- In a large bowl, combine the eggs, milk, cheese, saltines, carrots, onion, salt, garlic powder and pepper. Crumble beef over mixture and mix well. Shape into a loaf. Place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 50 minutes. , For glaze, in a small saucepan, bring the brown sugar, ketchup and mustard to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until heated through. Spoon over meat loaf. , Bake 10-15 minutes longer or until meat is no longer pink and a thermometer reads 160°. Drain; let stand for 10 minutes before slicing. If desired, top with minced fresh parsley.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
- Stir ketchup, brown sugar, salt, and chili powder together in a bowl until smooth. Spread a small amount of the ketchup mixture into the bottom of the prepared loaf pan.

- Line a 9"x5" loaf pan with parchment paper and preheat oven to 375°F.
- In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.
- Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf at 375˚F for 40 minutes.
- In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes or until the internal temperature is 160˚F. Rest meatloaf 10 minutes before slicing. Drizzle with baking juices from the pan.

- In a large bowl, combine ground beef, bread crumbs, chili sauce, egg, salt, and freshly ground black pepper; mix well. Shape into an 8x4 inch loaf pan.

- Preheat oven to 350°F In a skillet over moderate heat, add the oil. Heat the oil until hot, but not smoking. Add the onion and garlic and cook, stirring, until softened, about 5 minutes. Set aside and let cool. In a mixing bowl, whisk the eggs, milk, mustard, and hot sauce together. Add marjoram, thyme, salt, and pepper.In a large mixing bowl, combine the meats, egg-milk mixture, bread crumbs, parsley, and the cooked onion mixture. In a small bowl stir together ketchup, sugar, and vinegar. Set aside. Form 1 tablespoon of the meat mixture into a small patty, add it to a small oiled skillet, and cook until no longer pink. Taste for seasoning and adjust. Transfer meat mixture to an oiled loaf pan.* NOTE: I have, since, discovered that I can mix all the wet ingredients in my Kitchen Aid mixer bowl, then add the meat and cooked onions and garlic. I turn the mixer on LOW for a few minutes-- so much easier and less messier! *NOTE: The best way to make the meatloaf is to use a baking sheet, lined with foil. Place a cooling rack on top. Cut a piece of foil to be larger than a the loaf-- and shape the meat into a loaf. Using a metal skewer, poke holes along the foil...usually every other hole. Place the shaped loaf on top of the foil. I prefer this method, as the loaf is less likely to "steam" in a loaf pan. You can also glaze all around the meatloaf, which is even better! Brush meat with ketchup glaze. Bake in oven for about 45 minutes, until glaze has set. Brush meat loaf with remaining glaze and bake for 15 minutes more; glaze again. My oven takes 1 hour and 15 minutes to reach the desired doneness. Times do vary, so allow for that! Internal temperature of loaf should be 160 degrees F. NOTE: Sometimes, I freeze half of the mixture in a plastic lined loaf pan. Once it's frozen, I remove the loaf and place it in a zip-loc bag, and the loaf is perfectly shaped. When ready to prepare, thaw in the refrigerator, make the glaze and bake as directed. WITH THE OTHER HALF: I shape individual meat loafs, and bake as directed for 20 minutes. This speeds up the time, quite a bit.

- Combine ketchup, brown sugar and cider vinegar in a small bowl.
- Preheat the oven to 350ºF. Line a rimmed baking sheet with foil. Set aside.
- Heat a skillet over medium-high heat. Add the oil, and once shimmering, add the onion and cook until tender. Add the garlic and cook an additional minute, then remove from the heat to cool slightly.
- In a medium bowl, combine the eggs, milk, Worcestershire sauce, mustard, salt, pepper, thyme and hot pepper sauce. Mix until combined.
- In a large bowl, combine the meat, crackers, parsley, and cooked onion and garlic mixture. Add the egg mixture and mix just until combined.
- Transfer the mixture to the prepared baking sheet. Form into a loaf about 9×5-inches.

- Bake for 30 minutes, then spread the remaining glaze over the top and sides of the meatloaf.
- Return to the oven and bake until the meatloaf registers 160ºF on an instant read thermometer, about another 20-30 minutes.
- If desired, you can turn on the broiler for the last couple minutes to really thicken up the glaze.
- Cool for 10-15 minutes before slicing to serve.

- Lay the two pieces of sandwich bread onto the pan.
- In a large bowl, mix the beef, milk, egg, salt, pepper, onion, ginger and saltines.

- Make glaze by whisking all glaze ingredients in a saucepan until sugar dissolves. Reserve 1/3 cup glaze mixture, then simmer remaining glaze over med-low heat until slightly thickened, about 5 minutes. Cover and keep warm.
- Heat oil in a skillet over med heat; cook onion until soft and starting to brown at the edges. Add garlic and cook one more minute. Remove from heat and set aside to cool.
- In a large bowl, mix the beef, pork, and turkey by hand until combined. Process the saltines in a food processor into a fine texture, or place in a zip-type bag and crush with a rolling pin.
- Add the crackers to the milk in a small mixing bowl. Add the eggs and yolk, mustard, Worcestershire sauce, thyme, parsley, salt and pepper, along with the cooked onions and garlic to the milk and cracker paste; mix well and then add to the meat until well incorporated.
- Divide and shape mixture into two loaves, side by side, on a parchment-lined, rimmed baking sheet. Trim parchment paper around outside edge of loaves to remove excess, leaving about an inch around loaves.

THE BEST GLAZED MEATLOAF

- For the meatloaf, in a large mixing bowl, add the crushed saltines and milk and let the mixture sit for 5-10 minutes. Add the parsley, eggs, onion powder, garlic, Dijon mustard, Worcestershire sauce, salt and pepper. Mix well.

- Set oven to 350F
- To make the sauce, put all the ingredients in a sauce pan and stir to combine. Bring to a boil lower the heat and simmer/boil gently, uncovered, for about 10 minutes until thickened. If you used a chunky jam you may want to use an immersion blender to puree the glaze.
- Put the meats in a large mixing bowl, breaking them apart into small pieces as you add them.
- Add the egg, breadcrumbs, onion and salt and pepper to the bowl. Mix everything well with your fingertips. You want to thoroughly incorporate all the elements without over-doing it.
- Form the meat into a loaf, not too tall and not too wide. You want it to cook evenly, so try to get it even from end to end.
- You can set it directly in a pan or on a baking sheet, or set it on a rack if you have one. Whatever you do, be sure to line the pan with foil since the glaze will drip and make a mess.
- Spread a layer of glaze all over the meatloaf and bake it for about 60 minutes, or until a thermometer inserted in the center reads 155F. (It will continue to cook as it rests.) Note: I baste another layer of sauce on the meat halfway through the cooking.
- Remove the meat and let it rest for a few minutes before slicing. Slather on a final coat of glaze just before serving, (heat it up on the stove so it is hot) and serve extra sauce on the side.
