PORTUGUESE BREAD FRENCH TOAST
One of the best uses for Portuguese bread is in baked French toast. Because the bread is so light it soaks up a lot of the batter and becomes too fragile to pan-fry. So...baking is the answer. Serve the French toast with maple syrup.

- Preheat the oven to 350 degrees F (175 degrees C).
- Whisk together the eggs, milk, sugar, cinnamon, nutmeg, and orange rind in a medium mixing bowl.
- Cut the bread into seven or eight slices, and lay them, overlapping, in a large baking dish.
- Pour the egg mixture over the bread, covering every slice. The bread should not be entirely submerged though; the higher parts should become toasted and crispy.
- Dot the bread with the butter. Bake the French toast in the oven for 35 to 45 minutes until the custard is set. Serve immediately.

- Whisk milk, eggs, vanilla extract, sugar, nutmeg, and salt together in a bowl.

My daughter and I went to stay at a Bed & Breakfast one time and we were served this for breakfast. It was simply divine! I had to try and copy it and I think it turned out pretty good. Great with a side of fresh fruit!

- 1. Mix together well: eggs, milk, vanilla, and cinnamon. You can add as little or as much cinnamon to the mixture to your liking. (if you're wanting to make a bigger batch and use the entire loaf, you will more than likely end up making more of this)
- 2. Pour into a cake pan. Slice your french bread into 2" slices. I did mine about an inch in this picture because I ended up having more company over than I expected so had to make sure I had enough for everyone.
- 3. Lay your bread into the egg mixture and allow the french bread to completely soak up the mixture, flipping over once, then sprinkle cinnamon atop. They will be heavy so you have to pick them up carefully so as not to rip them apart. Make sure they are completely saturated.
- 4. Spray your frying pan with Pam and allow it to heat up, placing your bread pieces in afterwards. Cook on each side approximately 2 or 3 minutes pending how high you have your flame, just enough to make the outside nice and toasty and enough time to allow the mixture to cook up on the inside.
- 5. Drop onto a place and pretty it up! I used spray butter and drizzled a line over them then added warm butter pecan syrup. Wait till you sink your teeth into them, so moist, tasty, and will leave you wanting more!

- Add the eggs to a large bowl. Whisk until well scrambled.*
- Add the milk, sugar, vanilla, and cinnamon. Whisk until well combined.
- If your mixing bowl isn't wide enough to fit a piece of bread, transfer the egg mixture to a shallow dish, such as a pie plate.
- Place a 12 inch skillet over medium-high heat for 2 minutes (a griddle would also work well for this). Then, reduce the heat to medium and add 1 tablespoon of butter.
- As the butter melts, use tongs to dip a piece of bread in the eggs to get it evenly coated in liquid and flip it over to coat both sides. Only let the bread soak in the eggs for about 2 seconds per side.** Let any excess liquid drip off of the bread, then place the bread in the skillet, fitting 3 pieces of bread in the skillet at a time.
- Cook until the bottom is golden brown, about 3 minutes. Use a spatula to flip the bread over and cook until the other side is golden brown, about 2 minutes.
- Repeat with the remaining butter and bread.
- Serve warm. Top with traditional french toast toppings like powdered sugar, maple syrup, fresh berries, etc.
