CHICKEN FAJITA EGG ROLLS



Chicken Fajita Egg Rolls image

Tex-Mex chicken fajita ingredients put in an egg roll. If you have access to a turkey fryer, I recommend using it to cook these in order to cut down on number of batches and speed up the cooking process. This can be an appetizer or part of a full meal. Goes great with ginger soy sauce or even some pico de gallo.

vegetable oil for frying
2 eggs
2 tablespoons milk
2 tablespoons olive oil
1 red onion, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 jalapeno pepper, seeded and minced
½ cup finely chopped mushrooms
cayenne pepper, or to taste
2 pounds skinless, boneless chicken breasts, thinly sliced
2 (8 ounce) packages shredded pepper Jack cheese
16 egg roll wrappers, or more as needed

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Beat eggs and milk together to make egg wash.
  • Heat olive oil in a saute pan over medium heat. Cook and stir onion, peppers, mushrooms, and cayenne until slightly softened, about 5 minutes. Add chicken and cook until no longer pink, about 5 minutes. Mix in pepper Jack cheese until thoroughly combined and starting to melt, 1 to 2 minutes.
  • Place equal amounts of the filling mixture in the center of each egg roll wrapper. Fold in side corners and roll up, sealing edges with egg wash.
  • Cook egg rolls in the hot oil until they float to the top and turn golden brown, 3 to 5 minutes. Work in batches to avoid overcrowding. Lay flat on paper towels to drain, standing on their ends to drain any excess oil.

Here's what you need: olive oil, onion, garlic, green bell pepper, red bell pepper, yellow bell pepper, chili powder, paprika, cayenne powder, cumin, garlic powder, dried oregano, salt, pepper, flank steak, monterey jack cheese, long wooden toothpicks or cut wooden skewer

2 tablespoons olive oil, for cooking
1 onion, sliced
3 cloves garlic, minced
½ cup green bell pepper, sliced
½ cup red bell pepper, sliced
½ cup yellow bell pepper, sliced
½ teaspoon chili powder
½ teaspoon paprika
⅛ teaspoon cayenne powder
½ teaspoon cumin
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon salt
½ teaspoon pepper
1 ½ lb flank steak, thinly sliced
½ cup monterey jack cheese
long wooden toothpicks or cut wooden skewer

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Heat a large ovenproof skillet over medium heat and add the oil. Sauté the onion, garlic, and bell peppers until soft, about 5 minutes.
  • Combine the chili powder, paprika, cayenne, cumin, garlic powder, oregano, salt, and pepper in a dish, and use the mixture to season the flank steak with on both sides. Lay the steak flat on a cutting board with the grain running up and down. Place the sautéed onions and peppers in the middle of the steak, leaving an inch or so on both ends. Cover the onions and peppers with a layer of cheese.
  • Tightly roll up the meat from left to right; this will ensure that you cut against the grain when you slice the meat. Stick toothpicks through the sides of the roll to help it hold its shape and use a sharp knife to cut in between the toothpicks.
  • Return the skillet to high heat, add the steak, and sear until a nice crust has developed, about 3 minutes. Flip and repeat with the other side. Transfer the skillet to the oven and bake for 10 minutes, or until cooked to your preference.

1/2 cubed steak, sliced thin 5-6 small Red, Yellow and Orange sweet peppers sliced 1 1 small onion prepared egg roll wraps 1 cup corn oil
1 tbl Chili powder
1/2 tsp ancho pepper, ground
1/2 tsp chipolte pepper, ground

Steps:

  • Take two skillets. In one, stir fry peppers, onion and beef. As beef starts to brown, add chili powder, chipolte and ancho peppers...stif fry til peppers are soft and meat is desired wellness. Remove from heat and let cool. Double the egg roll wraps for this one. In a doubled wrap, use a slotted spoon to add about 2 tbls of fajota filling. Fold. Heat corn oil in another skillet. Add egg rolls seam side down. Cook until golden and crispy.
