EXOTIC FRIED RICE



Exotic Fried Rice image

We love fried rice, this is a very nice thai inspired version. Hope that you will enjoy this tasty treat. For best results use really cold rice. Prep time does not include chilling overnight.

1 cup jasmine rice
3 chicken breasts, boneless, skinless, cubed 1 1/2-inch
1 1/2 cups coconut milk, canned
1/4 cup coconut cream, canned
2 cilantro roots, chopped
1 lime, zested, thinly
1 red chili pepper, fresh, small, seeded and finely chopped
1/8 cup basil, fresh
1 tablespoon fish sauce
1 tablespoon peanut oil
3 eggs, large, well beaten
2 tablespoons chives, fresh garnish

Steps:

  • Add the rice to boiling water, then simmer for 15 minutes.
  • Let sit 5 minutes then fluff, Once cool, cover and chill overnight.
  • Put the chicken in a pan, add the coconut milk and cream, cilantro roots, lime zest and chile.
  • Bring to a boil then simmer 10 minutes, until chicken is tender.
  • Remove from heat, stir in the fresh basil and fish sauce.
  • Next heat the oil in wok.
  • Sir fry the rice for 3 minutes.
  • Pour in the egg and stir until well cooked.
  • Plate the rice, garnish with the chives and top with the chicken coconut sauce.
  • Enjoy.

1 cup orange juice
1 cup cranberry juice
½ cup lemon juice
1 (32 fluid ounce) bottle carbonated water

Steps:

  • Put the orange juice, cranberry juice and lemon juice in 3 separate cups. Without mixing the juices, pour them into ice cube trays and freeze.
  • When frozen, place one of each juice cube into a tall glass and fill the glass with carbonated water.

  • Use Cold, Cooked Rice. Warm, freshly cooked rice will stick to the pan and turn mushy. Period. You can add buckets of oil to loosen it, but you’ll only end up with a grease bomb.
  • Sauté Ingredients Separately. Fried rice is technically a stir-fry. In other words, it’s a collection of ingredients sautéed at really high heat to not just cook, but also sear.
  • Let The Rice Toast. Ok, so you’ve sautéed your veggie and meat ingredients until they're seared and slightly caramelized. Now it’s time to add the rice.
  • Don’t Go Overboard on Sauces. It’s tempting to want to squirt on a whole host of flavorful sauces while the fried rice cooks, but too much liquid will ruin your hard work and make your fried rice sticky.
  • Add a crunchy garnish. The crunch doesn’t always have to come only from the rice itself. Try topping your fried rice with toasted nuts or chopped fresh lettuce.

  • SCRAMBLE: Heat a large skillet, wok or large dutch oven over medium heat. Add a tablespoon of butter and olive oil to the skillet. When the butter melts, add the beaten eggs and scramble them in the pan quickly, breaking up any large pieces. Remove the eggs to a bowl and set aside for later.
  • SAUCE: In a small bowl, stir together the soy sauce, oyster sauce, sesame oil, red pepper flakes (if using) and the white pepper; set aside for later.
  • SAUTE: Kick the heat up to medium-high. Add the remaining butter and oil to the skillet. When the butter melts, add the onions, carrots, and garlic and saute them for 3-4 minutes, stirring often to make sure nothing sticks or burns. Then, add the peas and continue to cook for one more minute.
  • FRY: Now add the rice over the veggies, add the scrambled eggs back into the pan and drizzle with the prepared sauce. Stir everything so the rice is evenly coated. Flatten the rice out into a think layer and allow the rice to sizzle for 30 seconds untouched. Stir and then let sit again for 30 seconds. Alternating gives the rice time to heat though. You’ll notice the rice starts to sizzle and pop in the pan. When the sauce is absorbed and the rice is popping, it’s done! Add the scallions during the last few seconds. Taste, adjust with additional soy sauce if desired. Serve warm.
