MOCK CHICKEN FRIED STEAK
I'm not sure where my mom got this recipe, but she used to make it at least once a month. Although she never served it with gravy, I think peppered gravy would go great with this.

Steps:
- In a medium bowl, mix together the ground beef, parsley, chili powder, salt, egg, and 1 cup of crushed saltine crackers. Form into 6 balls, then flatten into patties. Coat patties with remaining cracker crumbs, and place them on a plate. Refrigerate for at least 30 minutes.
- Heat the oil in a large skillet over medium heat. Fry patties for about 7 minutes per side, or until the centers are well done and the outside is golden brown.

BAKED STEAK
A nice change to broiling or grilling, the gravy is delicious. I always serve this with mashed potatoes.

Steps:
- Preheat oven to 375°F.
- Pound steak to tenderize.
- Dredge both sides in flour, salt and pepper.
- In heavy oven proof skillet heat oil, add steak and brown on both sides, remove add stock, bring to boil, scraping bits off pan.
- Add Worcestershire sauce, more salt and pepper to taste; remove from heat.
- Layer half the onions in pan, add steak, layer rest of onions, broth, spoon some broth on top.
- Bake for 2 hours, covered, basting steak after 1 hour.
- Remove to cutting board and slice.
- Serve with the gravy.

- In a large bowl, combine 1-3/4 cups milk, bread crumbs, onions, salt and pepper. Crumble beef over mixture and mix well. Shape into 24 oval patties, about 4x2-1/2 in. Place in two greased 15x10x1-in. baking pans. Cover and refrigerate for 8 hours or overnight., Bake, uncovered, at 350° for 15 minutes; drain. Combine soup and remaining milk; pour over patties. Cover and bake 20-30 minutes longer or until meat is no longer pink and a thermometer reads 160°.

VEGAN STEAK
Steps:
- Add the chickpeas, nutritional yeast, garlic powder, onion powder, cumin, coriander powder, oregano, soy sauce, tomato paste, paprika, black pepper, dijon mustard, liquid smoke and vegetable stock to the food processor and process until well mixed.
- Transfer to a mixing bowl and add the vital wheat gluten. Stir in with a spoon briefly and then get in there with your hands, mixing it into a dough. Knead the dough for around 2 minutes, you want it to go from sticky and soft to firm and stretchy, so that when you pull it, it snaps back into place. See our full post for lots more info on kneading. Make sure you don't over-knead it because that will cause your steaks to become very tough.
- As soon as you have a firm, stretchy texture, flatten it out and cut it into 4 roughly equal sized steaks. Use a potato masher to bash the steaks down a bit to flatten, but don't do this too much as it counts as kneading, and you don't want to overdo it.
- Wrap the steaks individually in tinfoil and then steam them for 20 minutes. Don't wrap them too tight as they will expand while steaming. You can steam them in a steamer basket over a pot of boiling water, or in any steamer that you have.
- While the steaks are steaming, prepare your marinade sauce by adding all the ingredients to a bowl and whisking them together. Let it sit for a little while and then whisk again. You want it to be nice and smooth and it can take a couple of minutes for the brown sugar to dissolve properly.
- After steaming for 20 minutes, unwrap the steaks from their tinfoil and place into a square dish. Pour over the marinade sauce and use a brush to make sure the steaks are properly covered. Turn them over in the sauce a few times.
- Heat a pan with a little olive oil (or other oil, 1 Tbsp is fine) and then fry the steaks (I found they all fitted into the same pan) flipping them regularly and brushing more marinade sauce on them every time you flip them, until they are nicely browned and caramelized.
- Serve with a side salad, baked potatoes with vegan sour cream, and if you like sauces with your steaks, then a creamy mushroom sauce goes wonderfully with this!

Don't let the time scare you. This is an easy, simple and good recipe for using hamburger, or any ground meat. This is good to mix one day and bake the next. Goes well with noodles, rice or mashed potatoes.

- In a large bowl, mix together the ground beef, saltine crackers and milk. Season with garlic powder, onion powder, salt and pepper, and mix until well blended. Line a 10x15 inch jellyroll pan with waxed paper. Press the beef mixture firmly into the pan. Cover with plastic wrap, and refrigerate 8 to 10 hours, or overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Remove plastic wrap from meat, and rub flour over the top side of the beef. Flip out of the pan onto waxed paper, and rub flour on the other side as well. Cut into pieces (I use a pizza cutter).
- Heat oil in a large heavy skillet over medium-high heat. Fry the meat until browned on each side, turning only once. Remove to a 9x13 inch baking dish. In a medium bowl, mix together the water, condensed soup, and gravy mix. Pour over the meat in the dish. Cover the dish loosely with aluminum foil.
- Bake for 1 hour in the preheated oven. Serve patties and gravy with potatoes, rice, or noodles.

- For Broth:
- Combine all ingredients in a large stock pot. Bring to a boil and let simmer 15 minutes prior to adding steaks.
- For Steaks:
- In a blender, combine first six ingredients. Process approximately 1 - 2 minutes - until smooth. Pour into mixing bowl. Using the dough hook, add gluten flour and process 3 - 4 minutes until smooth and forms into a rubbery ball. Remove dough and divide into two parts. Shape each part into a log shape approximately two inches around. Slice each log into 1/4 inch slices. Drop steak slices into boiling broth. When all steak slices are in the broth, turn heat down to a slow simmer and cook approximately 1 - 2 hours. Steak pieces will almost double in size and become lighter in color. Remove from broth and use in any recipe asking for gluten steaks or grind steaks and use in place of burger. Enjoy!
- Brenda Walsh, one of the sisters, says she likes to use this recipe for so many things, such as placing the steaks on a baking sheet sprayed with non-stick cooking spray and baking for 30 minutes. This changes the texture to a slightly more "chewy" consistency. Then placing them in a baking dish and pouring mushroom soup over them and baking for 1 hour. Delicious and easy! She also likes to make "steak" sandwiches with them. Try frying these with onions, placing them in a baking dish, pouring canned tomatoes over them and baking for one hour.
