SOUR CREAM APPLE COFFEE CAKE

Steps:
- Preheat oven to 350 degrees. Grease a 13x9 inch pan.
- Place the butter and sugar in a large bowl, beat until well incorporated. Add the eggs and vanilla, beat until light and fluffy.
- Sift the flour,baking soda, baking powder and salt together. Add the dry ingredients alternately with the sour cream, (Example...add 1/3 of the dry ingredients, beat until just incorporated, add 1/2 the sour cream, beat until just incorporated. Add 1/3 more flour, beat until just incorporated, add the last half of the sour cream, beat until just incorporated, add the last 1/3 of the flour, beat until just incorporated.)
- Stir in the diced apples. Spread the batter evenly into your prepared pan. Sprinkle the topping over top, bake at 350 degrees for 35 to 40 minutes or until a toothpick inserted comes out clean.

This is really easy and so very, very good. I like to add a dollop of vanilla yogurt on top of my piece of coffee cake. Yummy!

- Preheat oven to 350 degrees F (175 degrees C). Spray an 8-inch square baking dish with cooking spray; dust with 1 tablespoon flour.
- Beat 1/4 cup butter and 3/4 cup brown sugar together with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat egg into butter mixture. Add sour cream, vanilla yogurt, and vanilla extract to the mixture; beat to integrate.
- Stir 1 cup flour, 3/4 teaspoon cinnamon, baking soda, and salt together in a bowl; add to the butter mixture and beat to combine into a batter. Fold apples into the batter. Pour batter into prepared baking dish.
- Mix 1/4 cup brown sugar, 1/4 cup flour, 2 tablespoons butter, and 1/2 teaspoon cinnamon together in a bowl using a fork to achieve a crumbly consistency; sprinkle over the top of the batter.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

- In a small bowl mix nuts, cinnamon, and 1 cup of the sugar; set aside.
- Cream butter and the rest (1 cup) of sugar, beating until light and fluffy with electric mixer on high.
- Add Eggs one at a time, beating after each addition.
- Add vanilla.
- Add flour, baking powder, salt and baking soda, beating well.
- Add sour cream; mix well.
- Spread 1/2 of the batter in a 9 or 10 inch square pan.
- Top with all of the slices of apples. Over the top of the apples put 1/2 of the nut, sugar, cinnamon mixture.
- Add remaining batter and then sprinkle remaining nut mixture over all.
- Bake at 350° for 40 minutes or until knife inserted in center comes out clean.
- Set out of oven on wire rack for 30 minutes.
- Loosen edges, lift out and let cool.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan, springform pan, or tube pan.
- Beat 1 cup sugar and butter with an electric mixer in a large bowl until light and fluffy. Add flour, sour cream, eggs, vanilla, baking powder, baking soda, and salt; continue beating until ingredients integrate into a batter.
- Mix walnuts, 1/2 cup sugar, and ground cinnamon in a separate bowl.
- Pour about half the batter into the prepared pan. Sprinkle about half the walnut topping over the batter and top with remaining batter. Finish by sprinkling remaining topping over the batter.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes (depending on pan used). Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

FANTASTIC APPLE SOUR CREAM COFFEE CAKE
This addition of sour cream in this coffee cake makes it so moist and delicious! This is one of my all-time favorite cake recipes, I have even made this cake with fresh blueberries adding in 1 tsp almond extract to replace the vanilla, or you can even add it in when using apples --- this cake is fantastic without the topping and just used as a white cake --- I usually double the brown sugar topping and spread half of the cake batter in the pan then sprinkle half of the topping then top with remaining batter, the batter will not really cover the topping mix if you are using a 13x9-inch pan but not to worry it will bake together just fine and besides you will be sprinkling the remaining batter on top anyway! --- serve this with whipped cream or ice cream, *SO* delicious!

- Set oven rack to second-lowest position.
- Grease a 13 x 9-inch baking pan (this can also be made in an 11 x 7-inch baking pan).

- 1. Add the flour, confectioners’ sugar, and salt to a large bowl and mix until well combined. Add the cold butter in small pieces and mix with the flour. Cut with a pastry cutter into pea-sized pieces. Add the egg and mix everything, knead quickly to get a smooth dough. Shape into a ball, flatten and wrap in plastic wrap. Place in the fridge for about 1 hour (or overnight).
- 2. Line a 9 inches (24cm) springform tin with baking parchment and set aside. Roll out the dough on a floured surface slightly larger than the baking tin, transfer, and press to the bottom and sides to get a nice crust for the filling – the edges should go almost all the way up the sides. Prick the bottom several times with a fork and place back in the fridge for another 20 minutes or so.
- 3. Preheat the oven to 350°F (180°C). For the filling add the sour cream, curd, heavy cream, and vanilla extract to a large bowl and mix until well combined. Add the eggs one after another and mix well after each addition. Mix the sugar with cornstarch, and lemon zest – add to the large bowl and mix everything until well combined. Set aside.
- 4. Peel the apples, quarter and core. Cut the apple pieces in a fan-shaped manner – try to slice the apple thinly, but do not cut all the way through. The slices should still stay together. Brush in some lemon juice so they won’t brown. Pour the filling into the prepared form and place the apple pieces in a circle – starting on the outside – on top of the filling. Try to cover almost every spot of the filling – don’t worry if the apples sink in a bit. Sprinkle with the sliced almonds and cane sugar and bake for 70-75 minutes in the preheated oven. Take out and let cool down on a wire rack, then place in the fridge for at least 2 hours before serving. Remove from the baking tin and serve with some whipped cream.
