SPECIAL BANANA NUT BREAD
This extra-special banana bread makes a wonderful gift for friends and neighbors. The recipe makes two loaves, so I can serve one and keep the other one in the freezer to use as a last-minute gift. -Beverly Sprague, Catonsville, Maryland

Steps:
- Preheat oven to 350°. Cream butter, cream cheese and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in bananas and vanilla. In another bowl, combine flour, baking powder, baking soda and salt; gradually add to creamed mixture. Fold in 1 cup pecans. , Transfer to 2 greased 8x4-in. loaf pans. Sprinkle with remaining pecans. Bake loaves, covering with foil if they darken too rapidly, until a toothpick inserted in each center comes out clean, 1-1-1/4 hours. Cool 10 minutes before removing to wire racks., While loaves are still slightly warm, whisk glaze ingredients. Drizzle over loaves, using a baking pan or parchment under racks to catch excess. Cool completely.

- Preheat oven to 300 degrees F (150 degrees C).
- In a medium bowl, use fingers to mix together coconut, flour and sugar with butter until a crumbly mixture is formed. Spread on a baking sheet.
- Bake in preheated oven until light brown, stirring occasionally, 45 minutes.
- Prepare pudding mix with cold milk according to package directions. In a 9x13 inch dish, sprinkle two-thirds of the coconut mixture. Spread the prepared pudding over the crust. Top with sliced bananas and whipped topping. Sprinkle remaining crust on top and refrigerate until serving.

- In a large mixing bowl, cream the butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add bananas and vanilla; mix wel. Combine the flour, baking powder, baking soda and salt; add to creamed mixture. Fold in 1 cup of pecans.
- Transfer to two greased 8 x 4 x 2 inch loaf pans. Sprinkle with the remaining pecans. Bake at 350 for 1 to 1 1/4 hours or until a toothpick inserted near the center comes out clean.
- In a small bowl, whisk the glaze ingredients; drizzle over loaves. Cool for 10 minutes before removing from pans to wire racks.

Steps:
- Heat oven to 350°F, spray 2 large loaf pans with Pam for Baking.
- Mix Egg Beaters, applesauce, sugar, oil, cereals, vanilla and water in mixer. Beat on low speed 3 minutes then let rest for a couple of minutes. Beat in cream cheese on low speed.
- In medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg with a whisk.
- Slowly add the flour mixture to the egg mixture on low speed. When combined add bananas and walnuts, mix until combined.
- Pour batter into prepared loaf pans, bake at 350°F for 60 minutes or until toothpick inserted into the middle of the loaf comes out clean.
- Cool on wire rack.
