FARMER SALAD (FARMERSALAT)

I adopted this recipe and this is the original description "This is my copycat version, of what you can buy in German delicatessen as Farmersalat.I've tried it with fresh grated carrots as well, but found this version resembled the storebought version that I like the most".

Number Of Ingredients 6

Ingredients

2 (500 ml) jars of grated carrots
1 (500 ml) jar of grated celery
2 spring onions, in cut fine rings (only green parts)
4 tablespoons Miracle Whip
1 pinch sugar
1 dash cider vinegar

Steps:

mix all ingredients together.
Let sit in the fridge for at least 30 min, so the flavours can melt together.

1 preserved lemon, chopped
1/4 cup olive oil
2 tablespoons chopped fresh parsley
1 tablespoon honey
Kosher salt and freshly ground black pepper

1 bunch fresh salad greens
3 mini bell peppers, sliced
1 cup goat's milk feta, crumbled
1 cup hazelnuts, toasted and chopped

Steps:

Whisk together the preserved lemon, olive oil, parsley, honey and some salt and pepper in a large bowl. Add the salad greens, bell peppers, feta and hazelnuts, toss together and serve.
