Applesauce takes the place of butter to make these very low-fat! --- feel free to add in some raisins.

1/2 cup boiling water
1/2 cup all-bran cereal
1 large egg (or use 1/4 cup egg substitute)
1 cup buttermilk (use low fat if desired)
1/2 cup sugar (can use more sugar, or use sweetener equivalent to 1/2 cup)
1/4 cup applesauce
3/4 cup whole wheat flour
1/2 cup all-purpose white flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup bran buds (Kellogg's All Bran cereal preferred) or 1 cup 100% all-bran cereal (Kellogg's All Bran cereal preferred)

Steps:

  • Set oven to 350°F.
  • Grease an 8 x 8-inch baking pan.
  • In a small heat-proof bowl mix together the 1/2 cup All Bran cereal with boiling water; let stand until softened.
  • In a large bowl mix/whisk egg (or egg substitute) buttermilk, sugar and applesauce; add in the softened bran/water mixture to the egg mixture.
  • In a bowl mix together both flours, baking soda and salt; add to the wet mixture; mix only just until combined.
  • Stir in the 1 cup Bran Buds or 100% Bran cereal with a wooden spoon.
  • Transfer the mixture to prepared baking pan.
  • Bake for 45-50 minutes or until the bars test done.

1/3 cup brown sugar
1/4 cup molasses
1/8 cup canola oil
1 eggs or 4 tablespoons egg substitute
1 teaspoon vanilla or 1 teaspoon almond extract
1 1/2 cups rolled oats
1 cup flour (whole wheat or spelt)
1/2 cup all-bran cereal (crushed)
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
5 dates (dried, pitted, chopped)

Steps:

  • Mix all dry ingredients in a small bowl (oats, flour, cereal, cinnamon, powder, soda).
  • Mix all wet ingredients in a large bowl (applesauce, sugar, molasses, oil, egg, vanilla).
  • Add dry ingredients to wet ingredients.
  • Stir in chopped dates.
  • Pour mixture into a 9 x 13 pan (coated with non-stick spray).
  • Bake at 350°F for 20 minutes.

Taken from Canadian Living magazine, don't be shy to add in more grated carrot, although I have listed 1/2 cup I have made these using 3/4 cup ---if you use unsweetened applesauce you might want to increase the sugar a few tablespoons.

1 cup wheat bran (millers bran)
2/3 cup all-purpose flour
2/3 cup whole wheat flour
1 1/4 teaspoons baking soda
1/8 teaspoon salt
1/2-1 teaspoon cinnamon (optional)
1/2 cup finely grated carrot, loosely packed (do not squeeze out any mositure)
1 1/4 cups low-fat buttermilk
1/2 cup sugar (or use Splenda)
1/3 cup applesauce (use sweetened or unsweetened)
1 large egg
1 1/2 tablespoons oil
2 teaspoons vanilla
1/2-3/4 cup raisins

Steps:

  • Set oven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Generously spray 12 regular size muffin tins with non stick spray or line with paper liners.
  • In a medium bowl combine the wheat bran with both flours, baking soda, salt and cinnamon, then mix in grated carrots (if you are adding in flax seed then add in with the flour mix).
  • In another bowl using an electric mixer at medium speeed beat together buttermilk with sugar, applesauce, egg, oil and vanilla; beat for about 2-3 minutes.
  • Make a well in the center of the flour mixture then pour in the buttermilk mixture and raisins; using a spatula stir JUST until combined (some small lumps are okay, do not overmix).
  • Divide the batter equally between the muffin tins.
  • Bake for about 20-22 minutes or until the muffins test done (do not over bake).
  • Cool in the pan for about 10-12 minutes then remove to wire rack.
  • Serve warm or room temperature.

double crust pie crust (to fit an 8-inch pie pan, see my Kittencal's No-Fail Buttery Flaky Pie Pastry/Crust or use your own favorite pastry recipe)
1 (12 ounce) bag frozen unsweetened cherries (thawed and very well drained)
3/4 cup sugar
1 tablespoon cornstarch, plus
1 1/2 teaspoons cornstarch
1 tablespoon quick-cooking tapioca, plus
2 teaspoons quick-cooking tapioca
1 teaspoon half-and-half cream
2 -3 teaspoons sugar

Steps:

  • Set oven to 425 degrees.
  • Prepare a glass 8-inch pie plate.
  • Roll out one pastry into about a 9-1/2-inch circle.
  • Gently fit into bottom of the pie plate.
  • In a bowl combine the well-drained cherries, 3/4 cup sugar, cornstarch and tapioca; toss gently to combine.
  • Spoon the cherry mixture into the pie crust.
  • Top with remaining pastry.
  • Press edges of bottom and top pastry together, then trim and flute.
  • Cut a couple of steam vents in the top pastry.
  • Brush the top of the crust with half and half cream, then sprinkle with 2-3 teaspoons sugar.
  • Place the pie on a baking sheet to catch spills.
  • Bake at 425 degrees for 10 minutes.
  • Reduce heat to 375 degrees, continue to bake for about 45-50 minutes longer or until crust is golden and the pie is bubbly (cover edges with foil if necessary to prevent browning).
  • Cool pie on a rack, before slicing.

Low Fat (But Tasty!) Buttermilk Apple Bran Muffins Ww Friendly image

A healthier variation of my Recipe #101530. I have found they are a perfect WW 2 Points Plus snack after a workout. (They are 3 points plus with the oats added.) They also are very good for keeping your system regular when you are limiting your fat intake. ;) You can keep the batter in the refrigerator for several days and bake them as you need them, but they also freeze really well. (If you don't have fat free buttermilk, place 2 Tbls. of vinegar or lemon juice in a measuring cup then add low fat milk until it totals 2 cups altogether.) Sometimes I get bored with the original plain muffins and add some or all of the optional ingredients. I've also started adding 1 cup of old fashioned oats to mimic nuts in the muffins. They are delicious with WW's cream cheese on them too. PLEASE NOTE: wheat bran is NOT cereal. I buy mine at the bulk food store, and it looks like sawdust. Oat bran can be used in its place but the muffins aren't as tasty IMHO.

Steps:

  • Mix dry ingredients in bowl. Add the applesauce, buttermilk, eggs and molasses; mix well. Gently mix in chopped apple.

1 cup white flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon fruit, concentrate
2/3 cup milk
1 teaspoon vanilla extract or 1 teaspoon almond extract
1 1/4 cups fresh blueberries or 1 1/4 cups frozen blueberries
1/4 cup no-sugar-added apricot jam
1 tablespoon orange juice or 1 tablespoon water
1 teaspoon margarine or 1 teaspoon butter

Steps:

  • Preheat oven 350 degrees.
  • Mix the flour, baking powder, and salt. In a separate container mix the fruit concentrate, milk and extract until blended well. Pour the liquid ingredients into flour mixture and mix until smooth. Don't overbeat.
  • Place a 9 inch square baking pan in oven with the teaspoon of margarine until melted. Swirl the pan around until it coats pan.
  • Pour batter into pan and sprinkle evenly with blueberries.
  • Bake for about 30 to 40 minutes, or until golden brown.
  • Mix the jam with the water. Heat until melted. Brush the top with the glaze when it comes out of the oven.
  • Cut into 9 squares and serve warm.
  • ***Fruit concentrate is a available at health food stores.
  • ***Can also use cranberries, strawberries, or sliced peaches.

This is a spin off of Kittencal's (that genius girl) extreme low fat banana-blueberry muffins. But it was different enough ( I made the muffins a while back), that I decided to post the difference. This cake was wonderful! No one would guess it was low fat with little sugar except the fruit! You can use nonfat sourcream for the yogurt, but I haven't tried that.
