1 (16 ounce) package farfalle (bow tie) pasta
1 tablespoon olive oil
1 pound bulk Italian sausage
2 cloves garlic, minced
2 ½ cups chicken broth
⅛ teaspoon crushed red pepper flakes
1 bunch broccoli rabe, trimmed
¼ cup butter
1 ½ cups grated Parmesan cheese
¼ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil over high heat. Add the farfalle pasta, and cook until al dente, 8 to 10 minutes; drain.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Stir in the Italian sausage until crumbly and no longer pink, about 5 minutes. Stir in the garlic, and continue cooking until the sausage begins to brown, about 5 minutes more. Pour off the excess grease, then pour in the chicken broth and red pepper flakes. Bring to a boil over high heat, then add the broccoli rabe, and cover. Cook until the broccoli rabe is tender, about 4 minutes.
  • When the broccoli rabe is done, stir in the butter, Parmesan cheese, salt, and pepper until the meat sauce has thickened. Toss with the farfalle and serve.

½ cup olive oil, divided
1 pound Italian sausage, casings removed
1 (10 ounce) package portobello mushrooms, sliced
¾ teaspoon sea salt, or more to taste, divided
¾ teaspoon freshly ground black pepper, divided
1 (10 ounce) package frozen peas, partially thawed
1 (16 ounce) package farfalle (bow-tie) pasta
½ cup Parmesan cheese

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over high heat; cook and stir sausage in the hot oil, breaking up any large chunks, until browned and crumbly, about 5 minutes. Transfer cooked sausage to a plate.
  • Heat 2 more tablespoons olive oil in the same large skillet over medium heat; cook and stir mushrooms, 1/2 teaspoon salt, and 1/2 teaspoon pepper in the hot oil until mushrooms are tender and all the liquid has evaporated, about 8 minutes.
  • Stir peas into mushroom mixture and cook until peas are warmed, about 2 minutes. Return sausage to mushroom mixture; cook and stir until flavors have blended and sausage is heated, about 3 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain pasta, reserving 1/2 cup pasta water. Return pasta to pot and stir in sausage-mushroom mixture; cook and stir, adding reserved pasta water as needed, until mixture is evenly mixed, about 5 minutes.
  • Drizzle remaining 1/4 cup olive oil over pasta mixture and season with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper; toss to coat. Add Parmesan cheese; toss to combine.

1/2 cup extra virgin olive oil
1 pound ground turkey sausage, removed from casing
Sea salt and freshly ground black pepper
10 ounces cremini mushrooms, coarsely chopped
1 (10 ounce) package frozen peas, defrosted slightly
1 pound dried farfalle pasta
1/2 cup freshly grated Grana Padano cheese

Steps:

  • In a large pot, bring 6 quarts of salted water to a boil.
  • In a large saute pan over high heat, add 2 tablespoons olive oil. Season turkey with salt and pepper. Add turkey and saute breaking any large lumps until golden brown. Remove meat from pan and set aside. Add 2 tablespoons olive oil to pan and heat. Add chopped mushrooms and season with salt and pepper. Saute until all the liquid from the mushrooms has evaporated, about 5 minutes. Add the peas and saute for 4 minutes. Return the meat to the pan and cook for another 3 minutes. Remove from heat and set aside.
  • When the pot of water has come to a boil, add pasta and cook until al dente, about 8 minutes. Drain in a colander. Return pasta to the pot and add the meat mixture. Combine thoroughly and gently cook over medium heat for 5 minutes. Drizzle in remaining olive oil. If the mixture is dry, do not hesitate to use more olive oil if necessary. Check the seasoning. Turn off the heat and add the grated cheese. Stir well and serve in large bowl.

My husband makes his own Link Italian sausage and when he does I always have him package up a half dozen or so packs of sausage before puts it into the casings. I have several recipes that call for bulk Italian sausage and this is one of the tastiest and easiest to make.

1 lb farfalle, rigatoni, penne pasta, your choice
1 lb italian sausage sweet, mild or hot, your choice, cooked and crumbled
12 oz mushrooms, fresh, sliced
3 clove garlic, minced
1 small onion, chopped
1 tsp italian seasoning
1/2 c white wine
1 large roma tomato
1/2 c heavy cream
1/4 c basil, fresh, chopped
1/4 c parsley, italian, fresh, chopped
kosher salt and freshly ground black pepper to taste
parmigiano-reggiano, grated

Steps:

  • 1. Heat oil in a large sauté pan over medium high heat. Add sausage and cook, crumbling with a fork until no longer pink. Add mushrooms, garlic, onion and Italian seasoning. Cook until onion is soft. Add wine and sauté until wine has reduced by half.
  • 2. Add cream and simmer for 1 minute. Add tomatoes, parsley, basil and pasta. Toss pasta to coat well and heat until pasta has absorbed some of the sauce. Transfer to a platter and garnish with grated cheese. Season to taste with salt and pepper.

Steps:

  • To begin making the Farfalle with creamy Mushroom sauce first cook pasta as per the package instructions. Drain the pasta and keep it aside.
  • Soak dried mushrooms in hot water and keep aside for 15 minutes.
  • Drain the water (do not discard) and roughly chop the mushrooms.
  • Heat oil in a wok or a heavy bottomed pan. Add the chopped garlic and saute for a few seconds.
  • Add the onion, mushrooms and saute for a minute. Add the boiled pasta and stir. Season with salt and pepper and adjust according to your taste.
  • Add the reserved water from soaking the mushrooms and mix. Add cream, stir once or twice and take it off the heat. Garnish with herbs and cheese.

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add sausage and crushed red pepper. Sauté until sausage is no longer pink, breaking up with back of fork, about 5 minutes. 9 ounces best-quality spicy sausage, casing removed
1 onion, finely chopped
1 clove garlic, minced
1 pound mixed wild mushrooms, such as chanterelles, oyster, and shiitake, trimmed and torn
2 tablespoons fresh thyme, leaves
1 to 2 small dried red chiles, crumbled
Coarse salt and freshly ground pepper
Fresh Pappardelle
3 to 4 tablespoons unsalted butter
1/2 cup loosely packed flat-leaf parsley, chopped
1/2 cup freshly grated Parmesan cheese

Steps:

  • In a large skillet, heat oil over medium-high heat; add sausage, onion, and garlic, breaking up sausage with a spoon. Cook until onions are golden, about 7 minutes. Add mushrooms, thyme, and chiles; cook, stirring frequently, until mushrooms release their liquid and it evaporates, 10 to 12 minutes. Remove from heat; season with salt and pepper.
  • Meanwhile, bring a large pot of water to a boil; add salt and pappardelle. Cook until al dente, 3 to 5 minutes. Reserve a 1/2 cup cooking liquid; drain pasta. Return to pot.

5 slices bacon
1 tablespoon butter
1 tablespoon olive oil
16 oz. whole mushrooms
8 oz. hot Italian sausage ((casings removed))
1/4 cup dry white wine
4 cloves garlic finely chopped
1 1/2 cups heavy cream
1 tablespoon fresh chopped parsley
1 teaspoon fresh chopped thyme
Salt and pepper
1/2 cup mozzarella ((grated or shredded))
1/4 cup parmesan ((grated))

Steps:

  • Preheat oven to 375°Line a large baking sheet with parchment paper or aluminum foil. Lay bacon strips in a single layer onto baking sheet, making sure not to overlap.Bake until crispy, 15 to 25 minutes.Drain on a paper towel-lined plate. Chop and set aside.
  • In the large pan, melt the butter and add oil. Add the mushrooms and fry for 2-3 minutes to lightly brown mushrooms and release their juices (if any).
  • Add sausage and continue cooking until sausage is slightly browned. Add in the garlic and stir it through for a minute, until fragrant.
  • Pour in the wine and let reduce for 2 minutes, while occasionally stirring.

Sweet and Spicy Sausage and Farfalle is a recipe that I grew up eating, and fell in love with again as an adult. It is one of the easiest recipes you can ask for, and the speedy preparation time makes it a perfect weeknight dinner option. When I was growing up I couldn't understand why we had sweet and spicy sausage and farfalle for dinner all the time. As an adult, I get it! This is the little recipe that can feed your family of 4-5 with just 20 minutes to total preparation time. Plus, the ingredients are all super cheap. It makes perfect sense that my Mom made this recipe to feed our family of five frequently.

2 Sweet Italian Sausages (1/2 lb total)
1/4 cup chopped White Onion
2 cloves Garlic
1 14.5 oz can of Crushed Tomatoes
1/2 cup Heavy Cream
1 teaspoon Red Pepper Flakes
2 cups Farfalle
2 cups Baby Spinach
2 tablespoons Parmesan
1 tablespoon Olive Oil

Steps:

  • Finely chop the onion and garlic. Slice the ends off the sausage, and push the meat out of the casing, and loosely crumble it up.
  • Bring a pot of salted water to a boil. Once the water has come to a boil, add the pasta. Cook for 7-8 minutes, until al dente. Then drain the pasta and set aside.
  • As soon as you put the water on the boil, start to prepare the rest of this dish. Heat the olive oil in a skillet over medium high heat. Add the onions and sauté. After 2 minutes, add the sausage and red pepper flakes. For a mild spice add 1/2 teaspoon of red pepper flakes, or add more for extra spice.
  • Brown the sausage, while using a wooden spoon to break it into small pieces.
  • Once the sausage has browned, add the garlic, crushed tomatoes, and cream. Stir together. Let simmer for 2-3 minutes.
  • Add the drained pasta to the sauce, along with the spinach (I tear it up as I add it in). Let the pasta and spinach simmer in the sauce for 2 minutes over medium heat. Serve with a sprinkle of Parmesan.

3 yellow onions (, large, sliced)
1/4 teaspoon salt
1 tablespoon balsamic vinegar
1 tablespoon olive oil
10 oz mushrooms (, sliced (I used button mushrooms))
6 oz spinach
1 cup half-and-half
1 cup Parmesan cheese (, shredded)
1/4 teaspoon salt
8 oz farfalle pasta

Steps:

  • Heat 1 tablespoon olive oil on medium-high heat in a large skillet. Add sliced onions and cook on high heat for about 10 minutes, constantly stirring with the spatula.
  • The onions should start to brown, but without burning.
  • Reduce heat to medium and continue cooking onions for 10 more minutes, continuing to stir, as onions brown even more without burning. At this point add a pinch of salt over onions.
  • Continue cooking for 10 more minutes on medium or low heat, stirring occasionally to make sure onions don't stick to the bottom of the pan or burn.
  • In total, you should have cooked onions for 30 minutes.
  • Remove the skillet from heat and sprinkle the onions with a small amount of balsamic vinegar to deglaze the pan.
  • Using a spatula, stir the onions, scraping the bottom of the pan and coating onions with a pinch of balsamic vinegar you just added. Remove caramelized onions to a plate.
  • Heat 1 tablespoon olive oil in the same skillet on medium heat. Add sliced mushrooms. Sprinkle with a pinch of salt.
  • Cook mushrooms for about 5 minutes, occasionally stirring, until mushrooms are soft.
  • Add fresh spinach to the skillet and stir on low heat just until spinach starts to wilt.
  • Add half-and-half to the mushroom and spinach mixture and bring to a quick boil. Immediately reduce to simmer.
  • Add 2/3 cup of shredded Parmesan cheese and 1/4 teaspoon salt. Keep stirring while the sauce simmers until the cheese melts.
  • Add caramelized onions back to the skillet with the pasta sauce.
  • Cook pasta according to package instructions. Drain.
  • Add cooked and drained farfalle pasta to the creamy sauce. Stir on low heat for a couple of minutes to reheat.
  • If the sauce is too thick, add a small amount of half-and-half to thin it out. If it is too thin, add a small amount of shredded Parmesan cheese, and stir it in, while the sauce simmers.
  • Serve with more shredded parmesan cheese sprinkled on top.
