This easy to make Autumn Apple Salad is loaded up with crispy bacon, crunchy pecan halves, crumbled feta, and sweet dried cranberries. All drizzled with a homemade Maple Dijon Vinaigrette. This salad comes together in less than 15 minutes and is a perfect side dish or light lunch.

¼ cup dried cranberries
¼ cup pecans (halved)
2 tbsp feta cheese
½ granny smith apple (sliced)
½ fuji apple (sliced)
2 slices bacon (cooked and chopped)
2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tbsp maple syrup
1½ tsp dijon mustard
salt & pepper to taste

Steps:

  • Make Dressing: Add all the ingredients for the maple dijon vinaigrette to a small mason jar. Shake to mix.
  • Layer Salad: Add the spinach to a medium size bowl or plate.
  • Top with dried cranberries, halved pecans, feta cheese, sliced apples, and cooked bacon.
  • Dress and Toss: Drizzle the salad dressing over the top of the salad, toss and serve.

2 (5 ounce) skinless, boneless chicken breast halves
salt and ground black pepper to taste
1 tablespoon olive oil
1 (8 ounce) package mixed salad greens, or to taste
2 medium Fuji apples - peeled, cored, and chopped
½ cup dried cranberries
½ cup glazed pecans
¼ cup shredded Parmesan cheese
3 medium green onions, thinly sliced
½ cup balsamic vinaigrette salad dressing, or to taste

Steps:

  • Season chicken with salt and pepper.
  • Heat a skillet over medium heat. Add olive oil when the pan is hot. Add chicken and cook until no longer pink in the centers and juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow chicken to rest for 10 minutes, then slice into strips.
  • Toss salad greens, apples, cranberries, pecans, Parmesan cheese, and green onions together in a large bowl until well blended. Top with chicken and serve with balsamic vinaigrette dressing.

You can easily leave out the chicken to make it a side salad for a meal. I also have successfully made this with pears.

1/8 cup apple cider vinegar
6 teaspoons pure maple syrup
4 teaspoons Dijon mustard
1 tablespoon finely chopped fresh parsley
1 pinch salt
1/4 teaspoon cracked black pepper
1/2 cup good quality olive oil
100 g mixed salad salad leaves
1 carrot, julienned o.r ribboned
16 cherry tomatoes, cut in halves
1 small red onion, thinly sliced
1 lebanese cucumber, sliced
3 cooked chicken breasts, cut into thin slices
4 hard-boiled eggs, sliced into quarters lengthways
20 olives, seeds removed (olive of your preference)
4 teaspoons capers
20 pecans
mixed sprouts, optional as salad topper
shaved parmesan cheese, optional as salad topper

Steps:

  • For the vinaigrette- combine the cider vinegar, maple syrup, Dijon mustard, parsley, salt and pepper. Whisk to combine and then whisk in the oil. Set aside.
  • Arrange the salad leaves in 4 bowls or on dinner plates.
  • Top the salad leaves with the carrots, tomatoes,onion slices and the cucumber slices. Distribute evenly over the salads.
  • If your preference is cold chicken in your salad, leave as is. I like to either use warm chicken or warm it in the microwave.
  • Arrange the chicken over the 4 salad bowls.
  • Next add 5 olives, 1 hard boiled egg and 1 teaspoon of capers to each salad.
  • Crumble the pecans with your hands and distribute evenly over the top of the 4 salads.
  • Whisk the vinaigrette before pouring some over each salad.
  • Optional-can top salad with some snow pea sprouts (or sprouts of your choice) and a little shaved parmesan cheese if desired.

2 boneless, skinless chicken breasts
2 tbsp cajun spice mix
1/4 cup extra-virgin olive oil
2 tbsp apple cider vinegar
2 tbsp maple syrup
2 tsp Dijon mustard
2 tsp grainy old-fashioned mustard
1 small shallot, finely minced
1 clove garlic, pressed
Salt and pepper
4 cups mixed salad greens
2 small apples, cored and sliced
1/4 cup mixed fruit and nut trail mix
1/4 cup crumbled goat cheese (optional)

Steps:

  • Set up the Griddler with the ridged side of the plates facing out and preheat to High.
  • Meanwhile, butterfly each of the chicken breasts by slicing through it horizontally almost but not all the way through, then open up like a book. Sprinkle each breast on both sides with cajun seasoning.
  • Once the Griddler is preheated, arrange the chicken breasts on the bottom plate. Close the lid, and cook for 5-7 minutes, or until the chicken breasts are cooked all the way through. Let cool for a minute or two, then cut into thin strips.
  • Next, make the vinaigrette by whisking together all the ingredients in a small bowl.
  • To assemble the salads, combine the greens and sliced apple in a large bowl, and toss with a few tablespoons of vinaigrette until evenly coated. Divide the salad between two plates, then top each one with trail mix, crumbled goat cheese and sliced chicken. Serve right away and enjoy.
