ULTRA-THIN CRUST PIZZA PRIMAVERA

Ultra-Thin Crust Pizza Primavera image

This light, bright pizza is a celebration of colorful spring and summer vegetables. The easy make-ahead dough makes it simple to create a fresh pizza for a weeknight dinner: just make a large batch, which keeps in your fridge for up to 2 weeks. Not a veggie fan? Create your own custom pizza recipe with the Recipe Maker.

Provided by Ronne Day

Categories     Main Course

Yield 2

Number Of Ingredients 9

8 oz. Make-Ahead Pizza Dough (1/4 of a full recipe, a dough ball about the size of an orange)
4 oz. fresh mozzarella, cut or broken into 1/2-inch chunks
1/2 cup fresh asparagus tips
2 oz. zucchini or yellow squash ribbons (from one small squash; use a vegetable peeler to slice long, thin ribbons)
1/2 orange or yellow bell pepper, cut into thin strips
1 cup cherry tomatoes, halved
1/4 cup fresh or thawed frozen peas
Extra-virgin olive oil
1/4 cup fresh basil leaves

Steps:

  • At least 30 minutes before baking, position a rack in the bottom third of the oven and if using a pizza stone, set it on the rack. (If you don't have a stone, use a heavy-duty 13×18-inch baking sheet lightly oiled with olive oil.) Heat the oven to 550°F. If using a pizza stone, dust a peel with unbleached all-purpose flour.
  • While the oven heats, generously flour the dough and then stretch and tuck it under itself, giving it quarter turns as you form a ball of dough with a smooth top. Let rest on the work surface, covered with plastic wrap, for at least 30 minutes and up to 1 hour. Meanwhile, prep all the toppings as directed in the ingredient list before you begin shaping your dough.
  • Once the dough has rested, very lightly flour your work surface and lay your dough ball in the center of the floured area. Flour your hands and then, using your palms and fingertips, press and stretch the dough into a rough circle or oval about 1/16-inch thick. Or use a floured rolling pin to roll the dough into a circle; if sticky spots occur, flour your fingertips (or your rolling pin) and continue stretching the dough. Flip the dough occasionally so it doesn't stick to the work surface, and use a dough scraper to detach the dough from the work surface if it does stick. If the dough continually contracts, let it rest, covered with plastic wrap, at room temperature for 10 to 15 minutes before resuming the stretching process. It's OK if your dough isn't a perfect circle. Transfer the stretched dough to the prepared pizza peel or baking sheet.
  • Distribute the mozzarella, asparagus, zucchini ribbons, peppers, tomatoes, and peas evenly across the pizza. Drizzle a little olive oil over the entire pizza.
  • If using a baking sheet, put it on the rack. If using a pizza stone, shake the peel a bit to make sure the pizza isn't stuck and then slide the pizza off the peel and onto the heated stone (Aim for the back of the stone and place the end of the peel there). Bake, turning the pizza with a peel or tongs if one side browns faster than the other, until the crust is nicely browned and crisp and the cheese is bubbly, about 5 to 7 minutes on a pizza stone, or 10 to 12 minutes on a baking sheet. Transfer the pizza to a cutting board, scatter the basil over the pizza, and let stand for 1 to 2 minutes before cutting it with a pizza wheel, kitchen shears, or a chef's knife.

  • Mix the hot water, yeast, and sugar together in a medium sized bowl. Let proof for five minutes, it should be very lightly foamy on top when it’s ready. There isn’t much yeast in this recipe, so you’re not looking for significant foam - just a trace of bubbles.
  • Using the dough hook, pulse the mixture a few times. Scrape down the sides of the bowl and mix a bit by hand so that no flour is left unincorporated at the bottom of the bowl.

  • Place a pizza stone inside you oven on the middle rack. Preheat the oven to 500 degrees F. You most definitely need a pizza peel for this – or at least something to easily transfer your dough to your stone.
  • In a large bowl, mix together the water, yeast and honey. Let that sit and get foamy, about 10ish minutes. During that time, I like to get out all of my pizza ingredients and measure them out – because this dough doesn’t have to rise! For the above pizza, I used pureed crushed tomatoes, fresh mozzarella, a little crushed garlic and fresh basil leaves. You want everything measured out and ready to top so you can quickly transfer the dough to the stone.
  • After 10 minutes, stir the flour and salt into the yeast mixture. Stir until the dough comes together, first using a spoon and then using your hands. If the dough is REALLY sticky, use a little more flour until it becomes silky, adding 1 tablespoon of flour as needed. Flour your workspace and knead the dough a few times with your hands. Let it sit for 5 minutes.
  • Roll the dough out as thin as you possible can – at least 10 inches. If the dough keeps springing back, let it rest another 5 or 10 minutes. Flour your pizza peel VERY well. To transfer the thin dough to your peel, I gently and quickly fold the dough in half and then in half again, pick it up, and unfold it on the floured peel. Quickly add your toppings – your sauce and cheese and what not. Remember, with this thin crust it is best to not do tons of heavy toppings. Work quickly so the dough do not stick to the peel.
