THE CRISPIEST FRIED CHICKEN RECIPE BY TASTY
We tested dozens of different methods to fried chicken and we finally found what we think is the crispiest and juiciest version. The first step is to dry brine the chicken, which is a fancy way of saying to season it overnight. This process actually helps the meat retain its moisture while frying, making it extra juicy. The next step is the double-dredge method where you dip the chicken in seasoned flour, then in buttermilk, then back in the flour before frying to get those extra crackly bits. Steps:
- Dry brine the chicken: In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and lemon zest.
- Pat the chicken pieces dry with a paper towel and season with the salt mixture, evenly coating each piece.
- Line a large resealable container with paper towels and add the seasoned chicken. Refrigerate uncovered for at least 4 hours, preferably overnight.
- 30 minutes before frying, remove the chicken from the refrigerator to bring to room temperature.
- Add the canola oil to a large Dutch oven and heat over medium heat until the temperature reaches 350°F (180°C). Place a wire rack over a rimmed baking sheet and set nearby.
- In a large bowl, whisk together the flour, baking powder, onion powder, garlic powder, and salt.
- In a separate large bowl, whisk together the buttermilk, egg whites, and vodka.
- Working with one piece at a time, coat the dry-brined chicken in the flour mixture, then in the buttermilk mixture, then again in the flour, shaking off any excess.
- Add 2-3 pieces of chicken to the hot oil and fry for 7-10 minutes, flipping once, until the internal temperature reaches 165°F (75°C) and the exterior is golden brown and crispy. Remove from oil, transfer to the wire rack, and season with salt. Repeat with the remaining chicken.

FRIED CHICKEN
Steps:
- Trim off all fat and discoloration, etc. with kitchen shears or a sharp knife from the chicken. Wash under cold water. Put the flour into a plastic bag. While the pieces are still very wet, place them 1 at a time into the flour. Shake the bag to coat each piece. Melt about 1/3 to 1/2 cup of shortening in a pan on medium heat. Shake the bag again to keep the pieces from sticking together.
- When the shortening is melted and very hot, remove the chicken from the bag. Gently shake off the excess flour and lay into the hot fat. When all the pieces are in the pan, cover with a lid and allow to fry about 5 to 7 minutes. Remove cover and check each piece to see how brown it is. When it is lightly golden brown, turn to fry the other side. Add salt and fresh ground pepper to each piece on the browned side. Cover again and allow the other side to brown. Season the second side. At this point, you may remove the cover and continue to fry the chicken to the desired "browness" you prefer. Turn often.
- It should be nicely browned with a very crisp outside and a moist, tender inside. You may want to reduce the heat a little after you have browned the second side. Boneless, skinless chicken cooks much faster than meat with the bone in. Place the fried pieces on a wire rack covered with a paper towel to drain off the excess grease. For best flavor and texture, serve about 7 to 10 minutes after you remove from the pan.
FRIED CHICKEN

- Rinse chickens inside and out under running cold water and pat dry with paper towels. Remove extra skin and excess fat. Cut off the first joint of wings and the backs and discard. Keeping skin on, cut legs into thighs and drumsticks. Remove the wings, split the breast and cut each half crosswise into two (or ask your butcher to do this). Place pieces in a single layer in a shallow baking dish; sprinkle with seasoned salt or seasoning mix and rub to coat on all sides. Cover and set aside to marinate 1 hour.
- Preheat oven to 250 degrees. Heat 1 1/2 inches oil, enough to cover the chicken pieces 2/3 of the way but no more, in one or two wide, deep skillets or kettles to 325 to 350 degrees over medium-high heat. As the oil heats, mix the flours in a plastic food-storage bag. Add the thighs and drumsticks; shake to coat. Remove each piece with tongs, shake off excess flour and place skin side down in the hot oil without crowding. Fry until skin is browned and crisp, about 7 minutes; turn with tongs and fry until browned and crisp and cooked through, about 7 minutes longer, adjusting heat so chicken doesn't brown too quickly.
- Drain chicken on a wire rack set over a baking pan and keep chicken warm in the oven while coating and frying the remaining pieces: breast pieces next, about 5 minutes on each side, and wing parts last, about 4 minutes on each side. Serve while still warm. The meat will be less moist when served cold the next day, but still very tasty.
