Steps:
- Chop the ingredients. In a food processor, pulse the parsley, cilantro, garlic, and red onion about 10 to 15 times or until well chopped. Add the cumin, salt, pepper, lemon juice, and chickpeas and repeat until minced.
- Make the burger mix. Either in the food processor or in a bowl, combine the ground turkey with the minced falafel ingredients.
- Make the patties. Divide the mix into 6 equal portions in a rough ball shape (5 1/2-ounce patties.) Place between two pieces of parchment paper and press down with a plate or saute pan until the patties are 1/2-inch to 3/4-inch thick. You can also form the patties by hand without parchment paper and jut wetting your hands with a little water to keep the mix from sticking to your hands.
- Grill the falafel burgers. Over medium-high heat, grill the burgers 5 minutes on each side until cooked through. When the burgers are about half-way done cooking on the second side top with any cheese.
- Assemble. Stack the cooked burgers on toasted whole wheat buns, feta cheese, tzatziki sauce, and pickled onions.

Steps:
- Toast the coriander seeds and cumin seeds in a skillet over medium heat until lightly browned and fragrant, then coarsely grind in a spice grinder.
- In a food processor, combine the cumin, coriander, soaked chickpeas, onion, garlic, cilantro, parsley, baking soda, cinnamon, salt, a few turns of black pepper, the crushed red pepper, flour, and lemon juice and pulse quickly, 80 to 100 times, until the mixture is combined, but still slightly grainy.
- In a large skillet, heat 1/4 inch oil over medium-high heat until shimmering but not smoking. Fry a 1-tablespoon test patty until golden and then taste it. Adjust the seasonings in the mixture as desired. Form balls of falafel mixture, 3 tablespoons each, packing them firmly and then flattening them slightly. Fry on all sides until golden brown. Transfer to a paper towel.

Steps:
- Preheat the oven to 200 degrees F to keep the first batch of burgers warm.
- For the burgers: Coat a large saute pan with olive oil. Add the onions, season with salt and bring to a medium-high heat. Cook the onions until they are soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for 1 to 2 minutes. Turn off the heat and let cool.
- In a large mixing bowl, combine the turkey, soy sauce, sambal oelek, ginger, water chestnuts, cilantro and the cooked onions and garlic. (Reserve the onion pan to cook the burgers in later.) Add one-quarter to one-half cup water; this will help the burgers stay nice and moist. Using your hands, squish everything together until they are really well combined.
- Make and cook a little tester patty to be sure that the turkey is really well seasoned. Re-season if needed. If the burger is missing salt add more soy or just give a little sprinkey dink of salt.
- When the burger mix is seasoned appropriately, form the mix into 4 equal size patties.
- Coat the saute pan with new olive oil and bring to a medium-high heat. Place the burgers in the pan. Be sure not to crowd the pan, if you need to work in batches go ahead! Cook the burgers for 5 to 6 minutes on each side. Place the cheese, if using, on the burger and cook for 1 more minute.
- Toast the buns in a broiler or toaster. Schmear each side of the bun lightly with the sambaal mayo. Put a burger on each of the bottom buns and top each burger with tomato, onion and lettuce. Close up each burger, give each one a little squish and eat em' up!
