FAIRY BITES
A cute little cookie confection, perfect for tea parties! Cute square bites with little sprinkles. In Australia, bread is buttered and topped with colored sprinkles. This recipe has been doubled, turned out fine. Went quickly. If the cookies don't hold together, press firmly into an ice cube tray with a rounded top and drop onto a baking sheet. Kids and adults love these little disappearing treats.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Line an 8-inch square baking pan with plastic wrap (or cut parchment to fit) leaving a 1-inch overhang.
- Cream together butter, sugar, and vanilla extract in a bowl with an electric mixer on medium speed, scraping bowl often, until well combined. Reduce speed to low and mix in flour and salt until well combined. Stir in sprinkles.
- Knead mixture 4 to 5 times in the bowl until dough forms a ball. Pat dough evenly into the prepared pan. Use overhang to lift dough from pan. Cut dough into 1/2-inch squares. Gently place squares 1/2 inch apart onto an ungreased baking sheet.
- Bake until bottoms just begin to brown, about 15 minutes.

This is from BH&G Christmas Cookies magazine from 1999. I have yet to try it, but I have marked it every year. Maybe 2007 fill be the year.

Steps:
- In a large mixing bowl beat butter on medium for 30 seconds.
- Add granulated sugar, powdered sugar, baking soda, cream of tartar and 1/2 tsp of salt.
- Beat until combined, scraping sides of bowl occasionally.
- Beat in oil and eggs and extract until combined.
- Beat in as much of the flour as as you can.
- Stir in remaining flour by hand.
- cover and chill for 30 minutes.
- Scoop dough into rounded spoonfuls.
- Roll into balls.
- Place balls on ungreased cookie sheet.
- With bottom of a glass or a cookie stamp, gently flatten until about 1/4 inch thick.
- Sprinkle with colored sugar.
- Bake at 350 for 10-12 minutes or until the edges are lightly browned.
- Transfer to racks to cool completely.
- Prep time does not include chilling time.

- 1. Add flour, cocoa powder, sugar, and salt to a bowl and mix until well combined. Add the cold butter in small pieces and mix/knead everything quickly to get a nice smooth dough. Do not overwork the dough or it will get warm and we don’t want that. Wrap in plastic wrap and place in the fridge for about 1 hour.
- 2. For the topping make a meringue by adding the egg whites and salt to a bowl and whisk on high speed until shite and foamy. Gradually add the sugar and mix until stiff peaks form. Mix for 6-8 minutes more until the sugar has dissolved completely. Sift the cornstarch on top of the stiff egg whites and mix in. Fill into a piping bag with a large star tip and place in the fridge until needed.
- 3. Preheat the oven to 320°F (160°C). Line a baking sheet with baking parchment and set aside. Roll out the dough on a floured surface (or between two sheets of baking parchment) and cut out 20-22 rounds with a diameter of about 2 inches (5cm). Place the dough circles on the baking sheet with some space in between and place a Toffifee upside down (chocolate side down) in the center of each piece of dough and pipe a swirl of meringue on top to cover the Toffifee completely. Bake for 24-26 minutes until the meringue is dry but not browned – you want the meringue as light as possible. Take out of the oven and let cool down on a wire rack. Store in a tin box without any other cookies.
