- Cook bacon in medium saucepan until crisp. Remove bacon from skillet with slopped spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from saucepan.
- Add corn, water, onions and pepper to reserved drippings. Bring to boil; cover. Simmer on medium-low heat 5 to 7 min. or until corn is crisp-tender.
- Stir in cream cheese and milk; cook and stir until cream cheese is melted and mixture is well blended. Top with bacon and Parmesan.

- Remove kernels: Cut off tip of each cob; stand in a wide shallow bowl. With a sharp knife, slice downward to remove kernels.
- Stand each cob over another wide shallow bowl. With the edge of a soup spoon, scrape downward to remove pulp.
- In a medium saucepan, melt butter over medium heat. Add onion, and cook, stirring frequently, until softened, 2 to 3 minutes. Add corn kernels, pulp, and 3/4 cup water. Bring to a boil. Reduce to a simmer; cover, and cook, until corn is tender, 10 to 15 minutes.
- Add cream and sugar; simmer, uncovered, until cream has thickened, 4 to 6 minutes. Season with salt and pepper. Serve.

- Prepare a grill for medium-high heat. Coarsely grind pasilla chiles in spice mill. Mix ground chiles with thyme, oregano, coriander, fennel, chipotle chile powder, black pepper, paprika, garlic powder, and onion powder in a small bowl to combine. Scatter lime zest over scallops, then cover them all over with 2 Tbsp. dry rub (reserve extra rub for another use). Chill scallops while you make the creamed corn.
- Heat olive oil in a medium saucepan over medium-low. Cook green garlic, shallot, and garlic, stirring occasionally, until very tender but without taking on any color, 6-8 minutes. Increase heat to medium and add grated corn; cook, stirring often, until liquid evaporates, about 5 minutes. Stir in 2 Tbsp. water and cook, stirring, until absorbed. Continue to cook, stirring and adding water 2 Tbsp. at a time and letting it absorb completely before adding more, until corn is creamy with a risotto-like consistency, 12-18 minutes. Stir in butter; season creamed corn with salt.
- Thread scallops onto skewers, dividing evenly, season with salt, and drizzle with a little vegetable oil. Grill until deeply browned and just cooked through, about 3 minutes per side, depending on size. Transfer skewers to a platter and squeeze some lime juice over scallops.
- To serve, divide creamed corn among plates and top with skewers. Serve with more lime wedges for squeezing over.

- Dry rub can be made 1 month ahead. Store airtight at room temperature.

- Cut corn from cobs (reserve cobs) and put in a large saucepan with water, butter, 1 tsp salt, and 1/2 tsp pepper. Simmer over medium heat, uncovered, stirring occasionally, until tender, 5 to 7 minutes.

- Using a sharp paring knife, start at the top of the cob and score the middle of each row of kernels. The object here is to puncture the individual casings so that it is easier to force out the contents (as described in step 2). The depth of the incision, as well as your ability to slice a straight line, is of no consequence.
- Grab your largest pot and a common dinner knife. Hold the cob inside the pot. Starting at the top of the cob, run the backside of the blade down the cob, using pressure to force out the meat and milk from the casings. Be forewarned, this is a messy job (hence the pot) that requires a healthy amount of muscle power. If possible, do this outdoors.
- Discard the cobs and transfer the corn mash to a smaller pot. If you decide to add butter and/or chipotle do it here. Warm over a medium heat for a few watchful minutes, stirring frequently. If you warm corn for too long, or over too high a temperature, the natural liquids will evaporate and the corn will become gooey.
- Season with salt and pepper, and serve immediately.

- Stand ear of corn on end inside a large bowl.
- Cut halfway through the kernels of corn, slicing off with a sharp knife.
- Using the back of knife, scrape out the remaining corn from each ear of corn.
- Place butter in a skillet, over medium heat on your stove top.
- Add corn.
- Add sugar.
- Add Salt.
- Add Black Pepper, to taste.

- Mix 2 Tablespoons flour with 2 Tablespoons of water.
