CRISPY ROASTED BRUSSELS SPROUTS

These Crispy Roasted Brussels Sprouts are pure perfection! Tender inside and the outside is lusciously caramelized for crispy edges. You can make them in the classic method, or use any of the 5 modifications below for a different popular flavor to match your meal. Pair them with meat, or almost any meal!

1 lb brussels sprouts
1 tbsp olive oil
1/2 tsp salt
1/2 tsp ground black pepper

Steps:

  • Preheat the oven to 425˚F.
  • Remove any yellow or brown leaves from the outside of the brussels sprouts then cut them in half.
  • Toss the brussels sprouts with olive oil, salt, and pepper until evenly coated. You can either do this in a bowl, or right on the sheet pan to save dishes.
  • Arrange brussels sprouts cut side down on the cookie sheet. Don't worry if leaves fall off. They get extra crispy and delicious in the oven.
  • Bake on the lower oven rack for 15-23 minutes or until the edges are browned and the center is tender. Cooking time will depend on how large the brussels sprouts are and how tender you like them. Leave them in less time for more crisp roasted brussels sprouts, and leave them in longer for more tender brussels sprouts with crispier outsides.

This is the ONLY way I can get the rest of my household to eat brussels sprouts (I think I am the ONLY one who loves these things). ;) Great for a quick work night side dish - easy and healthy too. Sometimes I add Johnny's Salad Elegance, but usually the straight-forward simple recipe does it best on this one for the kids.

8 ounces frozen Brussels sprouts
2 -3 ounces water
black pepper, to taste
4 ounces cheddar cheese, shredded (we prefer sharp)

Steps:

  • Place brussels sprouts in a medium microwave safe dish with a small amount of water to barely cover the bottom of dish (approx. 2-3 oz).
  • Cover with plastic wrap and microwave on high for 4 minutes (may vary depending on your microwave).
  • Vent carefully to avoid steam burn, sprinkle with pepper if desired and cheese then replace plastic wrap and heat again on high power for another 3 minutes or so until cheese is thoroughly melted.
  • Serve immediately and enjoy! ;).
