinegar
1/2 teaspoon black pepper
1/2 lb carrots (about 5 medium)
1 cup chopped fresh flat-leaf parsley

Steps:

  • Cover farro with cold water in a bowl and soak 30 minutes, then drain in a colander.
  • Bring farro, stock, and water (2 cups) to a boil in a 4-quart heavy pot, then reduce heat and simmer, uncovered, until farro is tender, 15 to 20 minutes. Drain in colander.
  • While farro cooks, mince garlic and mash to a paste with 1/4 teaspoon salt using a large heavy knife. Transfer to a large bowl and add fennel, olives, oil, vinegar, pepper, and remaining 1 1/4 teaspoons salt.
  • Cut carrots into 3/4-inch-thick long diagonal slices with slicer, then, using a knife, cut slices into 3/4-inch-thick matchsticks. Add carrots to fennel mixture along with drained farro and parsley, tossing to combine well.

Roasted Poultry, Wild Boar Bacon, and Mushroom Farro with Pan-Roasted Fennel and Carrots image

This is a winning-contestant recipe from Season Four of FOX's _[MasterChef](http://www.fox.com/masterchef/)_. The recipe calls for making homemade stock-using bones from game hens, chickens, or pigeons-to cook the farro in, but if you're short on time, you can substitute purchased low-sodium chicken broth.

5 cups water
2 medium carrots
1 medium onion
1 medium celery rib
2 sprigs fresh rosemary
2 sprigs fresh sage
5 whole black peppercorns
4 whole game hens, small chickens, or pigeons
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
Canola oil
1/2 cup chopped wild boar or regular bacon
1 medium shallot, minced
2 cups farro
1 cup sliced mushrooms
Kosher salt
Freshly ground black pepper
1/4 cup extra-virgin olive oil
2 tablespoons chopped fresh sage leaves
2 whole green peppercorns
5 ounces blackberries
1/2 cup dried currants
1/2 cup dry red wine
3 tablespoons honey
1 tablespoon red wine vinegar
2 medium fennel bulbs, cut into wedges and cored
3 medium carrots, cut into 1-inch pieces
2 tablespoons olive oil
Kosher salt
Freshly ground black pepper
2 tablespoons maple syrup
1 tablespoon vinegar
Equipment: Large roasting pan or rimmed baking sheet; instant-read thermometer; 2 baking dishes or baking sheets

Steps:

  • In a large stockpot, combine the bones, water, carrots, onion, celery, rosemary, sage, and peppercorns and bring to a boil. Reduce the heat and simmer for about 3 hours, skimming occasionally. Strain the stock. Measure 3 1/2 cups of stock for cooking the farro, and reserve any leftovers for later use.
  • Preheat the oven to 350°F.
  • Cut each of the game hens, chickens, or pigeons in half then season all over with kosher salt and freshly ground black pepper.
  • In a large sauté pan over moderately high heat, warm the oil. Working in batches, add the birds, skin side down, to the pan and sear until the skin is golden brown and caramelized. Transfer the birds, as done, to a roasting pan or large rimmed baking sheet and roast in the oven until an instant-read thermometer inserted into the thickest part of the thigh (do not touch the bone) registers 165°F.
  • In a medium saucepan over moderate heat, cook the bacon until crispy. Transfer the bacon to a paper towel-lined plate and pour half the rendered bacon fat into a medium sauté pan and set aside. Add the shallot to the original saucepan and sauté, stirring occasionally, until translucent then add the farro and sauté, stirring occasionally, until just toasted. Add the reserved 3 1/2 cups of stock to the farro and bring to a simmer. Continue simmering until soft and tender.
  • While the farro is simmering, heat the rendered bacon fat in the medium sauté pan. Add the mushrooms and sauté, stirring occasionally, until the liquid released by the mushrooms is evaporated, about 5 minutes. Season with kosher salt and freshly ground black pepper. Add the mushrooms and bacon to the farro and stir to combine. Keep warm.
  • In a small saucepan over moderately low heat, bring the olive oil, sage, and peppercorns to a simmer. Shut off the heat and let the oil cool until it's fragrant with sage and peppercorn. Once cool, strain the oil.
  • In small saucepan over moderate heat, bring the blackberries, currants, red wine, honey, and vinegar to a simmer. Continue simmering until the mixture is thick and jamlike, 8 to 12 minutes. Remove from the heat and set aside.
  • Preheat the oven to 450°F.
  • Arrange the fennel and carrots in separate baking dishes or baking sheets. Drizzle each with 1 tablespoon olive oil then season with kosher salt and freshly ground black pepper. Roast, turning occasionally, until tender and well caramelized, about 15 minutes. Transfer to a large bowl, drizzle with the maple syrup and vinegar, season with kosher salt and freshly ground black pepper, if desired, and toss to combine.
  • Divide the farro among 4 plates, then top each with vegetables and poultry. Garnish the plates with the berry compote and sage oil.
