- Place potatoes in an 8-in. baking dish. Sprinkle with cheese, ham and onions. Whisk eggs, milk, pepper and salt; pour over all. Cover and refrigerate for several hours or overnight. , Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until a knife inserted in the center comes out clean, 55-60 minutes.

FARMER'S DELIGHT CASSEROLE
Beef and noodle casserole with cabbage, corn and creamed cheese. This dinner comes together quickly and it's a one pot meal!

Steps:
- Turn Instant Pot to sauté setting. When the display says HOT add in the beef and onion. Use a spoon to break up the beef. Brown for about 5 minutes. Drain off any excess grease.
- Stir in the kosher salt, pepper, garlic powder and onion powder.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off sauté setting.
- Pour in the pasta and use a spoon to gently press it down, don't stir.
- Add cabbage, peppers, creamed corn and cream cheese on top.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for about 5-10 minutes and then move valve to venting. Remove lid.
- Stir well. Season to taste. Scoop onto plates and enjoy!

FARMER'S DELIGHT CASSEROLE
This is an old recipe that I found in one of our local church cookbooks. This is a hearty hamburger casserole that I have been making for years. Sometimes I add some fresh sliced mushrooms to the dish, which is always good.

Steps:
- 1. Preheat oven to 325 degrees.
- 2. Butter a shallow 2 quart baking dish; set aside.
- 3. In a skillet, cook together the hamburger, green pepper and onion. Drain any liquid from skillet.
- 4. While browning the hamburger, cooked the noodles.
- 5. Add the salt and pepper, cream corn, cream of mushroom, and cream cheese to the hamburger mixture; mix well.
- 6. Stir in the cooked noodles to the hamburger mixture; mix thoroughly.
- 7. Add the hamburger-noodle mixture into the prepared casserole dish.
- 8. Cover with foil and bake for 35-45 minutes.
CUCUMBER DELIGHT COCKTAIL
This cucumber cocktail inspired by Washington DC's Founding Farmers restaurant, will add a bright spot to any brunch or cool off a summer evening thanks to its refreshing flavors.

- Add Pearl Cucumber Flavored Vodka, simple syrup, ginger ale and lemon juice to a shaker. Add ice cubes, cover and shake vigorously. Strain into an old fashion glass, add ice, top with the sparkling water and garnish with a cucumber slice and cantaloupe.
