FARINATA (ITALIAN FLATBREAD)
Farinata is a gluten-free Italian flatbread made with chickpea flour that is very easy to make. I'm sure this recipe will become part of your regular repertoire. I have added some spring onions and garlic for a more gourmet version of the simple farinata.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Brush a 9-inch tart pan with 2 tablespoons olive oil and place in the oven to warm up.
- Melt 1 tablespoon butter in a medium skillet over medium heat. Add green onion and garlic. Cook and stir until softened, about 5 minutes. Remove from heat.
- Mix chickpea flour with lukewarm water until smooth. Set aside for 20 minutes at room temperature.
- Skim foam from the top of chickpea-water mixture. Add remaining 2 tablespoons of olive oil. Mix in onion-garlic mixture. Season with salt, pepper, and nutmeg. Add Gruyere cheese and mix well. Remove tart tin from oven and pour in chickpea mixture.
- Bake it in the preheated oven until crispy, about 15 minutes. Remove from the oven and cut into triangles before serving.

HOW TO MAKE FARINATA
Farinata is nothing more than a simple garbanzo bean flour batter which is spiked with olive oil and salt and baked in a very hot oven. The surface gets crusty, the edges get crispy, and yet the inside stays moist and sort of creamy. The texture is easy to explain, but the taste, not so much. Very earthy, comforting, and satisfying.

Steps:
- Combine garbanzo flour and water in a bowl; whisk until batter is smooth. Cover bowl with plastic wrap or a plate and let stand at room temperature for 2 hours. Skim as much foam as possible from top of batter. Whisk salt, rosemary, and 3 tablespoons olive oil into batter.
- Preheat oven to 500 degrees F (260 degrees C).
- Place a 10-inch cast-iron skillet over high heat and heat until smoking hot. Pour 2 tablespoons olive oil in skillet and swirl to coat bottom of skillet with oil. Continue to heat until oil shimmers and a wisp of smoke rises from oil.
- Quickly pour batter into hot oil; carefully transfer skillet to preheated oven.
- Bake in the preheated oven until cake is browned and crusty, 25 to 30 minutes. Transfer immediately to a plate, cut into wedges, and serve hot. Garnish with freshly ground black pepper.

Steps:
- Mix together the Farina, flour, sugar, baking powder, and salt.
- In a separate bowl mix egg, milk and oil together.
- Add egg mixture to flour mixture, stirring just until moistened. Batter will be a little lumpy.
- Grease loaf pan and pour batter into pan.
- Bake at 400 for about 30 minutes or until done.
BANANA FARINA BREAD
I copied this recipe down ages ago, always meaning to give it a try. I found it today in one of my piles of recipes and decided to share it. This is not a sweet bread. Supposedly, this recipe is from Liberia.

Steps:
- Combine dry ingredients in a large bowl.
- Mix together eggs, oil, and water, then add along with the mashed bananas to the dry mixture.
- Sutr just enough to moisten all ingredients, but do not overmix.
- Pour into a greased 9x13" baking pan in a preheated 350 F oven for about 45 minutes, or until a knife inserted in the center comes out clean.
- Let cool 10 minutes, then remove from pan and let cool.
- Cut into squares and serve.

FARINA BREAD has a moist, crumbly, pleasant texture like cornbread. However, it packs the nutritional value of Farina or any cream of wheat cereal. The flavor is slightly sweet and nutty.

- Measure and add the dry ingredients to the large mixing bowl: flour, Farina, sugar, and baking powder.
- Whisk the eggs and add them to the dry mixture; stir them in.
- Measure and pour in the liquid ingredients: milk and oil. Stir everything well using the spatula or whisk (an electric mixer is not necessary unless you prefer it!). This bread has a wetter texture, but as it bakes thecream of wheat will absorb much of it.
- Spray the two baking pans with non-stick cooking spray, then pour half of the bread batter into each pan.
- Bake at 400° uncovered for thirty minutes. Cover and bake for an additional fifteen minutes. The top will have a lovely golden color when it comes out of the oven.
- Gently flip the bread out of the pan onto a bread-cutting board. Cool for about 15 minutes before you cutand serve it.

- Heat the water, yogurt, butter, sugar, and salt until everything is melted Cool until you can comfortably hold your finger in it - too hot may kill the yeast Sprinkle the yeast into the bowl of your food processor (make sure you're using the dough blade) or stand mixer and pour the warm liquid over it Let sit for about 5" to give the yeast a chance to bloom Mix in the Cream of Wheat, then the flour and chilies, a little at a time If using a stand mixer, let knead for 5-8" until glossy and smooth If using a food processor, pulse until it comes together in a ball and pulls away from the blade Lightly spray or oil a bowl, turn the dough in the bowl to coat, then cover and let rise for 45" to 1' (I tuck mine away in the oven) Punch down the dough, form it into a ball and transfer to a lightly sprayed pie plate, parchment-lined tray, baking stone - whatever you're comfortable with Let rest for 20" or so Bake at 375° for 35-40" Cool completely before slicing

This recipe works wonderfully either as a full size cheesecake or as cupcakes to serve a crowd. It is almost impossible to overcook. I owe thanks to my Mom for creating this family favorite.

- Place 1-2 vanilla wafers in bottom of each cupcake baking cup, if making one large cheesecake crush wafers with spoon and fill bottom of pie plate.
- Mix cream cheese with sugar.
- Mix in sugar, eggs and vanilla.
- Pour into cupcake cups or pie plate.
- Bake at 350°F for 15-20 minutes for cupcakes or 25 minutes for pie plate.
- Cover cupcakes or full size cake with canned cherries.
