Ewa riro is a delicious one-pot Nigerian delicacy that is easy to prepare but yields a rich flavor. This is truly the best-stewed beans recipe that you will ever taste. Plus it's incredibly economical.

3 Cups black-eyed peas
1 red bell pepper
1 medium onion
1 roasted Turkey wing
1 habanero pepper
1 Tbsp crayfish
1/2 Tbsp seasoning powder
1/4 cup palm oil or to taste
6 to 9 cups of water
salt to taste

Steps:

  • Pick out the debris in the Beans. Then rinse well and drain.
  • Put the beans inside the pot together with the bell pepper, habanero, onion, and smoked turkey wings. add water and leave to cook until the beans become tender. about one hour. a little more or less.
  • Remove the bell pepper, habanero, and onion Blend and add to the beans.
  • Remove the smoked turkey, debone, cut the meat into small pieces, and put it back inside the beans.
  • Add the salt, seasoning powder (seasoning cube), crayfish, and palm oil. Add water if necessary and stir well until everything is well combined.
  • Leave to simmer for about 3 to 5 minutes and serve with Plantains, Bread, or Garri. Enjoy!

  • Place a pot on medium heat, add rinsed beans, enough water to cook and add half of the chopped onions, and bring to boil until tender. This might take a while, but quicker if you have a pressure-cooking pot. Add water in between to avoid the beans drying out/ burning.
  • Once the beans are tender, reduce the heat or set aside. Place a clean/dry pan on medium high heat, pour in palm oil and leave to heat up for about 2-3 minutes, add the remaining chopped onions and continue frying till onion is transparent this should be for another 3 minutes. Be careful not to burn the onions and avoid getting burned by the hot oil too (keep your kitchen well ventilated when doing this process. Remember you are not bleaching the oil, you are only frying to melt the palm oil to rid curdling in the mouth when eating and to also allow the onion flavour to be infused in the oil)
  • Add pepper mix, bouillon/Maggi, salt, dried fish and crayfish to the beans (check if you need to add water and adjust accordingly) stir till well combined.
  • Add the fried sauce to the cooked beans and stir again till all is combined. (check for salt and seasoning and adjust to preference)

  • Meanwhile, add ½ -1 can of plum tomato, ½-1 onion and 1 scotch bonnet to a blender and blend until smooth.
  • Pour the blended mixture into the saucepan, add 3-5 tbsp of palm oil, salt to taste and 1-2 Knorr chicken seasoning cubes. Stir it all together and cook for 15-30 minutes or until done. Make sure you check the beans and stir it every 5-7 minutes to make sure that is does not burn and add water if necessary.
