4 tablespoons canola oil, divided
2 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1-1/2 teaspoons dried oregano
1-1/2 teaspoons ground cumin
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon crushed red pepper flakes, optional
1-1/2 pounds boneless skinless chicken breasts, cut into thin strips
1/2 medium sweet red pepper, julienned
1/2 medium green pepper, julienned
4 green onions, thinly sliced
1/2 cup chopped onion
6 flour tortillas (8 inches), warmed
Optional: Shredded cheddar cheese, taco sauce, salsa, guacamole, sliced red onions and sour cream

Steps:

  • In a large bowl, combine 2 tablespoons oil, lemon juice and seasonings; add the chicken. Turn to coat; cover. Refrigerate for 1-4 hours. , In a large cast-iron or other heavy skillet, saute peppers and onions in remaining oil until crisp-tender. Remove and keep warm. , Drain chicken, discarding marinade. In the same skillet, cook chicken over medium-high heat until no longer pink, 5-6 minutes. Return pepper mixture to pan; heat through. , Spoon filling down the center of tortillas; fold in half. Serve with toppings as desired.

1 tablespoon vegetable oil
1 green bell pepper, cut into strips
1 medium onion, sliced
1 cup sliced fresh baby portabella mushrooms (3 oz)
1 package (1 oz) Old El Paso™ fajita seasoning mix
2 cups shredded deli rotisserie chicken (from 2-lb chicken)
2 cups shredded Mexican cheese blend (8 oz)
3/4 cup refrigerated white cheese dip
1 package (8.2 oz) Old El Paso™ flour tortillas for soft tacos & fajitas (10 tortillas; 6 inch)

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread 1/4 cup of the enchilada sauce in baking dish.
  • In grill pan or cast-iron skillet, heat oil over medium-high heat. Cook bell pepper, onion and mushrooms in oil 7 to 8 minutes, stirring occasionally, until tender and lightly browned.
  • In large bowl, stir together cooked vegetables, fajita seasoning, chicken, 1 cup of the cheese and the cheese dip. Spoon heaping 1/3 cup filling onto each tortilla. Roll up tortilla tightly; place seam side down in baking dish. Drizzle with remaining enchilada sauce. Sprinkle with remaining 1 cup cheese.
  • Cover with foil; bake 15 minutes. Uncover; bake 15 to 20 minutes longer or until bubbly and lightly browned.

4 oz. cream cheese
1 bell pepper
flour tortillas
shredded cheese

Steps:

  • Heat oven up to 350. In a medium-sized pan melt the butter, add the sour cream, and saute the chicken and bell pepper on medium heat for 5 minutes.
  • Once the bell peppers have softened up, add in the cream cheese and stir until all is well mixed together.
  • Use cooking spray to prepare your baking dish. Take a flour tortilla, add in the chicken and cheese sauce and roll. Place in the dish and use a toothpick to keep close if needed. Continue to roll remaining chicken mixture and tortillas. Top with shredded cheese.
  • Bake for 10 minutes, or until cheese is melted. Remove toothpicks before serving.

2 bone-in chicken breast halves
2 cups chicken broth
¼ white onion
1 clove garlic
2 teaspoons salt
1 pound fresh tomatillos, husks removed
5 serrano peppers
¼ white onion
1 clove garlic
1 pinch salt
12 corn tortillas
¼ cup vegetable oil
1 cup crumbled queso fresco
½ white onion, chopped
1 bunch fresh cilantro, chopped

Steps:

  • In a saucepan, combine chicken breast with chicken broth, one quarter onion, a clove of garlic, and 2 teaspoons salt. Bring to a boil, and then boil for 20 minutes. Reserve broth, set chicken aside to cool, and discard onion and garlic. When cool enough to handle, shred chicken with your hands.
  • Place tomatillos and serrano chiles in a pot with water, enough to cover them. Bring to boil, and continue boiling until tomatillos turn a different shade of green (from bright green to a dull, army green). Strain tomatillos and chiles, and place in a blender with another quarter piece of onion, 1 clove garlic, and a pinch of salt. Pour in reserved chicken broth, so that liquid just covers the veggies in the blender by about an inch. Blend all ingredients until they are completely pureed. Pour salsa in a medium saucepan, and bring to a low boil.
  • Pour oil in a frying pan, and allow to get very hot. Slightly fry tortillas one by one in hot oil, setting each on a paper towel afterwards to soak some of the oil. Finally, dip slightly fried tortillas in low-boiling green salsa, until tortillas become soft again. Place on plates, 3 per person.
  • Fill or top tortillas with shredded chicken, then extra green sauce. Top with crumbled cheese, chopped onion, and chopped cilantro.

It is a tasty dish we have served to our meat-eating friends and family with rave reviews. The 'cheese' sauce could be substituted for real cheese. Use your choice of red, yellow, green, or orange bell peppers, and black beans, kidney beans, or pinto beans.

½ zucchini, cut into 1/4-inch slices
1 cup red bell pepper slices
1 onion, cut into 1/4-inch slices and separated into rings
1 cup water
1 teaspoon vegetable oil
1 (1.27 ounce) packet dry fajita seasoning
½ cup all-purpose flour
½ cup nutritional yeast
1 teaspoon salt
1 ½ teaspoons garlic powder
½ teaspoon dry mustard powder
2 cups water
¼ cup margarine
2 (10 ounce) cans red enchilada sauce
5 (9 inch) whole-wheat tortillas, torn into 1-inch pieces
1 ½ cups cooked brown rice
3 (15 ounce) cans black beans, rinsed and drained
1 tablespoon sliced black olives
¼ avocado - peeled, pitted and diced
2 tablespoons chopped tomato
1 jalapeno pepper, seeded and thinly sliced
2 tablespoons chopped onion
2 tablespoons prepared salsa
2 tablespoons sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place zucchini, red bell pepper, and 1 onion sliced into rings into a bowl; stir in 1 cup water, vegetable oil, and dry fajita seasoning. (Mixture can be left to marinate 1 to 2 hours, if desired.) Drain vegetables.
  • Heat vegetables in a large skillet over medium heat. Cook and stir until soft and slightly browned, about 10 minutes; transfer to a bowl and set aside.
  • Place flour, nutritional yeast, salt, garlic powder, and dry mustard powder into a saucepan and whisk in 2 cups water until thoroughly combined.
  • Place saucepan over medium heat and bring the mixture to a boil; reduce heat to low and simmer, whisking constantly until thick, about 5 minutes.
  • Stir in margarine and remove sauce from heat.
  • Pour 1/2 can of enchilada sauce into bottom of a 9x13-inch baking dish and spread the sauce out to cover the bottom. Top with 1/4 of the tortilla pieces, and spread 1/2 cup brown rice onto the tortillas.
  • Spread 1/3 of the cooked vegetables over the brown rice.
  • Spread 1 can of black beans over the vegetables; cover beans with 1/4 of the nutritional yeast sauce.
  • Repeat the layers twice more.
  • Make a final layer containing remaining 1/4 of the tortilla pieces, remaining nutritional yeast sauce, and remaining 1/2 can enchilada sauce.
  • Bake casserole in the preheated oven until bubbling, 30 to 45 minutes; allow to stand for 10 minutes.
  • Top casserole with optional black olives, avocado, tomato, jalapeno pepper, 2 tablespoons of chopped onion, salsa, and sour cream before serving.

1 12 oz. package Fajita Time Sliced Portabellas with seasoning packet or 3 large portabella mushrooms, sliced in 1/2 inch slices
1 12 oz. package pre-chopped veggies (bell peppers, onions) or about 2 1/2 cups sliced onions and bell peppers
2 Tbsp avocado oil
1 cup prepared fresh salsa
6 oz. tomato paste
2 cups el Pato enchilada sauce
1 tsp cumin
3 cups shredded Mexican cheese
10 corn tortillas

Steps:

  • Preheat oven to 375° and lightly grease a 9 X 13 baking dish.**
  • In a medium skillet, heat avocado oil and add the vegetables and mushrooms. Stir the fajita seasoning into veggies and sauté for about 10 minutes or just until softened.
  • Stir in 1 1/2 cups of cheese until melted and mixed in with veggies.
  • Mix enchilada sauce, salsa, tomato paste and cumin together in a large measuring cup, making sure it's well blended. Pour about 1 1/4 cup sauce on greased baking dish.
  • Heat the tortillas in damp paper towels for about 10-15 seconds. Using a spoon, place a heaping spoonful of veggies in each tortilla. Roll and place seam side down in the sauced baking dish. Continue rolling the remaining enchiladas and arrange close together in the dish.
  • Sprinkle half the remaining cheese (about 3/4 cup) over the enchiladas, followed by the remaining sauce and top with the remaining 3/4 cup cheese. Make sure the enchiladas are well covered by the sauce- exposed tortilla can burn or dry out.
  • Bake for 20 minutes. Let cool for 5 minutes, top with cilantro and enjoy!

1 lb boneless skinless chicken breast ((455 grams), sliced thin)

Steps:

  • Preheat oven to 375°F. Grease a 9x13-inch or similar casserole dish.

  • Add remaining tablespoon of the olive oil to the skillet. Add onion and peppers and sprinkle with remaining fajita seasoning. Cook until vegetables are softened and start to caramelize, about 5-6 minutes. Combine with the chicken.
  • Whisk together the enchilada sauce, sour cream, and milk. Pour enough mixture into the prepared baking dish to cover the bottom generously.
  • Spoon chicken fajita mixture into the flour tortillas, roll up, and place seam side-down in the dish.
  • Pour remaining enchilada sauce mixture over the top of the tortillas and sprinkle with mozzarella cheese.
  • Cover with foil and bake for 20 minutes. Remove foil and bake until sauce bubbles and cheese just begins to turn brown, about 10 minutes more.

8 all natural burrito-size flour tortillas
3 cups cooked and shredded chicken breasts
2 cups mild salsa
2 cups light sour cream
1 cup mild cheddar cheese, Shredded

Steps:

  • Preheat Oven to 350.
  • Heat skillet on Medium/high. Add 1 tbsp canola oil. Once hot, add garlic and stir frequently until lightly browned. Add onions and continue to sauté.
  • In large mixing bowl, Add fajita mix to 1/4 cup warm water and 1 tbsp canola oil. Whisk contents together. Add in peppers and coat peppers entirely with fajita mixture/sauce. Salt and Pepper the mixture (eyeball it). Once coated, add to sautéed onions. Sauté peppers until tender (not mushy). Add more salt and pepper.

  • Spray 9x13 (or 2 8x8) pan with cooking spray. Heap 4 spoonfuls of filling mix into each tortilla. Roll tightly and place towards edge of pan, seam side down. Once pan is filled with enchiladas, mix together remaining 1/2 cup salsa with 1/2 cup sour cream. Pour over top of enchiladas. Sprinkle remaining 1/2 cup cheddar. *.
  • Put in oven uncovered. Bake for 25-30 mins, or until tortillas are browned and cheese is completely melted/browned on top.
  • Yummy. Enjoy.
  • *(This is a great recipe to make ahead. Assemble the enchiladas, cover tightly with wrap or foil, and put it in the refrigerator or freezer until you are ready to cook and eat. Just pull it out and bring to room temperature before putting it in the hot oven).
