SIMPLE APPLE CAKE



Simple Apple Cake image

This simple apple cake recipe uses oil instead of butter, so it's dairy free! You will love this dense cake with apples and hints of orange.

2 C. Sugar
3 C. Flour
1 C. Oil
4 Eggs
1/4 C. Orange Juice
3 tsp. Baking Powder
1 tsp. Salt
2 1/2 tsp. Vanilla Extract
5-6 Apples (I used Granny Smith)
2 tsp. Cinnamon
5 tbsp. Sugar

Steps:

  • For the apples:First, peel 5-6 apples and slice into chunks. Sprinkle cinnamon and sugar over top then mix well. Let this apple mixture sit while you create the batter. For the cake: Preheat the oven to 350 degrees F. In a mixing bowl, add sugar, flour, baking powder and salt. Whisk together until well incorporated. In the bowl of an electric mixer, combine all wet ingredients (oil, eggs, orange juice and vanilla). Slowly mix in the dry ingredients until a thick batter is formed. Grease and flour the pan. Pour a layer of batter into the pan, then add a thin layer of apples. Repeat until batter and apples are all in the pan. Bake for 40-90 minutes, depending on the pan type used. For the recipe pictured here, I used a round cake pan and baked for about 90 minutes. If the cake is still raw but getting golden brown, cover with foil and continue cooking until a cake tester comes out clean.

1/2 cup whole milk
7 tbs unsalted Butter (Plus 1 tbs For Greasing Pan)
5 apples (golden delicious)
2 eggs (large)
1 1/4 cups sugar
1/2 cup all-purpose flour (unbleached)
1 tsp vanilla extract
2 tsp baking powder

Steps:

  • Preheat oven to 400 degrees. Butter a 10-inch springform pan and wrap the bottom in foil so it doesn't leak.
  • Measure milk into a microwavable measuring cup. Cut butter into pieces and add to milk. Microwave for a minute or two, until butter is just melted. Set aside to cool. [I used a pan on the stove top]
  • Peel, core and quarter apples. Slice apple quarters into thin slices, 1/8 to 1/4 inch thick. This can be done by hand or with a food processor.
  • Beat the eggs and sugar in a large bowl with a wire whisk until sugar is dissolved. Stir in flour, then add milk-butter mixture and vanilla. Blend thoroughly. Quickly stir in baking powder, then fold in the sliced apples.
  • Pour mixture into pan and place pan directly on the gas oven floor for 10 minutes. Transfer pan to the center rack and bake until cake is well browned on top and a knife inserted into the center comes out clean, about an hour longer. (If you have an electric oven, place the pan on the lowest rack for the entire cooking time.) Place the cake on a cooling rack. When cool enough to handle, run a thin knife around the cake and remove springform ring. Serve warm. Makes 8 to 12 servings.

115g unsalted butter, diced and chilled, plus extra for the tin
225g self-raising flour
2 tsp ground cinnamon
115g light brown sugar
1 large egg, beaten
6-8 tbsp milk
225g Bramley or Granny Smith apples, peeled, cored and diced
100g sultanas
2 tbsp demerara sugar (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter and line a deep 20cm cake tin with baking parchment.
  • Mix the flour and cinnamon together in a large bowl. Add the butter and rub into the flour using your fingers, until it resembles fine breadcrumbs. Stir in the light brown sugar. Beat in the egg followed by 6-8 tbsp of milk - add it gradually until you have a smooth, thick batter.
  • Add the apples and sultanas and mix to combine. Scrape the batter into the prepared tin and gently level out. Sprinkle over the demerara sugar, if using, and bake for 30-40 mins or until golden and a skewer inserted into the middle comes out clean.
  • Allow to cool in the tin for 15 mins and then carefully turn out onto a wire rack to cool further. Best served still warm with a little custard.

1/2 cup (1 stick) butter, softened
2 cups sugar
2 large eggs
2 cups (about 2 apples) grated unpeeled Granny Smith apple (see Cook's Note)
2 cups all-purpose flour
1 1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1/4 teaspoon kosher salt
1 cup chopped walnuts (optional)
Homemade Caramel Sauce, recipe follows
Whipped cream or ice cream (optional)
1 cup packed light brown sugar
1/2 cup half-and-half
4 tablespoons butter
Pinch of kosher salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Beat the butter with a mixer at medium speed until fluffy; gradually add the sugar, beating well. Add the eggs, 1 at a time, beating just until blended after each addition. Add the apple, beating just until blended.
  • Whisk together the flour, baking soda, cinnamon, cloves and salt; add to the butter mixture, and mix just until blended. Stir in the walnuts, if desired.
  • Pour into a lightly greased 13-by-9-inch baking pan. Bake 30 to 35 minutes or just until a wooden pick inserted into the center comes out clean. Let cool on a wire rack 10 minutes. Serve with Homemade Caramel Sauce and, if desired, whipped cream or ice cream.
  • Cook the sugar, half-and-half, butter, and salt in a small saucepan over medium-low for 5 to 7 minutes, whisking slowly, until thickened. Remove from the heat, and let cool slightly before serving.
  • Keep refrigerated up to one week after you make it. Just be sure to warm it up before serving.

1/2 cup (or 113 grams) unsalted butter at room temperature
1/2 cup (or 100 grams) granulated sugar
2 large eggs
3 Tbsp (or 45 ml) whole milk or cream
1 1/4 cups (or 150 grams) all purpose flour
1 tsp baking powder
1 tsp cinnamon
1/8 tsp salt
about 3 Granny Smith apples, peeled and thinly sliced. Mine weighed a little over a pound after slicing.
confectioner's sugar for dusting
3/4 cup (or 96 grams) all purpose flour
1/4 cup (or 25 grams) old fashioned rolled oats
6 Tbsp (or 85 grams) unsalted cold butter (cut in small pieces)
1/2 cup (or 100 grams) granulated sugar
6 large egg yolks
6 Tbsp (or 76 grams) granulated sugar
1 1/2 cups (or 375 ml) whole milk ~ you can also use half and half or cream
1 1/2 tsp vanilla

Steps:

  • Set the oven to 350F Grease a 9 inch springform pan.
  • Make the custard sauce ahead of time. Bring the milk to a simmer over medium heat. Meanwhile whisk the yolks and sugar until well combined. Drizzle a little of the hot milk into the egg mixture, whisking all the time. Drizzle a little more, then transfer that back into the pan of hot milk and continue cooking, stirring constantly, until the mixture coats the back of a spoon. Do this slowly, over medium heat, and I like to use a silicone spoon or spatula to scrape the bottom and sides of the pan as it heats. The mixture will become velvety and thickend, but it will not be as thick as pudding. It will continue to thicken as it cools, so don't overcook or it can curdle. Stir in the vanilla.
  • Pour the custard through a sieve (to catch any stray lumps) into a heat proof jar or bowl and place a piece of plastic wrap onto the surface so it won't form a skin as it cools. Put in the refrigerator until completely chilled.
  • To make the streusel topping, blend the bits of butter into the flour, sugar, and oats until the butter is incorporated and the mixture has a coarse crumbly texture. Put in the refrigerator.
  • Cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time.
  • Whisk together the flour, baking powder, cinnamon, and salt. Fold the dry ingredients into the butter/sugar mixture, along with the milk or cream.
  • Spoon the batter into your prepared pan, and smooth out evenly. Top with the sliced apples, and then the streusel topping. Note: no need to arrange the apples perfectly, but try to get them in an even layer.
  • Bake for about 50 minutes to an hour, until the top is lightly browned and a toothpick comes out without wet batter clinging to it.
  • Let cool a bit in the pan before removing. Dust with confectioner's sugar before serving.

1 cup vegetable oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour

2 cups finely chopped peeled tart apples
1 cup chopped walnuts
1-1/4 cups whipped topping

Steps:

  • Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

225g caster sugar
55g plain white or italian OO flour
125ml whole milk
100g unsalted butter, melted and cooled
1 tsp pure vanilla extract
2 tsp baking powder
icing sugar, for dusting

Steps:

  • Preheat oven to 190C. Grease and flour a 28cm (11in) loose-bottomed round cake tin or deep dish pizza pan. Peel, core and quarter apples. Slice apple sections crosswise into very thin slivers. Beat eggs and sugar together in large bowl with wire whisk until sugar has dissolved. Sift and stir in flour, then mix in the milk, melted butter and vanilla. Blend mixture thoroughly. Quickly stir in baking powder, then fold in sliced apples. Pour mixture into the prepared tin and bake on the floor of oven for 10 min, transfer tin to center rack and bake for further 50-55 min until cake is golden brown. Turn cake out on a wire cooling rack and leave to cool. Serve warm or at room temperature, dusted with sifted icing sugar.
