CAPE COD OATMEAL COOKIES
This recipe is from an old Fannie Farmer Cookbook I bought not long after I married. My Dad and my husband loved them so I would make them every year at Christmas and in-between. They are chewy and nourishing. Give them a try!

- 2. Mix the flour, baking soda, cinnamon, and salt together in a large bowl. Stir in the remaining ingredients.
- 3. Arrange by teaspoonfuls on unbuttered cookie sheets and bake until the edges are brown, about 12 minutes.

This recipe has been in my family for many, many years. My late mother heard this recipe given out on the radio one day years and years ago and she made them. They are delicious and I am forwarding the recipe to you because I am afraid it may otherwise become lost over time and I wish to share it with you.

- Preheat oven to 350 degrees F (175 degrees C).
- In large bowl stir together flour, cinnamon, baking soda and salt. Stir in remaining ingredients.
- Drop by teaspoon 1-1/2 inches apart on ungreased sheets (Make the cookies small). Bake for 12 minutes or until brown.

OATMEAL RAISIN COOKIES
For the perfect winner to fill up your cookie jar, bake these got-it-all oatmeal cookies loaded with raisins and nuts. While there is no shortage of oatmeal cookie recipes out there, we love these in particular because they strike the perfect balance of crispiness and chewiness. The ratio of ingredients used turns out a cookie that isn't tall and cakey, but instead a little slender and nicely caramelized around the edges.

- Heat oven to 375°F. Spray cookie sheets with cooking spray. In large bowl, combine granulated sugar, brown sugar and butter; beat until light and fluffy. Add vanilla and egg; blend well. Add flour, baking soda, cinnamon and salt; mix well. Stir in oats, raisins and nuts.
- Drop dough by rounded teaspoonfuls 2 inches apart onto sprayed cookie sheets.
- Bake at 375°F. for 7 to 10 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets.

SIMPLE OATMEAL COOKIES OR COWBOY COOKIES
These are some cookies that I made for my SIL when she was having issues with fibre in her diet. She was encouraged to have oatmeal and so I tried to find her a "good" oatmeal cookie. This was attempt number two. This recipe is adapted from The Fannie Farmer Cookbook. I have included two versions of a great cookie. When I make the cowboy cookies, I make them BIG.

- Preheat oven to 350°.
- To make Simple Oatmeal Cookies: Mix the flour, baking soda, cinnamon and salt together in a large bowl.
- Stir in the remaining ingredients.
- Arrange by teaspoonfuls on unbuttered cookie sheets. Leave about 1 inch in between. They do spread a wee bit. Not too much though.
- Bake until the edges are brown, about 10-12 minutes.
- For Cowboy Cookies: Add in coconut and chocolate chips when you add in the rest of the ingredients (Step 3). Drop them by the FULL tablespoon on a cookie sheet. (Might have to "squish" them a bit) Bake for 14-17 minutes or until mostly brown.

JOY OF COOKING'S OATMEAL COOKIES
Hands down the best cookies I've ever tasted. I make then all the time and am always asked for the recipe! Sometimes, instead of raisins, I put in chocolate chips, and (my favorite) chocolate covered raisins.

- Preheat oven to 350°F.
- Sift (sifting is important!) flour, baking soda, baking powder, salt, cinnamon, nutmeg (its not in the recipe, but I add about 1/8-1/4 tsp of ground cloves, too) into a mixing bowl.
- Beat butter, brown sugar, sugar, eggs, and vanilla with a hand mixer at medium speed.
- Sift (yes, again!) flour mixture into butter mixture and mix well.
- Fold in raisins (or chocolate chips or chocolate covered raisins) and oats.
- Spoon 1.5 inch balls onto non-stick cookie sheet.
- Bake at 350°F for 6-9 minutes, rotating half way through baking. (Should be lightly firm in the center when done) Be careful -- oatmeal raisin cookies don't look done when they are, so they are very easy to over cook (unless you want then to be crispy) :).

- In a small bowl, cream shortening and sugars. Beat in egg and vanilla. In a small bowl, combine the oats, flour, baking soda and salt. Gradually add to the creamed mixture. Stir in walnuts., Drop by tablespoonfuls 3 in. apart onto an ungreased baking sheet. Bake at 350° for 9-11 minutes or until edges are lightly browned. Let stand for 2 minutes before removing to a wire rack to cool completely.

FARMER COOKIES
A good, old fashioned, mid-western cookie! We grew up eating these cookies. My grandma made them often! This recipe calls for melting the shortening and then creaming it with the sugar. I think that is the secret to making these cookies so crispy and light!
