Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. In a greased 2-1/2-qt. baking dish, layer a third of the spaghetti sauce, half of the ravioli and beef, and 1/2 cup cheese; repeat layers. Top with remaining sauce and cheese., Cover and bake at 400° until heated through, 40-45 minutes. If desired, top with basil to serve.

Prepare this easy lasagne ahead of time and save in the freezer, uncooked, for when you need it during a busy week. Then just bake for an extra 45 mins.

2 tbsp olive oil, plus a little for the dish
750g lean beef mince
90g pack prosciutto
half quantity of our tomato sauce
200ml hot beef stock
a little grated nutmeg
300g pack fresh lasagne sheets
half quantity of our white sauce
125g ball mozzarella, torn into thin strips

Steps:

  • To make the meat sauce, heat 2 tbsp olive oil in a frying pan and cook 750g lean beef mince in two batches for about 10 mins until browned all over.
  • Finely chop 4 slices of prosciutto from a 90g pack, then stir through the meat mixture.
  • Pour over 800g passata or half our basic tomato sauce recipe and 200ml hot beef stock. Add a little grated nutmeg, then season.
  • Bring up to the boil, then simmer for 30 mins until the sauce looks rich.
  • Heat oven to 180C/fan/160C/gas 4 and lightly oil an ovenproof dish (about 30 x 20cm).
  • Spoon one third of the meat sauce into the dish, then cover with some fresh lasagne sheets from a 300g pack. Drizzle over roughly 130g ready-made or homemade white sauce.
  • Repeat until you have 3 layers of pasta. Cover with the remaining 390g white sauce, making sure you can't see any pasta poking through.
  • Scatter 125g torn mozzarella over the top.
  • Arrange the rest of the prosciutto on top. Bake for 45 mins until the top is bubbling and lightly browned.

1 large white onion (diced)
5 cloves garlic (minced)
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
1 (15 ounce) can tomato sauce
1/2 cup white wine
2 tablespoons white sugar
1/2 cup chopped fresh basil
1 teaspoon fennel seeds
1 teaspoon ground oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup chopped fresh parsley
1 pound lasagna noodles
30 ounces ricotta cheese
2 tablespoons chopped fresh parsley
1 large egg
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1 pound thinly sliced mozzarella cheese (about 24 slices)
1 cup freshly grated Parmesan cheese

Steps:

  • In a large pot over medium heat, add in ground sausage and ground beef. Use a spoon to break up the meat into small pieces. Add in onion and garlic and cook until meat is well browned, stirring constantly. Stir in sugar, fresh basil, fennel, oregano, 1/2 teaspoon salt, pepper, and 1/4 cup chopped parsley. Pour in crushed tomatoes, tomato paste, tomato sauce, and wine*. Stir well and bring to a simmer. Reduce heat to low and simmer 1-4 hours, stirring occasionally.
  • Meanwhile, place lasagna noodles into the bottom of a pan. Pour hot tap water directly over the noodles, making sure the pasta is completely immersed in the water. Let them soak for 30 minutes, then drain and discard water.
  • In a mixing bowl, combine ricotta cheese with egg, remaining 2 tablespoons parsley, 1/2 teaspoon salt, and nutmeg. Refrigerate until ready to assemble lasagna.
  • Preheat oven to 375 degrees. Lightly grease a deep 9x13 pan.
  • To assemble, spread about 1 cup of meat sauce in the bottom of the prepared pan. Place 4 noodles on top. Spread with 1/3 of the ricotta cheese mixture. Top with 1/4 of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, then sprinkle with 1/4 cup parmesan cheese. Repeat layering two more times to create three complete layers. To finish, place a final layer of pasta, topped with another 1 cup of meat sauce to cover the pasta. Top with remaining mozzarella and Parmesan cheese. Cover loosely with aluminum foil.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes to allow cheese to brown. Serve hot.

½ pound ground pork
½ pound lean ground beef
1 (8 ounce) can tomato sauce

Steps:

  • Preheat the oven to 350 degrees F and spray a 9X13 pan with a non-stick cooking spray.
  • Brown ground beef and onion until cooked. While the meat is cooking, boil the noodles according to package directions until al dente.
  • Mix crushed tomatoes, garlic, Italian seasoning, salt and pepper in with the meat mixture..
  • Reserve half of mozzarella cheese aside to sprinkle on the top of the casserole.
  • Combine the rest of the mozzarella cheese, ricotta cheese, beaten eggs together in a large bowl.

  • Place half of the pasta on the bottom of the 9X13 pan. Then place half of the meat mixture on top of the pasta.

Which is the better comfort food: lasagna or cake? You don't have to choose! For this lasagna look-alike, we layered pound cake, pureed berries and sweetened ricotta in a baking dish, then we topped the whole thing with melted white chocolate to look like mozzarella. And we popped it under the broiler to give it that just-baked look. When you cut into it, it's messy and delicious - just like the real thing!

2 16-ounce frozen pound cakes, slightly thawed
3 cups frozen mixed raspberries, strawberries and cherries, slightly thawed
1/4 cup confectioners' sugar
4 to 5 drops liquid yellow food coloring
1/4 cup heavy cream
3/4 cup ricotta cheese
1 4-ounce bar white chocolate, chopped
Chopped fresh mint, for topping

Steps:

  • Turn the pound cakes on their sides and thinly slice with a long serrated knife. You should get 4 or 5 lasagna noodle-size pieces from each cake.
  • Make the sauce: Combine the berries and 2 tablespoons confectioners' sugar in a bowl and puree with an immersion blender until mostly smooth. Stir in the yellow food coloring.
  • Whisk the heavy cream with the remaining 2 tablespoons confectioners' sugar in a bowl until soft peaks form. Fold in the ricotta.
  • Arrange a layer of cake in a 9-by-13-inch baking dish, trimming the pieces to fit. Spread one-third of the berry mixture on top.
  • Dollop some of the ricotta mixture on top.
  • Gently spread the ricotta mixture, then continue to cover the whole cake (you should use about half of the mixture).
  • Top with another layer of pound cake, then a layer each of berry sauce and ricotta and a final layer of pound cake. Spread with the remaining berry sauce.
  • Microwave the white chocolate in a microwave-safe bowl in 20-second intervals, stirring, until melted. Spoon over the cake and gently spread.
  • Broil until the white chocolate is golden in spots, or lightly brown the top with a kitchen torch. Top with mint.

Two large jars of your favorite sauce, or the equivalent amount of your own sauce

  • a. Mix half of your sauce (one jar) with 1/2 cup water, and pour it on the bottom of a deep baking pan. b. On top of sauce, place one dense layer of frozen cheese ravioli. c. On top of that, spread half of your shredded mozzarella. d. On top of that, place another dense layer of the remaining frozen cheese ravioli. (Freeze any extras you don't need.) e. Mix the rest of your sauce (one jar) with 1/2 cup water. Pour on top, making sure to cover all ravioli. f. Cover loosely with foil and bake at 350 degrees for 35-40 minutes (bubbly). g. Remove foil, top with remaining mozzarella, and bake uncovered until golden (15 minutes). h. Let sit for 10 minutes before serving -- will slice like lasagna. Enjoy!

  • Combine all the ingredients for the crepes and mix well.Let the mixture rest for 15 minutes, and if mixture is too thick add a tablespoon more milk.

  • In the same pan over high heat cook the mushrooms with the remaining olive oil and the thyme until browned.Add the onion and the leek and cook until translucent and soft.Add the eggplant, pour in the white wine and cook until evaporated.Add the tomatoes and reduce heat to a gentle simmer.Simmer for 15-20 or until most of the liquids have evaporated and the sauce has thickend.Remove from heat and add the basil, olives and feta cheese.   • Make the sauce: Combine the berries and 2 tablespoons confectioners’ sugar in a bowl and puree with an immersion blender until mostly smooth.
  • Whisk the heavy cream with the remaining 2 tablespoons confectioners’ sugar in a bowl until soft peaks form. Fold in the ricotta.
  • Arrange a layer of cake in a 9-by-13-inch baking dish, trimming the pieces to fit. Spread one-third of the berry mixture on top.
  • Gently spread the ricotta mixture, then continue to cover the whole cake (you should use about half of the mixture).
  • Top with another layer of pound cake, then a layer each of berry sauce and ricotta and a final layer of pound cake. Spread with the remaining berry sauce.
  • Microwave the white chocolate in a microwave-safe bowl in 20-second intervals, stirring, until melted. Spoon over the cake and gently spread.
