- Allow to cool to lukewarm.
- Put mixture in a blender till it is pureed.

Steps:
- Add the ingredients (except for the orange juice) into a small saucepan.
- Squeeze the oranges into the pan, then drop in the rinds.
- On low heat, stirring occasionally, let it simmer for 15 minutes.
- Careful to keep the heat low allowing for a very low gentle heat, not a hard boil.
- To check doneness dip in a spoon and run your finger over the back, the line should stay clean.
- Turn off the heat and strain out the garlic and orange pieces.
- Let cool completely before serving.

From "About.Com". Great for those who can't find American A-1 sauce. Did you know that Canadian A-1 is TOTALLY different from the American version even though the bottles look the same? I found this out while at a steak house in Toronto. The Canadian version is much sweeter and redder that the US version.

Steps:
- Put all ingredients into a small pan and bring to a low simmer.
- Simmer over low heat for 15 minutes.
- Strain into a bowl by pouring through a fine mesh strainer, pushing raisins with the back of a spoon to release all juices.
- Allow to cool completely before seasoning to taste with salt and pepper. It tastes different when its hot.
- Enjoy with your favorite steak!

DURKEE FAMOUS SAUCE CLONE
This wonderful tasting, versatile sauce has been a secret ingredient in many southern recipes for as long as I can remember. It was originally patented in 1857. It is used in potato salad, cole slaw dressing, remoulade sauce, egg salads and various other salad/dressing recipes. We love it spread on bread for turkey sandwiches. While the "real deal" is still available at grocery stores in southern states, I understand it is becoming very difficult to find elsewhere. I suspect it will eventually become one of those extinct products that we will reminisce some day. I found several copycat recipes on the net but this one works best for me.

Steps:
- Put all ingredients, except for the butter, into your blender.
- Blend on high speed about 2 minutes or until mixture is smooth.
- Pour into top pan of a double boiler.
- Cook over gently boiling water.
- As sauce begins to heat, add butter, stirring often to incorporate.
- Cook for 12-15 minutes (stirring often) or until sauce becomes thick and smooth.
- Remove from heat and allow to cool.
- Cooled sauce may be run thru blender, again, on high speed for about a minute till smooth.
- Refrigerate sauce in covered container for several hours before using.
- Will keep, refrigerated, about 1 month.
