Steps:
- In a saucepan, mix together the sugar and corn starch; make sure to blend corn starch in completely. Add boiling water, and cook over medium heat until mixture thickens. Remove from heat. Add gelatin mix, and stir until smooth. Let mixture cool to room temperature.
- Place strawberries in baked pie shells; position berries with points facing up. Pour cooled gel mixture over strawberries.
- Refrigerate until set. Serve with whipped cream, if desired.

Steps:
- Preheat oven to 350.
- Place the pie crust in pie pan, nestle in, crimp edge and prick bottom with fork a few times (as shown above).
- Bake pie crust for about 15 minutes or until edges are browned. Remove from oven and set aside to cool.
- Layer sliced berries into the cooled baked pie crust. Fill to top.
- Stir together water sugar and cornstarch in a sauce pan and bring to a boil. Simmer, stirring constantly, until thickened.
- Remove from heat, add Jell-O and stir until dissolved.
- Pour mixture over the strawberry filled crust.
- Refrigerate until set. This will take at least 3 hours to have a good set.
- Top with whipped cream when serving.

- Bake the crust according to package directions. To help the crust stay in place while baking, Line the crust with aluminum foil and bake for 8 minutes, remove foil, and bake for an additional 5.
- In a small saucepan, combine cornstarch, sugar and water and whisk until smooth. Bring it to a boil and whisk for 2 minutes until it starts to thicken. Remove from the heat and stir in the strawberry jello until dissolved. Let the mixture cool for about 15 minutes.
- Place the strawberries into the crust and pour the cooled mixture over the strawberries. Refrigerate 3 hours or overnight until set. Serve with fresh whipping cream.

- Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in gelatin until dissolved. Refrigerate until slightly cooled, 15-20 minutes., Meanwhile, arrange strawberries in the crust. Pour gelatin mixture over berries. From a Houston Junior League cookbook, this is by far my favorite way to eat fresh strawberries. Quick, fresh, sweet and not at all gloppy. I think it's better when eaten right away than when chilled. If you purchase the red gloppy substance sold in your grocer's produce section to make strawberry shortcake or pie, please stop!!! This recipe can also be used as a quick strawberry shortcake or poundcake topping. You'll be suprised at the bright red color without food coloring, corn syrup or other nasty things that detract from beautiful fresh berries.

- 1. Wash and remove the stems from the berries, and let drain. (I leave them whole for the Pie)
- 2. Place the water, sugar and cornstarch in a sauce pan; bring to a boil and cook until glossy, stirring constantly (about 2 minutes). Remove from heat.
- 3. Add strawberry jello powder, and a few drops of red food coloring. cool. Fold in the strawberries and place in baked pie shell.. refrigerate. Serve with a dab of whipped cream... Enjoy!
STRAWBERRY PIE
Steps:
- Prepare pie crust.
- Roll out one dough between two sheets of parchment paper. Lightly flour the bottom of the paper and the top of the dough. If the dough is too hard or too cold, let it rest a few minutes until it is pliable. Alternatively, you can roll the dough on a lightly floured work surface. Roll dough to about 10 inches in diameter and about 1/4-inch thick Place the pie plate upside down over the rolled dough to make sure it is the correct size.
- Move dough into the pie plate and firmly press it into the bottom and sides of pie plate. Trim the excess dough leaving about a 1/2-inch overhang all around. Cover with plastic wrap and let chill in the fridge.
- Roll out the other dough until 10 inches in diameter. Cover with plastic wrap and let chill in the fridge for 5 minutes.
- Meanwhile, toss strawberries with sugar, cornstarch, and salt in a large bowl.
- Pour strawberries into the chilled pie crust. Cover with the rolled out top crust. Decorate the edges with a fork, or pinch together with your fingers to form crust. Chill pie while you preheat the oven to 450 degrees F.
- Place chilled pie on a baking sheet. Brush top of the pie lightly with whole milk. Sprinkle with turbinado sugar. Use a knife to cut four slits/vent holes in the top of the crust. This is necessary to let the steam escape and prevent the top crust from exploding during baking.
- Bake at 450 degrees for 10 minutes. Then reduce heat to 350 degrees and bake for 15 minutes. Rotate the pie and continue to bake for another 20-30 minutes until the pie is golden brown. Let pie cool on rack before serving.
DEEP DISH STRAWBERRY PIE
This Deep Dish Strawberry Pie recipe uses a ton of fresh strawberries and a simple homemade gelatin filling.

- Arrange 4-5 cups sliced fresh strawberries in pre-baked pie shell.
- Add ginger ale, mashed strawberries and sugar to medium sauce pan. Bring to boil.
- Reduce heat to low-medium. Mix water with corn starch, then dump water/corn starch paste into sauce pan. Allow to simmer on low for about 10 minutes, stirring frequently.
- Pour strawberry liquid over fresh strawberries in pie pan.
- Place in refrigerator for several hours, or ideally overnight to allow gelatin to set. Serve with whipped cream.
