TWO-POTATO SWIRLS
Here's a great way to serve yams to those who think they don't like them. You can make this dish ahead and simply reheat it before serving.

- Place the russet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Place sweet potatoes in another saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes until tender., Drain russet potatoes and place in a large bowl; mash until smooth. Add cream cheese, 2 tablespoons milk and 1 tablespoon butter; beat until light and fluffy, adding more milk as needed. , Drain sweet potatoes and place in another bowl; mash until smooth. Add the orange juice, honey and remaining butter., Insert tip #409 into a pastry bag. Spoon russet potato mixture into one side of the bag; spoon sweet potato mixture into the other side. , Pipe 3-in. swirls, forming large rosettes, onto a greased baking sheet. Bake at 350° for 25-30 minutes or until heated through and tops are lightly browned.

- Cut potatoes into cubes, Place in a large sauce pan cover with water, add salt and boil about 20 ,inutes until tender, Drain.
- Mash potatoes, add green onions and garlic mix to blend.
- Add butter,hot milk,egg yolks,pepper and nutmeg. whip until light and fluffy then add parsley.
- Add mozzarella cheese,sausage and parmesan cheese.
- Spoon mixture into a buttered ovenproof dish, sprinkle with herbs and arrange the sausage slices around outer edge of potatoe mixture.Heat under broiler until lightly browned and hot, 5-10 minutes.

- In a medium saucepan over medium high heat, cover the turnips and sweet potatoes with enough water to cover. Bring to a boil and cook until soft, about 15 to 20 minutes. Drain; transfer to a food processor and puree.

- Cut potatoes into cubes. Place in a large saucepan. Cover with water. Add a dash of salt.
- Bring to a boil. Cover and simmer for about 20 minutes, until potatoes are just tender. Drain.
- Mash potatoes. Add green onion and garlic; mix to blend.
- Add butter, hot milk, egg yolks, pepper, and nutmeg. Whip until light and fluffy. Add parsley.
- Reserve 12 perfect slices of sausage. Heat the rest of the sausage in the microwave for a minute or two (just enough so that it is hot). Add mozzarella cheese, the hot sausage slices, and Parmesan cheese to the mashed potatoes.
- Spoon mixture into a buttered ovenproof dish. Sprinkle with herbs. Arrange reserved sausage slices on top like a clock face.
- Heat under the broiler until lightly browned and hot, 5 to 7 minutes.

- Heat a large cast iron skillet over medium high heat. Add the oil to the hot pan and swirl to coat the bottom surface. Add the onion and cook until almost translucent, about five minutes. Add the garlic and cook one minute before adding the potatoes to the pan, stirring to combine.
- Add the thyme and reserved cooking liquid or bone broth to the pan. Bring the liquid to a simmer. Cover the pan and reduce the heat to low. Cook for 10 minutes undisturbed.
- Remove the cover and stir the mixture. The potatoes should have begun to soften and absorb some of the liquid. Add the pork and heavy cream to the pan and stir to combine. Taste for seasoning, adding salt and pepper to taste. Press the mixture firmly into the pan and top with the Parmesan cheese. Transfer the skillet to the warm oven.

- Spray a large shallow baking or oval casserole dish,or baking sheet with nonstick spray coating. Spoon white potato mixture along one side of a decorating bag fitted with a large star tip. Spoon sweet potato mixture along other side of bag. For swirls, in dish or on baking sheet, pipe 3-inch circles of the mixture, starting at the outside and working toward the center, building a peak 2 layers high. Make 8 to 10 swirls. Cover loosely with plastic wrap; chill up to 4 hours.
