PERFECT SESAME CHICKEN
If you want the perfect sesame chicken recipe this is it! You may want to increase the vinegar or lower the amount of sugar. It all depends on how sweet you want the sauce.

Steps:
- Sift flour, 2 tablespoons cornstarch, baking soda, and baking powder into a bowl. Pour in low-sodium soy sauce, sherry, 2 tablespoons water, vegetable oil, and a dash of sesame oil; stir until smooth. Stir in chicken until coated with the batter, then cover, and refrigerate for 20 minutes.
- Meanwhile, bring chicken broth, sugar, vinegar, dark soy sauce, sesame oil, chile paste, and garlic to a boil in a saucepan over high heat. Dissolve 1/4 cup cornstarch into 1/2 cup of water, and stir into boiling sauce. Simmer until the sauce thickens and turns clear, about 2 minutes. Reduce heat to low, and keep sauce warm.
- Heat olive oil in a deep fryer or large saucepan to a temperature of 375 degrees F (190 degrees C).
- Drop in the battered chicken pieces, a few at a time, and fry until they turn golden brown and float to the top of the oil, 3 to 4 minutes. Drain on a paper towel lined plate. To serve, place fried chicken pieces onto a serving platter, and pour the hot sauce overtop. Sprinkle with toasted sesame seeds to garnish.

- Trim fat from chicken thighs. Place the thighs and the rest of the ingredients in a large bowl and mix thoroughly, making sure that chicken thighs are covered with oil and spices really well.
- Cover the bowl with a plastic wrap and refrigerate for at least 30 minutes. If you are in a rush, you may skip this step, but the chicken will be more flavorful if you let it marinate in oil and spices.
- Preheat a large skillet with a tablespoon of butter over medium-high heat. We find that a non-stick skillet works better if you are after a nice brown color but a cast iron or copper pan will work as well.
- Place the chicken thighs on the skillet, one at a time, making sure they are not folded and ensuring that they lay flat on the skillet. Sear chicken thighs for 1 minute or so per side, until nicely browned.
- Reduce heat to medium and continue cooking for another 4 minutes, flipping chicken thighs twice during the process.
- Reduce heat to medium-low, cover the skillet with a lid and continue cooking for another 3-4 minutes, until fully done (internal temperature 165 F).
- Serve with your favorite side dish. Sprinkle with chopped green onions and Italian parsley (optional).

- Start by seasoning chicken lightly with salt and pepper and place into crock pot.
- In a bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes.
- Pour over chicken.
- Cook on LOW for 4 hours or on HIGH 2 hours,
- or just until chicken is cooked through.
- Remove chicken from crock pot with a slotted spoon, leaving sauce behind.
- Dissolve 2 teaspoons of cornstarch in 3 tablespoons of water and pour into crock pot.
- Stir to combine with sauce. Replace lid and cook sauce on HIGH for ten more minutes until the sauce has thickened.
- Shred chicken with two forks and then return to pot and toss with sauce before serving.
- Sprinkle with sesame seeds and serve over rice, quinoa, noodles or MY favorite, spinach!

A few months ago I made this great sesame chicken that my mother and I loved.... problem was it was one of those dinners where I added a little of this... a little of that.... and could not for the life of me remember what on earth I put in it!! So after months of tinkering in the kitchen I FINALLY came up with the recipe last night, and wrote down all the ingredients!! Enjoy!

- Combine chicken ingredients except cornstarch and let marinate for at least 30 minutes in the fridge.
- Remove chicken from marinade and toss in cornstarch then cook chicken in hot oil on the stove top until cooked thru. Remove from pan and keep warm in oven while making the sauce.
- Combine all sauce ingredients EXCEPT cornstarch in a sauce pan and bring to a boil over med. heat.
- Mix cornstarch with a little water (about 1/4 cup) in a cup until disolved then slowly add to the sauce mixture on the stove and heat until thickened to you liking.
- Add chicken to sauce on the stove until heated thru.
- Remove and sprinkle with sesame seeds and green onions and finally enjoy!
FAVORITE SESAME CHICKEN
This is my version of a yummy Chinese take out we had once. The Cantonese sauce I use is my recipe #123655.

- Mix Cantonese sauce, soy sauce, packed brown sugar, 1-1/2 T sesame oil, and sesame seeds. Cook over medium heat until thick and bubbly. Taste at least once to adjust flavor. If to sweet add a bit more soy and to tangy, a bit more sugar.
- Set aside sauce.
- Cut the chicken into strips.
- Mix cornstarch and garlic.
- Dip chicken into egg and then cornstarch.
- Fry in 1/2 c vegetable oil and 3 T sesame oil till lightly brown and cooked through. Be carefully not to over cook because it will make the chicken tough.
- Drain chicken on paper towels and blot off any grease, and place in pan with sauce. Mix well, and serve over jasmine rice. Sprinkle chopped spring onions on top.
