ULTIMATE MEATLOAF WITH TANGY SAUCE



Ultimate Meatloaf with Tangy Sauce image

This truly is the Ultimate meatloaf with a lip-smacking, tangy tomato sauce. This is perfect for a weeknight dinner or leftover meatloaf sandwiches! We're talking pure comfort food at it's finest!

Number Of Ingredients 19

3lb ground beef, 80/20
3 Xl eggs, beaten
4 slices bread, torn in pieces
1/3 cup milk
2 tablespoon tomato paste
1 tablespoon fresh chopped parsley
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1/4 cup tangy sauce
1/4 cup panko bread crumbs
1 1/2 cups ketchup
2 tablespoon tomato paste
1/4 cup brown sugar
3 tablespoon apple cider vinegar
3/4 teaspoon kosher salt
3/4 teaspoon black pepper
1 teaspoon minced garlic
2 tablespoon molasses (not black strap)
1/2 cup beef stock

Steps:

  • Preheat the oven to 350F. Line a rimmed baking sheet with parchment paper. Set aside.
  • In a bowl add all of the ingredients for the Tangy Sauce and whisk; set aside.
  • In a medium bowl add the bread, panko and milk. Press the bread into the milk and set aside. Allow to soak for 5 minutes.
  • In a large bowl add the rest of the meatloaf ingredients and the bread/panko/milk mixture. Gently mix until combined. Do not overimx as the meatloaf will be tough. Transfer the mixture to the baking sheet and using your hands, form a loaf that is about 12 inches long, 6 inches wide, and about 2 1/2-3 inches tall. The loaf should be smooth and have rounded edges. This will help the loaf stay together when serving.
  • Bake for 35 minutes. Remove from the oven and spread Tangy Sauce all over the top and sides of the meatloaf. You'll use about 1 -1 1/2 cups of sauce. Save the leftover sauce for meatloaf sandwiches. Put the meatloaf back into the oven and bake for an additional 25-30 minutes or until a thermometer inserted reads 165F.
  • Remove from the oven and allow to cool for 15 minutes before cutting.

1 1/2 lbs ground beef
1 cup cracker crumb
1 1/4 teaspoons salt
1/4 teaspoon pepper
1 large egg, beaten
1 medium onion, chopped
1/2 cup tomato sauce
3/4 cup ketchup
2 tablespoons firmly packed brown sugar
1 cup water
2 tablespoons mustard
2 tablespoons vinegar

Steps:

  • Preheat oven 325 degrees Fahrenheit.
  • In a large mixing bowl, combine ground beef, cracker crumbs, salt, pepper, egg, onion and tomato sauce.
  • Mix lightly.
  • Shape into a loaf and place in a baking dish.
  • In a small mixing bowl, combine the ketchup, brown sugar, water, mustard and vinegar.
  • Brush the loaf with this mixture.
  • Place meat loaf in oven and bake 1 hour and 15 minutes, basting occasionally with sauce.

1 1/2 lb ground beef
1 egg, slightly beaten
1/4-1/2 c finely chopped onion
1 tsp seasoning salt (mrs. dash's)
1 c small bread cubes
2 beef bouillon cubes, dissolved in 1 cup boiling water
dash(es) pepper
SAUCE
3 Tbsp brown sugar
1/2 c ketchup
1/4 tsp nutmeg
1 tsp dry mustard

Steps:

  • 1. Add 1/2 cup bouillon with bread cubes and add egg. Let stand 5 minutes or until croutons are softened; beat until light and fluffy.
  • 2. Add meat, onion, salt and pepper.
  • 3. Shape into a loaf and put in loaf pan.
  • 4. Rough the top of the meat with a fork and cover with the sauce ingredients which have been combined.
  • 5. Bake at 350 degrees for 1 hour.

1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

Crispy, cheesy mashed potato cakes topped with a big slice of tangy BBQ meatloaf.

Number Of Ingredients 16

3 lbs ground beef
2 eggs
2 teaspoon garlic powder
2 teaspoon pepper
1 cup minced onion
2 cups oatmeal, not instant
2 teaspoon salt
12 ounces evaporated milk
1 1/2 teaspoon chili powder
2 cups ketchup
2 tablespoon liquid smoke
1 1/4 cup brown sugar
1/2 cup minced onion
1 teaspoon garlic powder
3/4 cup bbq sauce (not honey)
Potato Cake Stacks, warmed

Steps:

  • Preheat the oven to 350F. Line a baking sheet with parchment paper.
  • In a medium saucepan over medium heat, add all of the ingredients for the sauce. Cook until thick and bubbly; stirring occasionally. ~10 minutes.
  • To make the meatloaf mix all the meatloaf ingredients together in a large bowl. Transfer the mixture to the baking sheet and using your hands, form a loaf that is about 12 inches long, 6 inches wide, and about 2 1/2-3 inches tall. The loaf should be smooth and have rounded edges. This will help the loaf stay together when serving. Bake for 20 minutes, remove from the oven, and spread the bbq sauce on top of the meatloaf, dripping over the sides.
  • Place back in the oven and bake for another 20 minutes. Remove from the oven and spread more of the bbq sauce over top. Place back in the oven and bake for another 10-15 minutes or until the internal temperature reaches 165F. Remove from the oven and allow to rest for 10-15 minutes before cutting.
  • Put the oven to broil and put the rack in the upper third of the oven. Place a Potato Cake Stacks down on a parchment-lined baking sheet, slice a 1" thick slab of the meatloaf, and place it on top of that.
  • Ladle some bbq sauce on top and place the pan in the oven for a few minutes or until the bbq sauce is bubbling and starts to brown/caramelize. Remove from the oven and serve.

1 lb hamburger (I use turkey burger healthier)
1/2 cup breadcrumbs
1/2 an onion, chopped
1 egg
1/4 cup ketchup
1 dash Worcestershire sauce
1 dash Frank's red hot sauce
1 teaspoon pepper
1/2 teaspoon garlic powder
1/2 cup ketchup
1/2 cup packed brown sugar
1 teaspoon mustard
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350°F.
  • In large bowl, put the bread crumbs, onions, pepper, garlic, the Worcestershire sauce, red hot sauce, make a well in the center break the egg, meat and ketchup. Now is when it gets messy -- you want to mix all the items together.
  • Put meatloaf mixture in a greased pan. Smear the topping mixture on top. Place in the preheated oven.
  • Bake for 50 minutes. When that is done, take out the meatloaf. If you want to, place 1/2 cup of shredded cheddar cheese on top. Bake till the cheese is melted.

1 pound ground beef
1 Tbl Montreal Steak Seasoning
1 tbl garlic, minced
1/4 cup minced onions
2 eggs
1/4 cup milk
1 1/4 cups old fashioned rolled oats (regular or gluten free oats)
1 tbl Worcestershire sauce
2 Tbl ketchup
1 15-ounce can tomato soup, divided

Steps:

  • Preheat oven to 350F, rack in the middle.
  • Line a rimmed baking sheet with parchment paper and lightly spray.
  • In a large bowl add the oats and milk and gently mix.
  • Set aside for 15 minutes to allow the oats to soak in the milk.
  • After 15 minutes strain out the milk into a separate container but do not discard.
  • In the bowl the oats are in add the ground beef, eggs, steak seasoning, garlic, onions, ketchup, and 3 Tbl of tomato soup.
  • Just combine but try not to overwork it as it will get tough. If the mixture is too wet, add in 1-2 more Tbl of oats (don't worry if they aren't soaked). If too dry, add in the milk 1-2 Tbl at a time. You want the mixture to be pretty moist but firm enough to hold a shape.
  • In the bowl gently press together.
  • Transfer the mixture to the baking sheet and using your hands, form a loaf that is about 12 inches long, 6 inches wide, and about 2 1/2 inches tall. The loaf should be smooth and have rounded edges. This will help the loaf stay together when serving.
  • Bake for 30 minutes, remove from the oven and spread the remaining tomato soup on top of the meatloaf.
  • Continue baking for another 30 minutes.
  • Remove from the oven and allow to rest for 10-15 minutes before serving.
