FABULOUS 2 INGREDIENT LEMON PUDDING - 4 WW POINTS
This recipe has been flying around the weight watchers message boards. The whole recipe is 4 Weight Watchers points as written. Can be used as a lemon Meringue pie filling or fold in whipped cream for a light lemon mousse. NOTE: Use the small boxes of jello and pudding that serves 4. AND you must use the cook and serve pudding. Can use mixes with sugar instead of sugar free.

Steps:
- Mix cook and serve vanilla pudding with water in a sauce pan and bring to a boil.
- Take off heat and add lemon jello. Mix well.
- Pour into bowl and let chill for 2-3 hours.

Steps:
- On med-hi heat, bring sugar and water to a boil.
- Mix cornstarch, lemon juice and lemon extract.
- Stir into boiling mixture.
- Beat the egg yolks and stir about 1/4 cup of the hot mixture into them.
- Quickly stir this into the hot mix.
- Spoon into dessert cups.
- Chill.
- If you prefer you can put the mix into a baked pie shell, and cover with meringue.

Steps:
- Preheat oven to 450. Spray two 6oz custard cups with non-stick spray.
- Combine blueberries, sugar, ginger, lemon zest and juice and cinnamon. Divide between custard cups.
- Combine together Bisquick and milk in small bowl. Spoon over blueberry mixture. Sprinkle with sugar.
- Place on baking pan and bake 20 minutes until golden and bubbly.
- Serve with vanilla ice cream.

- Spray crock pot with cooking spray.
- Whisk skim milk with dry pudding mix in crock pot until dissolved.
- In a medium bowl, mix dry cake mix, water, applesauce and egg whites with whisk for two minutes until blended.
- Very gently pour cake mixture over pudding mixture. DO NOT MIX!
- Cover and cook on HIGH for 2 1/2 hours.
- Serve hot.

This is a wonderful dessert it has a fluffy top and a creamy lemon base. If you want a heavier lemon flavor increase the Zest.

Steps:
- Cream the butter.
- Add sugar and beat well.
- Grate the rind of the lemons and squeeze out the juice, strain, set aside.
- Separate the eggs, add one yolk at a time to the butter/sugar mixture beating well between Stir in the flour and gradually add the lemon juice and rind'.
- Add the milk.
- Whisk the egg whites stiff and fold gently into the batter.
- Place into a pie plate and bake in a 350F oven for apprx 40 minutes.
- Dredge with Icing sugar (optional).
- Serve with whipped cream (optional).
