Old-Fashioned Chicken and Dumplings image

This is an old family recipe developed by my grandmother, whose arthritic hands would not allow her to roll noodles. Each generation has made small changes to suit their families. A simple and wholesome chicken and dumpling soup.

1 (3 pound) whole chicken
4 cubes chicken bouillon
2 cups all-purpose flour
4 eggs
1 teaspoon salt

Steps:

  • Fill a large pot with water, and add whole chicken. Bring to a boil, and then reduce heat. Simmer until tender, about 1 to 2 hours.
  • Remove chicken from broth, and set aside to cool. Reserve broth. When cool enough to handle, remove meat from bones; cut into bite size pieces. Discard skin and bones.
  • In a medium bowl, stir together flour and salt. Break one egg into flour, and stir with fork till stiff. Continue adding eggs one at a time until all are incorporated. The dough should be very stiff.
  • Bring broth to a boil. Add bouillon cubes; stir until cubes have dissolved.
  • Using a fork and knife, pick up dough on fork. Hold over boiling broth, and cut off small pieces into broth until all the dough has been used. Stir, cover, and simmer for 20 minutes.
  • Add chicken meat, and stir. Serve hot.

to make broth you will need:
2 1/2- 3 lb whole chicken
2 c chichen broth
1 tsp butter
water
1 tsp garlic powder
1/8 tsp black pepper
to make dumplings you will need:
2 c all purpose flour
1/2 tsp salt
5 Tbsp butter
1 large egg
1/2 c whole milk

Steps:

  • 1. PLACE THE CHICKEN INTO A LARGE BOILING POT ADD CHICKEN BROTH AND WATER ADD GARLIC POWDER AND BLACK PEPPER ,MAKE SURE THE CHICKEN IS COVERED WITH WATER BRING TO A BOIL AND REDUCE HEAT TO SIMMERING THROUGHOUT COOKING SKIM AWAY ANY FOAM IN YOUR POT .SIMMER FOR 1-1/2 HOURS UNTIL CHICKEN IS DONE AND TENDER. REMOVE CHICKEN FROM THE BROTH AND COOL.
  • 2. DEBONE THE CHICKEN ONCE IT IS COOLED ENOUGH TO HANDLE, WHILE DEBONING THE CHICKEN DISCARD SKIN AND BONES...CUT DEBONED CHICKEN INTO BITE SIZE PIECES
  • 3. MIX YOUR FLOUR,SALT,EGG,BUTTER AND MILK IN A MIXING BOWL, USE A HAND MIXER AND CONTINUE TO MIX UNTIL A BALL FORMS
  • 4. FORM YOUR DUMPLINGS BY ROLLING OUT THE DOUGH TO ABOUT 1/8 INCH ON A CUTTING BOARD. USE A SHARP KNIFE OR A PIZZA CUTTER TO CUT YOUR DOUGH INTO BITE SIZE PIECES
  • 5. BRING THE CHICKEN BROTH TO A BOIL. DROP DUMMPLINGS INTO BOILING BROTH, ENSURING THAT THEY SUBMERGE. ADD ALL OF YOUR DUMPLINGS TO THE BROTH ONE AT A TIME, YOU CAN KEEP DUMPLINGS FROM STICKING TOGETHER BY ADDING BUTTER AND DUNK DUMPLINGS ONE FINAL TIME , REDUCE HEAT TO MEDIUM LOW AND COOK 8 TO 10 MIN. NOW ADD CHICKEN AND SIMMER UNTIL CHICKEN IS HEATED .

Easy to prepare with a few "secret" ingredients that may surprise you. Serve with homemade dinner rolls and a green salad and you have yourself a delicious, filling meal. From the ever-realiable Fanny Farmer Cookbook.

2 lbs stew meat
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
4 tablespoons shortening
2 cups boiling water
2 cups fresh beef stock
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon sugar
1 large yellow onion, sliced
2 bay leaves
1/4 teaspoon allspice
12 small carrots, trimmed and peeled
12 whole white pearl onions, peeled
8 small red potatoes, peeled, cut in half (any small, thin skinned potato can be substituted)
1 large parsnip, peeled and cut into uniform chunks (optional-my addition)

Steps:

  • On a piece of wax paper combing the flour, salt and pepper and roll the beef cubes in the mixture. Shake off the excess flour.
  • Over high heat in a Dutch oven, melt the shortening. When the shortening is very hot, add the beef chunks, about 5 or 6 pieces at a time, do not crowd. Brown on all sides and remove to plate. Repeat the process until all the beef chunks are browned.
  • Once the meat is cooked, return the cooked meat to the pot, stand back and pour on the boiling water. Be careful not to burn yourself when the water spits and sputters. Next add the lemon juice, Worcestershire sauce, sugar, yellow onion, pearl onions, bay leaves, and allspice. Stir well.
  • Lower the heat, cover and simmer for 1 1/2 to 2 hours, or until meat is tender. Do not allow the stew to dry out. Add a little more boiling water if necessary. Finally, add the carrots, onions, and potatoes and cook another 25-30 minutes or until the carrots and potatoes pierce easily with a fork.
