This is an Northern Ireland recipe given to me by my Mum many years ago!! This cake is always much tastier the following day! Enjoy!

1 cup water
4 cups candied mixed fruit
1 cup white sugar
¾ cup butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon mixed spice
2 eggs, beaten

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x5 inch loaf pan, and line with parchment paper or aluminum foil.
  • Combine the water, mixed fruit, sugar and butter in a saucepan over medium heat. Bring to a boil, stirring occasionally, and boil gently for about 10 minutes. Sift the flour, baking soda and mixed spice into a large bowl. Pour in the boiled mixture, and stir until well blended. Mix in the eggs. Pour into the greased loaf pan.
  • Bake for 90 minutes in the preheated oven, until a skewer or knife inserted into the top comes out clean. Cool cake in the pan for at least 10 minutes before removing.

This recipe produces a really moist fruit cake it was given to me by my mom, and it's really easy. My mom uses it for Christmas cake by icing it. I use it for birthdays, Christmas, or just for a treat.

12 ounces candied mixed fruit
5 ounces glace cherries, roughly chopped
2 ounces candied mixed citrus peel
2 ounces chopped walnuts
¾ cup butter
1 teaspoon ground allspice
½ teaspoon baking soda
1 cup milk
12 ounces sifted self-rising flour
2 eggs
1 ½ cups white sugar

Steps:

  • Preheat oven to 325 degrees F (160 degrees C). Line one 8 inch deep sided cake tin with parchment paper.
  • Place the fruit cherries, peel, walnuts, sugar, butter or margarine, mixed spice, baking soda and milk in a medium sized saucepan. Bring to a boil and simmer for 5 minutes. Let mixture cool to body temperature.
  • Stir in the flour and the eggs. Pour batter into the prepared pan. Wrap outside of pan with brown paper or newspaper.
  • Bake at 325 degrees F (160 degrees C) for 40 minutes then reduce temperature to 300 degrees F (150 degrees C) and continue to baking cake for 1-1/2 hours. Remove cake from oven and allow it to cool in tin for 5 minutes then turn it out onto a cooling rack, remove greaseproof paper and leave until cool. Cake can be stored for up to 6 months wrapped in foil and in an air tight tin.

A very tasty boiled fruit cake its not heavy--simple to make and inexpensive. this has become a firm favorite with the family This was given to me well over 40 years ago, by an Australian farmers wife. She used to do all her baking in an old wood stove!

200 g sugar
225 ml water
30 g margarine
375 g mixed fruit
1 teaspoon bicarbonate of soda
275 g self raising flour
1 teaspoon mixed spice
1 egg
1 pinch salt

Steps:

  • Place the sugar, water,margarine, bicarbonate of soda and dried fruit in a medium saucepan and slowly bring to the boil. As soon as it starts to boil, remove and leave to completely cool.
  • Add the well beaten egg, mixed spice, pinch of salt, and the flour; mix well.
  • Line a 9-inch cake tin. Cook at approximately 170°C for about an hour to an hour and a quarter.
  • To stop it drying out while cooling, it's advisable to drape a clean tea towel over the cake after about half an hour.
  • NB - if you are in a hurry for the fruit to cool - place saucepan in some cold water in the sink, iit will cool in under half the time.

I know a lot of people don't like fruitcake, but I love it and can't understand what's not to love;-). This is a nice simple one from my high school cookbook. I've made a couple of changes to the original recipe over the years.

1 cup sugar
1 cup water
2 2/3 cups mixed fruit (eg currants, raisins, golden raisins, dates, prunes, dried cherries or cranberries)
1/3 cup mixed peel
1/3 cup glace cherries
1/3 cup slivered almonds
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon mixed spice (similar to pumpkin pie spice)
1/2 cup butter
1 teaspoon bicarbonate of soda
1 cup self raising flour
1 cup all-purpose flour
2 eggs (beaten)

Steps:

  • Preheat your oven to 350f.
  • Place the sugar, water, fruit, peel, glace cherries, almond, spices, soda and butter in a saucepan.
  • Bring to the boil stirring constantly.
  • Remove from the heat when it reaches the boil, and allow to cool for 5 minutes.
  • Add the beaten egg, sifted flours and pour into a prepared tin-greased and lined 7 inch square or 8 inch round cake tin.
  • Bake for 1 hour, allow to cool in the tin for 15 minutes before removing to cool on a rack.

There is nothing like an old fashioned boiled fruit cake recipe as it yields a super moist, soft and dense Christmas Fruit Cake that lasts for long!!

560 gms Dried Fruits ((refer notes))
125 gms Salted Butter
85 gms Brown Sugar
130 gms Water
150 gms (3) Eggs
10 gms Golden Syrup
150 gms Plain Flour
1 gm Baking Soda
1 gm Baking Powder
1 gm Mixed Spice
1 gm Ground Cinnamon
Zest of 1 orange and lemon
2 tbsp Apricot Jam
1 tsp Water

Steps:

  • Start by dicing the fruits. Place fruit, butter, sugar and water in a large saucepan. Bring to the boil over medium heat and then simmer for two minutes, stirring constantly.
  • Remove from heat and cool to room temperature.
  • Meanwhile sieve the dry ingredients, lightly beat the eggs and prepare a 7 inch cake pan by lining the outside with aluminium foil and inside with a parchment paper ring. Set this aside.
  • Once the boiled fruit mixture is cooled. add lightly whisked eggs, golden syrup, lemon and orange zest. Fold gently. Then add the sieved dry ingredients and mix to form a cake batter.
  • Transfer it to the prepared pan and smoothen the top.
  • In your preheated oven of 150°C, place an inverted cookie tray. Place the cake pan on top of this tray in the center of the oven. Bake for 65 to 80 mins or until a skewer inserted in the center comes out clean. It took me 70 mins.
  • Let it cool in the tin for 10 mins and then transfer to a wire rack to cool completely
  • Once cooled glaze with apricot glaze and sprinkle with nut and seed mixture or keep it plain.

This is a recipe that my mother-in-law baked countless times. A favourite of the shearer's she cooked for during shearing season. She's been asked for this recipe many, many times. Hers always tasted spicier than mine and I suspect she used a heaped teaspoon of spice. I also noticed that she never owned a set of measuring cups or spoons. Just used a teacup and cutlery from her to drawer to measure. Ahhh, the simple old days and delightful foods.

100 g butter
500 g mixed fruit
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
1 cup sugar
1 cup cold water
100 g walnuts (optional)
2 eggs
1 cup plain flour
1 cup self raising flour

Steps:

  • Put the first 7 ingredients into saucepan and bring to boil. Simmer for 2 minutes. Turn off and allow to cool a little.
  • Beat 2 eggs well.
  • Sift plain and SR flours tegether.
  • Add well beaten eggs to cooled fruit mixture. Fold in sifted flour.
  • Place mixture into a well greased, lined 20cm (8") cake tin and bake in moderate oven (180C or 350F) for 1 hour.

125g unsalted butter, cubed, plus extra for the tin
175g light brown soft sugar,
200g raisins
200g sultanas
100g currants
50g mixed peel
225g self-raising flour
1½ tsp mixed spice
½ tsp bicarbonate of soda
2 eggs, beaten

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Butter and line a 900g loaf tin with baking parchment. Melt the sugar, butter and 225ml water in a large saucepan. Once melted, add the raisins, sultanas, currants and mixed peel. Bring to a gentle boil, and stirring occasionally, cook until reduced and softened, around 10-15 mins. Remove from the heat and leave to cool to room temperature.
  • Tip the flour, mixed spice, bicarbonate of soda and a pinch of salt into a large bowl. Add the cooled fruit mixture and stir, then add the eggs and mix to combine. Bake for 45-55 mins until dark brown and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 10 mins, then transfer to a wire rack to cool completely. Cut into slices to serve.

500 g mixed fruit
125 g butter
1/2 cup dark brown sugar
1/2 cup water
1 tablespoon orange marmalade
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
1/4 teaspoon vanilla essence
1 teaspoon parisian spice essence
2 eggs
1 cup flour
1/2 cup self-raising flour

Steps:

  • In a large saucepan, place the mixed fruit, butter & water.
  • Add marmalade and mixed spice, and mix together.
  • Bring to boil over medium heat then boil gently for 5 minutes.
  • Add bicarb soda and stir.
  • Leave to cool.
  • When cool, add 2 eggs and mix well.
  • Gently fold in flour.
  • Turn into a 20cm greased cake tin.
  • Bake at 150 degrees celsius for 20 minutes.
  • Then, 125 degrees celsius for 20 minutes or until cooked.
  • Turn on to a wire rack.
  • 1 tablespoon of rum can be drizzled over the top.
  • Notes: Orange juice or rum can be used instead of water.
  • Fan-forced electric oven used.
