Outrageous Garlic Bread image

12 tablespoons (1 1/2 sticks) unsalted butter
1 head garlic, cloves separated and peeled
1 cup freshly grated Italian Parmesan cheese
2 tablespoons minced fresh parsley
2 teaspoons grated lemon zest
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 (20 to 24-inch-long) crusty French baguette
Fleur de sel or sea salt

Steps:

  • Preheat the oven to 450 degrees F. (Make sure your oven is clean or it will smoke!)
  • Melt the butter in a small saucepan over low heat. Add the garlic, stir to coat with the butter, and cook, covered, for 20 minutes, stirring occasionally, until the garlic is very tender. Transfer to a small bowl and set aside until cool enough to handle. Mash the garlic in the butter with a fork. Stir in the Parmesan, parsley, lemon zest, red pepper flakes, 1 1/2 teaspoons kosher salt, and 1/2 teaspoon black pepper.
  • Slice the baguette in half lengthwise and place both halves, cut sides up, on a cutting board. Score each half diagonally (don't cut all the way through) in large serving-size pieces. Spoon all of the garlic mixture generously on the cut sides of the bread. Cut each half of the baguette in half crosswise along a score and place the 4 pieces on a sheet pan lined with parchment paper.
  • Bake for 5 to 7 minutes, until the topping is bubbly and starting to brown and the bread is crisp. Transfer to a board, cut in serving pieces along the scores, sprinkle with fleur de sel, and serve warm.

Exotic Garlic Bread image

This bread smells very fragrant when it's baking in the oven. It's baked flat but will rise just enough so that you can split it horizontally and make a sandwich with it. The oatmeal makes it a little healthy. The recipe was actually built on my recipe for oatmeal molasses bread. If you don't have an oil sprayer, just use a brush or your fingers to spread olive oil over the top before baking. This recipe is meant for making with a bread machine. The prep time includes mixing time in the bread machine, resting, etc.

1 cup water
1 tablespoon oil (for the bread)
2 tablespoons molasses
1 teaspoon salt
3 cups flour
1/3 cup oatmeal
2 teaspoons yeast
1 tablespoon cumin or 1 tablespoon caraway seed
1/2 cup hemp seeds (optional)
1/4 cup grated cheese
2 sliced garlic cloves
sprayed olive oil
salt
pepper

Steps:

  • Add the first 7 ingredients (up to and including yeast) in container for bread machine.
  • Mix the dough using the dough mixing cycle on bread machine.
  • At the beep, add the cumin and/or caraway seed and the hemp seed if you want.
  • When the dough is finished mixing, put it on a cookie sheet or jelly roll pan that has been dusted with flour. Fold in the grated cheese and flatten it as much as possible.
  • Let it rest for about 20 minutes. Preheat the oven to 325 F (if using hemp seed) or 350F (if not using hemp seed).
  • After resting, it should be easy to roll it out. It should cover a jelly roll pan. Press in the garlic slices and spray or drizzle olive oil on top of the rolled out dough.
  • Sprinkle with salt and pepper.
  • Bake for 30 minutes at 325F or 25 min at 350°F.
  • When it's done, let it cool for at least 15 minutes. Use a pizza slicer to cut it up and enjoy!
