JELLY BEAN COOKIES
These are great at Easter time or for anyone who loves jelly beans.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Butter 2 cookie sheets.
- Beat butter and sugars together using an electric mixer until creamy. Beat in egg, salt, baking soda, baking powder, and vanilla extract. Stir in flour and oats until just blended. Fold in jelly beans.
- Drop rounded spoonfuls of the cookie dough about 2 inches apart onto the prepared cookie sheets.
- Bake in the preheated oven until edges are golden, 9 to 10 minutes.

NO BAKE - OAT DELIGHT COOKIES
My mom used to make these cookies when we were kids, at Easter she would make a well in the centre and add jelly beans to look like birds nests.

Steps:
- Combine sugar, cocoa, butter or marg and milk in large sauce pan and bring to a boil.
- Remove from heat and add vanilla, coconut and rolled oats, stir until all in coated in chocolate mixture.
- Drop by the spoonful onto greased cookie sheet, etc and allow to cool before eating.
- These cookies set up best if cooled in the fridge.

EXTREME OATMEAL AND JELLY BEAN COOKIES

- Cream together butter and both sugars in a medium bowl. Add egg, baking soda, baking powder, salt and vanilla. Stir in the flour and oatmeal and add in the jelly beans. Mix well. Heat oven to 350 degrees F. Drop rounded spoonfuls of batter 2 inches apart on a greased cookie sheet. Bake for 10 to 12 minutes.
LENTIL COOKIES

- *Cook's Note: If desired, a quarter of the whole-wheat flour can be substituted with lentil flour for a denser, stronger flavored cookie
- Preheat the oven to 375 degrees F.
- In a medium bowl, combine the flour, baking powder, salt, cinnamon and allspice.
- In the bowl of a stand-mixer with a whisk attachment, cream together the sugar and butter on medium speed. Add the egg and mix until just incorporated. Add the vanilla and lentil puree and mix until combined. Add the flour mixture and blend on low speed until just combined. Remove the bowl from the mixer and stir in the oats, dried fruit and coconut.
- Form the dough into balls about 2 teaspoons in size and place on a baking sheet with parchment paper, leaving about 1-inch of room in between. Bake for 15 to 17 minutes, or until an internal temperature of 195 degrees F is reached on an instant-read thermometer.
- In a small pot over medium heat, combine the lentils and the water. Bring to a simmer, cover, and simmer for 30 to 40 minutes, or until lentils are tender. Remove from the heat and puree. If using immediately, let cool. The puree may be stored in the refrigerator for 3 to 4 days or in the freezer for 2 to 3 months.
- Yield: 1 1/2 cups lentil puree
CHOCOLATE CHIP, OATMEAL AND BEAN COOKIES!
I know, it sounds crazy.And I'll admit, I was definitely skeptical. But these are delightful, VERY low in fat, and VERY high in fiber and protein. Trust me on this one, once they've come out of the oven, NO ONE will be able to tell these are based on white beans!

Steps:
- Preheat oven to 350 degrees.
- Blend oats until finely ground, but not powdered.
- Put oats in separate bowl and add flour, salt, and baking powder.
- Put drained, rinsed beans into blender with butter, eggs, and vanilla.
- Blend until pureed completely (there should be absolutely no chunks).
- In a large bowl, cream the bean puree and brown sugar.
- Add oat mixture and mix well.
- Add chocolate chips and mix.
- Using a a leveled off small cookie-scoop, scoop cookie dough onto greased jelly roll pans.
- Wet hands and press each cookie down flat ( to a little thicker than the chocolate chips).
- Bake each pan for 10-12 minutes, remove from oven and let cool for a bit before transferring to a cooling rack.

- Preheat oven to 350°. In a large bowl, cream shortening and sugar until blended. Beat in egg, milk and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Stir in jelly beans., Drop dough by tablespoonfuls 1-1/2 in. apart onto greased or parchment-lined baking sheets. Bake 8-10 minutes or until edges are light golden brown. Cool on pans 2 minutes. - Heat oven to 350°F. Lightly coat 2 baking sheets with cooking spray. In blender, process oats until finely ground but not powdery. Combine with flour, baking powder, baking soda, and salt in a bowl. In a clean blender, puree beans and 2 tbsp reserved bean liquid until smooth. Combine bean puree, butter, sugar, eggs, and vanilla in a separate bowl and beat well. With the mixer on low speed, beat in oat and flour mixture. Stir in chocolate chips by hand. Drop batter (by the tablespoon) onto baking sheets. Bake 15 to 17 minutes until centers are firm and edges are lightly browned. Transfer to wire rack to cool.
