FANCY BAKED POTATOES
I can't count the times I've turned to this tried-and-true recipe when company is coming. The potato filling is creamy and rich tasting, plus the servings are attractive. Steps:
- Scrub and pierce potatoes; rub with oil if desired. Bake at 375° for 1 hour or until tender. Cool. Cut each potato in half lengthwise. Scoop out the pulp, leaving thin shells. Discard two shell halves., In a large bowl, mash pulp with butter. Stir in the milk, sour cream, salt, pepper and half of the pimientos and chives. Spoon into potato shells. Place on a baking sheet. , Bake, uncovered, at 375° for 20-30 minutes or until heated through. Sprinkle with remaining pimientos and chives.

Steps:
- Place cauliflower in a large microwave-safe bowl, and pour 1/3 cup water over it. Cover and microwave until soft, 6 to 8 minutes. Once the bowl is cool enough to handle, drain any excess water, if needed.
- Put 2 cups cauliflower in a blender or food processor and set the rest aside. Add the mayonnaise, sour cream, Dijon mustard, ranch dressing or dip mix, non-dairy creamer, and 1/4 teaspoon salt. Puree or pulse until blended. Don't worry if the puree isn't completely smooth. Set aside.
- To the bowl with the remaining chopped cauliflower, add the onion, celery, egg whites, chives, dill, 2 tablespoons parsley, and rice vinegar. Add the pureed mixture and lightly stir to coat.
- Chill for several hours before serving. Garnish with paprika and additional parsley, if using. Mmmmm!

- heat 2 cups water in saucepan till boiling, add potatoes, cover and cook until tender.
- Drain and mash potatoes until no lumps remain.
- Beat in milk, amount of milk needed to make fluffy depends on type of potatoes used.
- Add 1/2 cup butter,and salt and pepper.
- Beat until light and fluffy, add eggs mix until well blended.
- Drop potatoes by spoonfulls into mounds on greased cookie sheet.
- brush with melted butter, bake 15 min at 425 until lightly browned.

- Scrub potatoes.
- Cut, crosswise, into thin slices, using the handle of a wooden spoon to prevent knife from cutting all the way through.
- Put potatoes in a baking dish; fan slightly. Drizzle with butter.
- Sprinkle with salt and herbs.
- Bake potatoes in 425°F (220°C) oven for 50 minutes.
- Remove from oven.
- Sprinkle with cheeses.
- Bake 10-15 minutes longer or until lightly browned and cheeses are melted.
