COCONUT AND OATMEAL DROP COOKIES

Steps:
- Heat oven to 350 degrees. Grease 2 large cookie sheets. Cream butter and sugars in mixer until light and fluffy. Add eggs, beat together. Add vanilla, baking powder and baking soda. Then add the flour. Mix until well combined. Stir in coconut and nuts. Mix in oatmeal.
- Drop on greased cookie sheets by the tsp., spacing about 1/2 inch apart. Bake 12 to 15 minutes, just until the edges begin to brown. Transfer to a wire rack to cool.

There's lots of spice in this one. A real crowd pleaser too and it makes a lot so I usually freeze half.

Steps:
- Cream butter and sugars together. Add vanilla, eggs and spices.
- Add rest of ingredients except for chocolate chips if using.
- Mix well.
- Add chocolate chips.
- Drop large spoonfouls about 3" apart on large greased cookie sheet or ungreased parchment paper (works much better!).
- Push tops down slightly with back of a spoon.
- Bake in preheated oven at 350 for about 10-12 minutes or when edges are turning brown and centers are almost set.
- Enjoy!

- In a small bowl, combine the first five ingredients. In a 1-qt. glass jar, layer flour mixture, brown sugar, sugar, oats, chips and coconut, packing well between each layer. Cover and store in a cool, dry place up to 6 months. Yield: 1 batch (4 cups). , To prepare cookies: Preheat oven to 350°. In a large bowl, beat butter, egg and vanilla. Add cookie mix and mix well. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake 9-11 minutes or until golden brown. Cool 2 minutes before removing to wire racks.

These are one of my family's favorites. There's something for everyone in these. I have worked in the school cafeteria for 8 years and we have used this recipe a lot. The kids love them.

Steps:
- Cream together the butter and the sugars. Mix in the oil and the flour. Add in oatmeal, crispy rice cereal, coconut, nuts, vanilla, salt, baking soda, cream of tartar, eggs and chocolate chips. Mix until well blended.
- Drop by teaspoons or tablespoons on a greased cookie sheet. Bake at 350 degrees F (175 degrees C) for 10 - 15 minutes.

This one has a bit of everything I like in a cookie-chocolate, oats, nuts and coconut. A friend of mine gave me a recipe for them, but I made some changes. I find that when you cut sugar, you can actually taste the other ingredients better. I also increased the coconut and oats.

- Cream butter and sugar.
- Add eggs and vanilla.
- Beat until fluffy.
- Mix flour, salt, baking soda.
- Add to sugar mixture.
- Add in rolled oats.
- Add in walnuts and coconut.
- Stir in chocolate chips.
- (For a crisper outside and softer inside you can refrigerate dough for one hour.).
- Drop in ping pong size balls. (rounded teaspoons are fine, but the larger ball seems to work better-plus, less scooping!).
- Bake in preheated oven at 375 for 8 to 10 minutes.

- Mix the first 4 ingredients.
- Add in the cinnamon, egg beater and vanilla and milk.
- Mix the flours, meal, baking soda and cinnamon and nutmeg in a seperate bowl.
- Add the dry ingredients to the wet ingredients.
- add the milk.
- Then add the oats, raisins and cranberries.
- Using a scoop (no bigger than 1/4 cup serving) place these on a non-stick pan and bake for 10-15 minutes (depends on how goey in hte middle you want them) at 350 degrees.
- Let cool for 10 minutes before eating.
