CHOCOLATE ORANGE FUDGE
A simple fudge recipe combining semisweet chocolate chips, condensed milk, pecans and grated orange peel. Use almonds, or any kind of nut, if desired.

Steps:
- Line an 8 x 8 inch square pan with parchment paper.
- Melt chocolate chips with condensed milk in the top of a double boiler or in a bowl in the microwave. Stir until smooth. Remove from heat and stir in pecans and grated orange peel.
- Pour chocolate mixture into prepared pan. Chill 2 hours, or until firm, and cut into squares. Store, covered, in the refrigerator.

EASY CHOCOLATE FUDGE

Steps:
- Line one 8 or 9 inch square pan with wax paper.
- In a heavy saucepan, over low heat, melt the chocolate chips with the condensed milk. Remove from heat and stir in the chopped nuts and vanilla extract. Spread mixture evenly into the prepared pan and chill for 2 hours or until firm. Once firm, turn fudge onto cutting board, peel off waxed paper and cut into small squares.

2 INGREDIENT CHOCOLATE FUDGE
Steps:
- Line a small rectangular baking tray or cake tin with baking parchment. If you don't have any, tin foil also works.
- Break or chop the chocolate of your choice into pieces and place in a large microwavable bowl. Pour over the condensed milk and mix together well.
- Pop the bowl into the microwave and heat in short bursts of around 30 seconds, taking it out and stirring in between, until the chocolate has almost melted. Be careful not to overheat.
- Once the chocolate is melted, beat well with a wooden spoon until it all comes together smoothly. If you would like to mix anything into the fudge, throw it in at this point and stir to mix in.
- Tip into the tin and spread around so it is in an even layer in the tin. Use a palette knife or spatula to smooth the top down. If using toppings, add at this point, pushing them into the fudge quickly before it sets.
- Pop the tray of fudge into the fridge and leave to set. Once it has set hard, take it out and cut into pieces. I like to cut mine into 6 mini slabs, scoring lines into the top and packing in cellophane bags to give as gifts.

- Combine chocolate chips and sweetened condensed milk in bowl. Microwave at 50% power for approximately three minutes, stirring after each minute until smooth. Alternatively, combine chips and milk in saucepan and stir constantly over medium-low heat until smooth.
- Pour into greased foil-lined eight-inch square pan and let cool until set. Lift fudge out of pan using the edges of the foil as handles and cut into one-inch squares.

CHOCOLATE ORANGE CUPCAKES

- Pre-heat your oven to 160C Fan/180C/350F/Gas Mark 4, and line a cupcake tin with cupcake cases
- For the cupcake sponge, mix together the butter and caster sugar, ideally using an electric mixer, until smooth and fluffy
- Add the eggs and orange extract and whisk them in well
- Then gently whisk in the self raising flour, baking powder and cocoa powder
- Divide the mixture between the cupcakes cases, and bake them for 20-25 minutes or until a skewer inserted in the centre of the cupcakes comes out clean. Put them on a rack to cool completely
- Make the buttercream by mixing together the butter, cocoa powder and icing sugar, then add the orange extract and milk, and mix until smooth. You can do this by hand, but an electric whisk are stand mixer with paddle attachment will provide the best results. If the buttercream is too stiff, you can add a little more milk
- Spread or pipe the buttercream on top of the cupcakes
- Decorate with the Terry's chocolate orange segments and orange sprinkles
- Store in an airtight container in a cool place and eat within 3 days
