3 cups water
1/2 teaspoon salt
1 tablespoon instant minced onion or 3 tablespoons minced onions
2 teaspoons instant chicken bouillon or 2 chicken bouillon cubes
1 teaspoon curry powder
1/4 teaspoon pepper
1/8 teaspoon instant minced garlic or 1 garlic clove, minced

Steps:

  • Cook rice as directed on package and stir in remaining ingredients with the water.
  • Cook until liquid is absorbed and rice is tender.

3 tablespoons mild curry powder

Steps:

  • Stir the rice, water, and curry powder together in a rice cooker; cook for 1 full cycle or until all the water is absorbed, 15 to 20 minutes.

Number Of Ingredients 10

1 tablespoon oil, divided
2 eggs, whisked in a bowl
1/2 small onion, fine dice
1/3 carrot, fine dice
3 cups cooked rice (cooked day before and refrigerated)
2/3 cup ham or 2/3 cup cooked chicken, cut into 1/4-inch pieces
1 tablespoon curry powder
1 teaspoon soy sauce
salt and pepper
1 scallion, sliced thin (green onion)

Steps:

  • Heat a frying pan or wok over high heat until hot. Add 1/2 tablespoon oil and then swirl it around the pan to coat. Add the egg and scramble vigorously with a spatula to break it up into small chunks. When the eggs, are barely cooked, transfer them to a plate.
  • Add the remaining 1/2 tablespoon oil to the pan along with the onion and carrot. Stir-fry until the carrots are tender.
  • Add the rice, using your hands to crumble the rice apart as much as possible. Stir-fry, using the spatula to break up the rice so that there are no clumps.
  • Add the ham or chicken and then sprinkle on the curry powder, soy sauce and pepper. Stir-fry until the curry is fragrant and the rice is shiny. Return the egg to the pan along with the scallions and mix to combine. Taste for salt and adjust as needed.
