GRILLED SCALLOPS WITH CREAMED CORN

Grilled Scallops with Creamed Corn image

If you're going to go the distance gathering all the spices for this multipurpose dry rub recipe (and you should), go ahead and triple the batch.

Categories     Bon Appétit     Dinner     Corn     Summer     Scallop     Shellfish     Seafood     Grill     Grill/Barbecue     Leek     Chile Pepper     Skewer

Yield 4 servings

Number Of Ingredients 23

3 dried pasilla chiles (about 1 ounce total), coarsely chopped
2 tablespoons dried thyme
1 tablespoon dried oregano
1 tablespoon ground coriander
1 tablespoon ground fennel
2 teaspoons chipotle chile powder
2 teaspoons freshly ground black pepper
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Zest of 1 lime
1 pound large sea scallops, side muscle removed, rinsed, patted dry
2 tablespoons olive oil
4 green garlic or 2 medium leeks, white and pale green parts only, thinly sliced
1 medium shallot, finely chopped
1 garlic clove, thinly sliced
4 ears of corn, husked, kernels grated on the large holes of a box grater
1 tablespoon unsalted butter
Kosher salt
Vegetable oil (for drizzling)
Lime wedges (for serving)
Special Equipment
A spice mill; four 8-inch metal skewers

Steps:

  • Prepare a grill for medium-high heat. Coarsely grind pasilla chiles in spice mill. Mix ground chiles with thyme, oregano, coriander, fennel, chipotle chile powder, black pepper, paprika, garlic powder, and onion powder in a small bowl to combine. Scatter lime zest over scallops, then cover them all over with 2 Tbsp. dry rub (reserve extra rub for another use). Chill scallops while you make the creamed corn.
  • Heat olive oil in a medium saucepan over medium-low. Cook green garlic, shallot, and garlic, stirring occasionally, until very tender but without taking on any color, 6-8 minutes. Increase heat to medium and add grated corn; cook, stirring often, until liquid evaporates, about 5 minutes. Stir in 2 Tbsp. water and cook, stirring, until absorbed. Continue to cook, stirring and adding water 2 Tbsp. at a time and letting it absorb completely before adding more, until corn is creamy with a risotto-like consistency, 12-18 minutes. Stir in butter; season creamed corn with salt.
  • Thread scallops onto skewers, dividing evenly, season with salt, and drizzle with a little vegetable oil. Grill until deeply browned and just cooked through, about 3 minutes per side, depending on size. Transfer skewers to a platter and squeeze some lime juice over scallops.
  • To serve, divide creamed corn among plates and top with skewers. Serve with more lime wedges for squeezing over.
  • Do Ahead:
  • Dry rub can be made 1 month ahead. Store airtight at room temperature.

CREAMED CORN

Creamed Corn image

This dish is old-fashioned but simple and memorable. The uncomplicated sweet delicacy of fresh, juicy corn is the secret.

Provided by Ruth Cousineau

Categories     Milk/Cream     Side     Quick & Easy     Corn     Summer     Gourmet     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 8 servings

Number Of Ingredients 6

12 ears corn, shucked
2 cups water
2 tablespoons unsalted butter
1 cup heavy cream
2 teaspoons all-purpose flour
2 tablespoons chopped fresh chives

Steps:

  • Cut corn from cobs (reserve cobs) and put in a large saucepan with water, butter, 1 tsp salt, and 1/2 tsp pepper. Simmer over medium heat, uncovered, stirring occasionally, until tender, 5 to 7 minutes.
  • Meanwhile, scrape cobs in a small saucepan to extract "milk." Whisk in cream and flour. Boil over medium heat, whisking constantly, 1 minute. Carefully transfer cream mixture and 2 cups corn with some of cooking liquid to a blender and purée (use caution when blending hot liquids). Stir purée into corn and simmer 5 minutes. Stir in chives; season with salt and pepper.

(I CAN'T BELIEVE IT'S NOT) CREAMED CORN

(I Can't Believe It's Not) Creamed Corn image

Provided by Bob Blumer - Host of Surreal Gourmet and Glutton for Punishment

Categories     side-dish

Time 13m

Yield 4 servings

Number Of Ingredients 4

8 ears corn, husked
2 tablespoons butter, optional
1/4 teaspoon chipotle chili powder, optional
Salt and freshly ground pepper

Steps:

  • Using a sharp paring knife, start at the top of the cob and score the middle of each row of kernels. The object here is to puncture the individual casings so that it is easier to force out the contents (as described in step 2). The depth of the incision, as well as your ability to slice a straight line, is of no consequence.
  • Grab your largest pot and a common dinner knife. Hold the cob inside the pot. Starting at the top of the cob, run the backside of the blade down the cob, using pressure to force out the meat and milk from the casings. Be forewarned, this is a messy job (hence the pot) that requires a healthy amount of muscle power. If possible, do this outdoors.
  • Discard the cobs and transfer the corn mash to a smaller pot. If you decide to add butter and/or chipotle do it here. Warm over a medium heat for a few watchful minutes, stirring frequently. If you warm corn for too long, or over too high a temperature, the natural liquids will evaporate and the corn will become gooey.
  • Season with salt and pepper, and serve immediately.

  • Scraping the corn cobs can be messy, so use a small baking dish to catch the liquid and pulp for this step. Scrape the cobs by holding them straight up and down, using the back of a spoon to push against the cob. Run the spoon down the cob like you're strumming a guitar.
  • This should bring out a milky white cream and pulp. You can tell you're getting all the corn milk out when the little pockets where the kernels were look empty.
