Fall Pear Galette image

Try this French-style free-form tart recipe featuring caramel coated pears wrapped in Pillsbury™ pie crust - a fitting dessert to end a fall meal.

Provided by Pillsbury Kitchens

Categories     Dessert

Time 2h

Yield 8

Number Of Ingredients 8

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1/2 cup shredded sharp Cheddar cheese (2 oz)
5 ripe Bartlett or Anjou pears, peeled, cut into 1-inch slices
1 tablespoon lemon juice
1/8 teaspoon ground nutmeg
1/4 cup packed brown sugar
3 tablespoons all-purpose flour
1/3 cup granulated sugar

Steps:

  • Heat oven to 400°F. Line 15x10x1-inch pan with parchment paper or wax paper; spray paper with cooking spray.
  • Remove pie crust from pouch; unroll on lightly floured work surface. Roll into 11-inch round; place in pan. Sprinkle cheese over crust to within 1 inch of edge.
  • In large bowl, toss pears with lemon juice and nutmeg. Add brown sugar and flour; toss gently. Mound pear mixture on center of crust to within 2 inches of edge. Fold edge of crust over pears, pressing gently to seal (crust will not cover pears in center).
  • Bake 30 minutes or until crust is lightly browned (filling may leak slightly during baking). Remove galette from pan and cool on cooling rack.
  • In 1-quart heavy saucepan, heat granulated sugar over medium heat about 4 minutes, stirring frequently, until sugar is dissolved. Cook and stir 1 minute or until golden. Remove from heat; drizzle caramelized sugar over galette.

EASY PEAR TART OR GALETTE RECIPE

Easy Pear Tart or Galette Recipe image

This simple yet elegant pear tart cooks up beautifully in any shape tart pan, or you can make it free-form on a baking sheet.

Provided by Molly Watson

Categories     Dessert

Time 1h20m

Number Of Ingredients 4

1 pie crust
3 large, 4 medium, or 5 small pears
2/3 cup sugar, divided
1 tablespoon fresh lemon juice

Steps:

  • Gather the ingredients. Preheat oven to 350 F.
  • Line a 10-inch tart pan or pie with your favorite homemade or store-bought pie or tart crust. As you lay the crust into the pan, hold it up and let it drop and settle into any edges or corners, rather than pushing it in, to minimize shrinking and breaking when you bake the tart. Set aside. Alternatively, you can lay the rolled-out crust on a baking sheet for a free-form tart, often called a galette. Lightly prick the crust all over with a fork. Set aside.
  • Cut the pears in half or quarters. Cut out and discard the core in each piece. Peel the pear pieces and cut them into even slices. Even slicing will lead to the prettiest and most evenly cooked tart.
  • In a large bowl toss the pear slices with 1/3 cup of the sugar and the lemon juice . Arrange the pear slices on the crust-you can just dump them in and spread them out for a very rustic dessert, or arrange them in neat rows or concentric circles for a more elegant presentation. Reserve 4 or 5 slices of pear. Crimp the edges of the crust (see how to crimp a pie crust here if you've never done it before), or roll them up a bit to create an edge if you've decided to go free-form.
  • Bake the tart until the crust is brown on the edges and pears are tender, about 50 minutes.
  • While the tart bakes, bring the remaining 1/3 cup sugar, reserved pear slices, and 1/3 cup of water to a boil in a small saucepan. Reduce the heat to maintain a steady simmer and cook, undisturbed, until the syrup thickens, about 10 minutes. Set it aside.
  • While tart cools, brush it generously with the syrup. Serve the tart warm or at room temperature.

APPLE-PEAR GALETTE WITH APPLE CIDER CARAMEL

Apple-Pear Galette With Apple Cider Caramel image

A galette is the perfect dessert for anyone who thinks the crust-to-fruit ratio of the average pie is way off. In a galette, the fruit filling is thinner, so you have more flaky pastry to every bite. It also means a galette cooks a bit faster and can be sliced while warm, a boon for the impatient. Don't be alarmed if your galette leaks as they most often do. The final product never seems to suffer.

Categories     pies and tarts, dessert

Time 1h10m

Yield 8 servings

Number Of Ingredients 20

1 cup/130 grams all-purpose flour, plus more for the work surface
1/2 cup/60 grams whole-wheat flour
2 tablespoons granulated sugar
3/4 teaspoon kosher salt
10 tablespoons/140 grams cold unsalted butter (1 1/4 sticks), cut into pieces
4 tablespoons/60 milliliters ice water
1 large egg, lightly beaten, for brushing
Sanding sugar, for sprinkling (optional)
1 to 2 crisp apples, such as Pink Lady (12 ounces/340 grams), peeled, cored and very thinly sliced
1 to 2 just ripe Bartlett pears (12 ounces/340 grams), cored and very thinly sliced
1/3 cup/75 grams packed dark brown sugar
1 tablespoon cornstarch
3/4 teaspoon freshly grated lemon zest
1/4 teaspoon ground cinnamon
2 tablespoons unsalted butter, cut into pieces
2 cups/480 milliliters apple cider
1/3 cup/75 grams packed dark brown sugar
2 tablespoons unsalted butter
1/2 teaspoon kosher salt
2 tablespoons heavy cream

Steps:

  • In the bowl of a food processor, combine flours, sugar and salt. Add the butter and pulse until the mixture resembles coarse sand with some larger pieces. Add the ice water and pulse just until the mixture is evenly moistened. Tip the mixture out onto a piece of plastic wrap. Use the edges of the plastic to pack the dough into a disc. Wrap and refrigerate for at least 1 hour and up to 3 days.
  • Heat the oven to 400 degrees. In a large bowl, toss together apples, pears, sugar, cornstarch, lemon zest and cinnamon. On a lightly floured piece of parchment, roll the dough out into a 12-inch circle. Top the dough with the prepared fruit in concentric circles leaving a 1 1/2-inch border. Lift and press the edges up over the fruit, folding as necessary. Using the parchment paper, transfer the galette to a rimmed baking sheet. Chill for 10 minutes.
  • Brush the border of the pastry with the beaten egg and sprinkle with sanding sugar, if using. Dot the fruit with the butter. Bake until the filling is tender and the crust is deep golden brown, about 45 minutes. Some of the juices may leak out, but that's O.K.
  • Meanwhile, make the caramel: Bring apple cider to a boil over medium-high heat in a small saucepan. Continue to cook the cider until it has reduced to 1 cup liquid, about 13 to 14 minutes. Then add brown sugar, butter, and salt and stir to combine. Reduce heat to maintain a simmer, and continue to cook the mixture, whisking often, until it has become syrupy and thickened slightly, about 13 to 15 minutes. Whisk in the cream and set aside to cool slightly. (The caramel will thicken as it cools.)
  • Remove tart from the oven, and let it cool slightly on the pan on a rack. Transfer the galette to a serving plate and drizzle with caramel. Serve warm or at room temperature with any remaining caramel.

FALL FRUIT GALETTE

Fall Fruit Galette image

Our favorite apples for baking are Pink Lady, Honeycrisp, and Granny Smith; they hold their shape well and don't turn mushy when cooked. This would also be excellent made with Comice or Bartlett pears.

Provided by Carla Lalli Music

Categories     Bon Appétit     Dessert     Fall     Tart     Pastry     Apple     Pear

Yield 8 servings

Number Of Ingredients 11

2 tsp. fennel seeds (optional)
1 tsp. kosher salt
1/3 cup sugar, plus more for sprinkling
2 lb. apples (such as Pink Lady, Honeycrisp, or Granny Smith), scrubbed, cored, thinly sliced
1 Tbsp. apple cider vinegar
1 tsp. vanilla extract
Extra-Flaky Pastry Dough
1 Tbsp. heavy cream
Softly whipped cream or vanilla ice cream (for serving; optional)
Special Equipment:
A spice mill or mortar and pestle

Steps:

  • Preheat oven to 400°F. Toast fennel seeds (if using) in a small dry skillet over medium-high heat until golden brown and fragrant, about 3 minutes. Let cool, then finely grind in spice mill or with mortar and pestle. Transfer to a medium bowl and add salt and 1/3 cup sugar. Toss with your hands to combine, then add apples and toss to coat. Add vinegar and vanilla; toss gently.
  • Arrange apple mixture in the center of chilled dough (still on parchment on baking sheet) and spread out evenly, overlapping slices if desired and leaving a 3" border. Fold edges of dough up and over fruit, pleating as needed and being careful that folded edge of dough doesn't tear (if it does, patch with dough scraps and pinch to seal). Pour cream into a small bowl and brush all over dough. Sprinkle sugar evenly over dough.
  • Place galette in oven and immediately reduce heat to 375°F. Bake, rotating halfway through, until crust is deep golden brown everywhere, apples are softened, and juices are bubbling, 45-50 minutes. Let galette cool 2 hours.
  • Serve galette with whipped cream or ice cream if desired.

PEAR GALETTE

Pear Galette image

As delicious and impressive as pie, but half the work! This homemade pear galette is the easiest fall dessert.

Provided by Kim

Categories     Dessert

Time 1h5m

Number Of Ingredients 12

1 refrigerated pie crust dough (I prefer Pillsbury brand*)
3-4 slightly firm but ripe Bartlett or Anjou pears (peeled, cut into thin slices, lengthwise)
1/4 cup granulated sugar
2 tablespoons flour or cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
1 tablespoon lemon juice
1/2 teaspoon lemon zest
1/2 tablespoon butter (cold and cut into 4 pieces)
1 egg (beaten)
Coarse turbinado sugar or granulated sugar (for sprinkling)

Steps:

  • Line a rimmed baking sheet with parchment or a silicone mat and spray with cooking spray. Set aside.
  • Remove the dough from the refrigerator and let stand for 15 minutes. Place the dough between 2 sheets of lightly floured waxed paper and roll out into an 11-inch circle. Brush off the excess flour. Transfer the dough to the prepared baking sheet, cover with plastic wrap and refrigerate for 15-30 minutes.
  • Meanwhile, preheat oven to 400 degrees F.
  • In a large bowl, stir together the pears, sugar, flour, cinnamon, ground ginger, salt, lemon juice and zest. Gently toss the pears to coat.
  • Arrange the pear filling in the center of the dough, mounding the fruit slightly and leaving a 2-inch border. You can arrange the pears in a spoke pattern or keep it rustic. Gently fold the edges of the dough (outer 2 inches) over the pears, overlapping where necessary and pressing gently. It doesn't have to be perfect. Dot the cold butter onto the top of the pear filling. Brush the dough with the beaten egg (you won't need all of the egg). Lightly sprinkle sugar over the pears and on the crust.
  • Bake at 400 degrees F. for about 20 minutes or until crust is golden brown. Transfer the baking sheet to a wire rack to cool for at least 20 minutes. Serve warm or at room temperature. Best served with vanilla ice cream or whipped cream. Enjoy!

  • In a food processor, pulse together the brown rice flour, all-purpose flour, arrowroot flour, and salt to blend.
  • Add the butter pieces and pulse a few times, until the butter is the size of peas and the ingredients start to clump and hold together.
  • In a small bowl, whisk together the egg yolks and 3 tablespoons of ice water with a fork until smooth. Add the egg mixture to the dough slowly while pulsing until the dough forms a ball. Do not over mix; stop as soon as it begins to clump and there is nearly no flour left. Add more ice water only if needed (you might need more at higher elevations or lower humidity). You need enough moisture to prevent cracking, so add water until the dough is slightly sticky.
  • Transfer the dough to a lightly floured surface. Work it gently into a ball then flatten into a 1-inch disk. Wrap in plastic and chill in the fridge for 20-30 minutes.

  • Whisk sugar, salt, and 1⅓ cups flour in a medium bowl. Cut butter into 6 rectangular pieces (if using ½-cup sticks, cut them in half crosswise, then in half again lengthwise). Toss butter in dry ingredients to coat, then dump mixture out onto a work surface. Most recipes start by pulverizing fat into small bits, but here you’ll use a rolling pin to flatten flour-coated butter into sheets that will puff into layers when baked.
  • Roll butter into flour until it is in long flexible strips, using a bench scraper to scrape butter off rolling pin or surface as needed.
  • Using your hands and the bench scraper, toss mixture until water is distributed, then gather into a rectangular pile.

  • Place walnuts in a food processor and pulse repeatedly, until ground, like course sand. Add flour, sugar, salt and pulse. Cut butter into 8-10 pieces and pulse repeatedly, again to consistency of course sand. Add the cold water a tablespoon at a time, pulsing until dough clumps and forms a ball. You may need to add another tablespoon -check dough by pinching it together. If it feels crumbly add another tablespoon water, if it sticks together well, it is fine. Place on a floured surface, gather into a ball, flatten with the palm of your hand, gather again into a ball, flatten again. Form into a ball, flatten to an inch thick disk and refrigerate 2 hours or overnight. This will allow the flour to hydrate.
  • Cut the pears in half lengthwise, scoop out the seeds with a melon baller. Slice into ⅓ inch slices. Toss with sugar, spices, vanilla and lemon, zest, salt and flour. Let stand until the pears release their liquid and the sugar dissolves, about 15 minutes.
