Sauteed Mushrooms in Garlic image

Delicious sauteed garlic mushrooms in red wine. This is great with barbecued steaks.

1 tablespoon butter
2 pounds sliced fresh mushrooms
4 cloves garlic, minced
1 teaspoon dried basil
1 cup red wine

Steps:

  • Heat the butter in a skillet over medium heat. Add the mushrooms and garlic; cook and stir until the mushrooms are a light golden brown, about 10 minutes. Stir in the basil.
  • Reduce heat to low, and pour the wine into the skillet. Simmer until most of the wine has evaporated. Serve immediately.

16 even-sized open cup mushrooms, stalks cut level
3 tbsp olive or vegetable oil
2 cloves garlic, chopped very finely
3 tbsp unsalted butter, softened
2 tbsp fresh thyme, chopped
½ tsp garlic powder
5 tbsp fresh breadcrumbs
1½ tbsp lemon juice
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 400F. Lightly fry the mushrooms, cap-side down, in hot oil for 2-3 minutes.
  • Arrange the mushrooms in a a 9x13 cooking dish (or whatever rectangular oven-proof dish you have on hand) with the stalks facing upwards.
  • In a small bowl, mix together the butter (make sure its softened), garlic, thyme, lemon juice and seasoning.
  • Spoon a little garlic butter on to each mushroom, then lightly press the breadcrumbs on top.
  • Either refrigerate for later use, or bake immediately in the oven for 15 minutes or golden around the mushroom cap.

6 slices firm white bread, crusts removed and cut into about 1/4-inch cubes (about 2-1/2 cups)
7 tablespoons butter (no subs!)
2 tablespoons minced fresh garlic (or to taste)
salt and black pepper
1 1/2 lbs small white button mushrooms
1/4 cup fresh parsley, finely chopped
grated parmesan cheese

Steps:

  • Set oven to 375 degrees.
  • Butter a 11 x 7-inch baking dish.
  • Toast the bread cubes in baking sheet, stirring once until golden and crisp (about 8 minutes).
  • Meanwhile melt butter with the garlic, salt and pepper on top of the stove in a small saucepan or in the microwave.
  • Place the button mushrooms in the baking dish and toss well with the butter/garlic mixture.
  • Bake the mushrooms stirring occasionally until soft and juicy (about 15-20 minutes).
  • JUST BEFORE SERVING, toss the mushrooms with the browned croutons and parsley.
  • Divide mushroom mixture evenly into smaller serving bowls, and sprinkle with Parmesan cheese, or just serve in one serving dish.

16 oz cremini mushrooms (baby bella, cleaned gently with damp paper towel and your preference of slice sizes)
4 Tablespoons butter
1 Tablespoon olive oil
3-4 cloves of garlic (minced)
1 teaspoon dried thyme
¼ teaspoon salt
¼ teaspoon pepper
½ cup milk
1 tablespoon cornstarch
1 cup heavy whipping cream
1 cup fresh grated Cello parmesan cheese (divided (3/4 cup and ¼ cup))
2 tablespoons fresh parsley (roughly chopped)
1/8 teaspoon red pepper flakes (optional)
Fresh thyme (several sprigs (optional))
Fresh parsley chopped for garnish

Steps:

  • In a large cast-iron skillet over medium heat melt the butter and olive oil. Add the sliced mushrooms and minced garlic and cook until tender and brown (about 15 minutes).
  • Sprinkle the dried thyme over the mushrooms and cook for about one minute stirring several times. Season with salt and pepper.
  • Mix the cornstarch into the ½ cup of milk and pour into skillet with the mushrooms. Stir until thickened.
  • Then add the heavy whipping cream, ¾ cup of grated parmesan cheese, chopped parsley, red pepper flakes and fresh sprigs of thyme.
  • Lower the heat to medium-low and stir until the cheese melts. Remove the woody sprigs of thyme.
  • Serve garnished with the extra grated cheese and parsley as garnish.

1 kg (2lbs) mushrooms
1 tbsp butter
4 garlic cloves (crushed)
pinch of oregano
pinch of chilli flakes
1 cup cream
½ cup grated Parmesan cheese
2 tbsp parsley
1-2 tsp lemon juice
salt and pepper (to taste )

Steps:

  • Clean the mushrooms by wiping them with a cloth.
  • Mushrooms are like little sponges so washing them will mean they'll absorb a lot of water.
  • Once the mushrooms are clean, melt the butter or add a splash of oil in a large pan set over medium-high heat.
  • Add the mushrooms and allow to cook, stirring regularly, until golden brown. If a lot of liquid cooks out, allow to simmer until evaporated.
  • Add the garlic , oregano and chilli and cook for a minute then pour in the cream, lemon juice and Parmesan.
  • Cook for 3-5 minutes until the sauce has thickened slightly.
  • Season with salt and pepper and add the parsley then serve.
