  • Preheat oven to 350 degrees F (180 degrees C).
  • In a mixing bowl, cream the shortening and peanut butter. Add the brown sugar, eggs, and vanilla; mix well.

½ cup margarine, softened
1 cup packed brown sugar
¾ cup white sugar
1 cup peanut butter
2 eggs

  • Preheat oven to 350 degrees F (175 degrees C).

¼ cup gluten free oat flour - if using homemade oat flour, make sure it's finely ground (not coarse)*
2 tablespoons golden ground flaxseed
1 teaspoon ground cinnamon
¼ teaspoon salt
2 tablespoons melted coconut oil
¼ cup + 2 tablespoons unsalted, natural creamy peanut butter (try homemade peanut butter)
3 tablespoons pure maple syrup
3 tablespoons coconut sugar
1 teaspoon pure vanilla extract
½ cup peanuts, finely chopped

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  • In a large bowl, whisk together all of the dry ingredients: oats, oat flour, flaxseed, cinnamon and salt.
  • In a medium bowl, whisk together the wet ingredients: coconut oil, peanut butter, maple syrup, coconut sugar and vanilla.
  • Pour the wet mixture over the dry mixture. Using a rubber spatula, stir and fold until well mixed. Fold in peanuts.
  • Using a medium cookie scoop, scoop and drop balls of cookie dough onto the prepared baking sheet, evenly spaced apart. Using a fork, flatten cookies to desired thickness. Cookies won't spread.
  • Bake for 12-15 minutes. Mine took 13 minutes. Place baking sheet on a cooling rack, allowing to cool for 10 minutes. Then, transfer cookies directly onto the rack to continue cooling completely before storing. Enjoy!

  • Preheat the oven to 350 degrees Fahrenheit. Line tw0 large, rimmed baking sheets with parchment paper or silicone mats for easy clean-up.

Steps:

  • Preheat the oven to 350 degrees F. and line a baking sheet with parchment paper or a baking mat.
  • In a large bowl (or the bowl of your stand mixer) beat together the butter, peanut butter, granulated sugar, and brown sugar, until the mixture is light and fluffy, about 5 minutes (using a hand mixer if you don't have a stand mixer is a good option.)

Steps:

  • Heat oven to 350 degrees. Line 2-3 baking sheets with parchment paper. Set aside.
  • In a medium-size bowl, whisk together oats, flour, salt, baking soda, and cinnamon.
  • To the bowl of a stand mixer, add the butter, peanut butter, white and brown sugars. Beat until creamy, about 2 minutes. Add the egg and vanilla and beat until blended.

½ cup smooth peanut butter ((130g) like Skippy or Peter Pan)
¼ cup granulated sugar ((55g))
¼ cup brown sugar, (firmly packed (55g))
1 large egg room temperature
½ teaspoon vanilla extract
½ cup all-purpose flour ((63g))
¾ teaspoon baking soda
⅛ teaspoon salt
1 ½ cups old-fashioned oats ((120g))
½ cup semi-sweet or dark chocolate chips ((80g))

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • In a large mixing bowl using an electric mixer beat the butter and peanut butter together until blended. Add the sugars and beat on medium-high speed until lightened and fluffy, about 3-5 minutes.
  • Blend in the egg and vanilla until incorporated. Scrape down the sides and bottom of the bowl with a spatula. Blend again.
  • In a small bowl whisk together the flour, baking soda and salt. Stir in the oats until combined. With the mixer on low add the dry ingredients until no streaks of flour remain scraping down the sides of the bowl as needed.
  • Fold in the chocolate chips.
  • Scoop out 2 tablespoons of dough and roll into a ball. Place 2-inches apart on the prepared baking sheet. Bake for 7 to 9 minutes or until lightly browned around the edges. Don't over-bake. The centers of the cookies may still seem a little wet. Cool on the pan for 5 minutes then remove to a cooling rack. Store in an airtight container at room temperature.

  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth, about 1 minute. Add the granulated sugar and brown sugar and beat on medium-high speed until creamed, about 2 minutes. Add the eggs, peanut butter, and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, add the oats. Once combined, beat in the chocolate chips. Dough will be thick and sticky. Cover and chill the dough for at least 20 minutes in the refrigerator (and up to 4 days). If chilling for longer than 1 hour, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
