2 cans (8-1/4 ounces each) tropical fruit salad
1/2 cup pineapple or vanilla yogurt
1 teaspoon honey
1 small apple, chopped
1/2 cup halved fresh strawberries
1/2 cup halved green grapes

Steps:

  • Drain fruit salad, reserving 1/4 cup juice (discard remaining juice or save for another use). In a bowl, combine yogurt, honey and reserved juice. Fold in fruit salad, apple, strawberries and grapes. Serve immediately.

½ lime Juice
½ lemon juice
1-2 cups passion fruit pulp
1-2 guava or pineapple juice or pulp
½ large Pineapple (, (peel and cut into small dice))
2 ripe mangoes ( (peeled and cut into small dice ))
½ large or 1 small papaya (, (peeled and cut into small dice))
4-6 kiwi fruist (, (peeled and cut into small dice))
Cold water ((adjust to taste ))
¾ cup sugar replace with honey, or any sweetener
2 cups water

Steps:

  • In a medium saucepan combine sugar and water. Bring to a boil, keep stirring until sugar has dissolved- about 5-7 minutes. Let it cool.
  • Combine all fruits in a large bowl. When ready to serve, mix the fruit pulps and lime and lemon juice. Add simple syrup as needed. Pour over the fruit salad. Adjust with more water and/or simple syrup. Refrigerate until ready to use.
  • Serve cold.

1 pound strawberries ((quartered))
1/2 canteloupe
5 kiwis ((sliced))
6 mandarin oranges ((peeled and separated))
2 limes
2 lemons
1/4 cup honey

Steps:

  • Chop up each fruit individually.
  • I really like my pineapple slicer. Watch my Facebook video where I show you how easy it is to make.
  • Combine the fruit in a large glass bowl.
  • Pour honey into a small glass bowl. Squeeze the two limes and lemons into the bowl and mix well.
  • Pour the honey lime glaze over the fresh fruit and toss to combine.
  • Place in the fridge until ready to serve.

½ a pineapple
1 ripe mango
1 papaya
2 kiwi fruit
½ a lime
½ a bunch of fresh mint, (15g)
2 tablespoons golden caster sugar
200 g yoghurt

Steps:

  • Trim the outside skin off the pineapple and cut out the hard core that runs down its centre. Lay it on a chopping board and cut it into chunks with a sharp knife. Place in a bowl.
  • Cut the flesh of the mango off the stone and scoop out the flesh from the skin with a spoon. Place into the bowl with the pineapple. Cut the papaya in half and scoop out the black seeds inside. Scoop the fruit out of the skin in the same way as with the mango. Place into the bowl.
  • Top and tail the kiwi fruit, then, sitting it on one of its flat ends, trim the furry skin off with a sharp knife. Slice the kiwi and place into the bowl. Squeeze the lime juice over your fruit.
  • Take four plates and divide the fruit between them. Pick the mint leaves and pound most of them with the sugar in a pestle and mortar or a flavour shaker. Spoon a little yoghurt over the top of each plate and sprinkle over the mint sugar and the rest of the mint leaves and serve.

1/2 pineapple, cored and sliced
2 kiwifruits, peeled, halved lengthwise, then sliced into half-moons
1 small papaya, peeled, seeded, and sliced

Steps:

  • Preheat oven to 325°F. Place 1/4 cup unsweetened coconut flakes on a rimmed baking sheet and toast, stirring once, until golden and fragrant, 5 to 7 minutes; let cool.

1 tablespoon poppy seed
1 large mango, peeled, cut into 3/4-inch cubes (about 2 cups)
1 medium papaya, skin and seeds removed, cut into 3/4-inch cubes (about 2 cups)
1 medium pineapple, skin, hard eyes, and central core removed, cut into 3/4-inch cubes (about 4 cups)
Flaked coconut or chopped nuts, for garnish
1 (11-ounce can) mandarin oranges, undrained
1/2 cup flat Champagne
1/4 cup sour cream
2 tablespoons honey

Steps:

  • Place the mandarin oranges, with their syrup, in a medium-size saucepan. Add the Champagne and bring to a boil. Reduce the heat and simmer until the mixture has reduced to about 1 cup. Remove from the heat and let cool.
  • Place the cooled mixture in a blender, and process until smooth. Stir in the sour cream, honey, and poppy seeds.
  • Toss the prepared fruit together in a large bowl, and pour the dressing over the fruit. Refrigerate for 1 hour. Decorate the fruit salad with flaked coconut or chopped nuts, and serve.

1/2 pint raspberries

2 bananas, peeled and cut into thin rounds

  • Whisk sugar, lemon juice, vanilla, and Chinese 5-spice powder; adjust to taste, adding more or less ingredients. Add mangoes and raspberries and toss together.
  • Just before serving arrange kiwis in a circle on outside edge of each of 4 dessert plates, arrange an inside circle of banana slices overlapping kiwis, leaving a space in center of dessert plate. Spoon macerated raspberries and mangoes in the middle; dust with confectioners' sugar and garnish with mint leaves.
