Potatoes Au Gratin image

Made simply with sliced potatoes, heavy cream, and grated cheese, potatoes au gratin is the ultimate comfort food.

Butter to grease the baking dish
2½ pounds Russet potatoes (3 to 4), peeled and sliced very thin
1½ teaspoons salt
¼ teaspoon freshly ground black pepper
1 cup (4 oz) finely grated Parmigiano-Reggiano
2¼ cups heavy cream
Fresh thyme, for serving (optional)

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Grease an 8-inch (or 2-quart) baking dish with butter.
  • In a large mixing bowl, toss the potatoes with the salt and pepper until evenly coated.
  • Arrange some of the potato slices, edges overlapping, in a single layer on the bottom of the prepared baking dish. Sprinkle a quarter of the cheese over the potatoes, and then pour a quarter of the cream over the cheese. Repeat with the remaining potatoes, cheese, and cream, forming 4 layers. Pour any leftover cream over top.
  • Place in the oven and bake, uncovered, for 60 to 75 minutes, or until the potatoes are tender when pierced with a knife and golden brown on top. Let the dish settle on the counter for about ten minutes. Sprinkle with fresh thyme, if using, and then serve.
  • Make Ahead: This dish can be assembled a day ahead; cover tightly with plastic wrap (pressing the wrap directly against the potatoes so they don't discolor), store in the refrigerator, and bake before serving. The potatoes on top will still discolor a bit in the fridge, but it shouldn't be noticeable after baking.

  • Preheat oven to 425°F. Place potatoes in 15x10x1-inch baking pan sprayed with cooking spray.
  • Bake 30 to 35 minutes or until potatoes are tender and golden brown, stirring after 20 minutes.
  • Mix dressing, bacon, eggs, onions, salt and pepper in large bowl. Add potatoes; mix lightly. Serve warm or chilled.

2 pounds small red potatoes, quartered
2 tablespoons olive oil
4 garlic cloves, minced
2 tablespoons dried parsley flakes
1 teaspoon dried basil
1 teaspoon dried oregano
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a large bowl. Drizzle with oil; toss to coat evenly. Combine the garlic, parsley, basil, oregano, salt and pepper; sprinkle over potatoes and toss to coat evenly. Transfer to an ungreased 13-in. x 9-in. baking pan. Bake, uncovered, at 425° for 30 minutes. Stir; bake 10-15 minutes longer or until potatoes are tender and golden brown.

4 large Russet potatoes
1/4 cup olive oil
1 tablespoon salt

Steps:

  • Preheat the oven to 425ºF.
  • Wash and dry the potatoes.
  • Pierce the potato 2-3 times with a fork (See notes in article above!)
  • Rub oil all over the potatoes (or choose one of the other options above to rub on the outside).
  • Rub salt all over the potatoes. We prefer coarse sea salt or pink himalayan salt.
  • Place the potatoes on a baking sheet and bake for about 45 minutes.
  • The exact baking time will depend on how large the potatoes are. The potato should be tender inside if you poke a fork into it.
  • Serve with butter, cheese, chives, sour cream and all of your favorite toppings!

This is a great recipe to use at Thanksgiving or Christmas because it can be made ahead and heated through when needed. I usually make a half recipe because we are a family of 5. I got this recipe from Company's Coming.

5 lbs potatoes, peeled and quartered
8 ounces cream cheese, softened (reduced fat is fine)
1 cup sour cream (low fat is fine)
1/4 cup butter (I prefer butter) or 1/4 cup margarine (I prefer butter)
1 teaspoon onion powder
2 teaspoons salt
1/4 teaspoon pepper (or to taste)
2 tablespoons butter
paprika (garnish)

Steps:

  • Cook potatoes as usual in salted water until tender. Drain. Push through potato ricer.
  • Add cream cheese in pieces. Add next 5 ingredients. Beat until smooth and fluffy. Scrape into a 2 qt casserole.
  • Place dabs of butter here and there over the top of the potatoes. Sprinkle with paprika. Cover and heat in 350 F oven until heated through (about 30-45 minutes, depending whether you've made it ahead and have taken it from the fridge).

5 lb peeled potatoes
8 oz softened cream cheese
1 c sour cream
1/4 c softened butter
1 Tbsp onion salt
1 tsp salt
1/4 tsp pepper
butter and paprika for garnish

Steps:

  • 1. Cook potatoes in salted water until tender, about 20 minutes. Drain. Mash.
  • 2. Add cream cheese in pieces. Add next 5 ingredients. Beat until smooth and fluffy. Put into a 3 quart casserole. Make indentations with back of spoon. Put a dab of butter in each indentation. Sprinkle with paprika.
  • 3. Ahead: After putting potatoes in casserole, dot with butter and cool slightly, cover and refrigerate for up to 3 days. Take out of refrigerator 30 minutes before baking. Bake, covered at 350 degrees for 40-50 minutes or until very hot in center. .
  • 4. Same day: Heat in a 350 degree oven for 20-30 minutes or until heated through.
  • 5. Potatoes can be reheated in a slow cooker. Take potatoes out of refrigerator about 3-1/2 hours before serving. Put in slow cooker. Dot with butter. Cook on low heat for 3 hours, stirring once or twice. They can be held an additional 30 minutes.
